    I can't wait to make this. I tried Ubon soup & fell in love. Unfortunately, I bought the microwave kind. So I'm happy to learn these recipes to make fresh Udon soup. Thank you for teaching these delicious recipes. I can't wait.

    Thanks for the recipes. I always have a couple of packs of udon in my freezer, my favorite is udon in mentaiko caviar sauce.
    Blanched greens are best rinsed with cold water or briefly placed in a bowl of ice water. Then the greens will be juicier and brighter.

    Cant wait to make all soon for me can i skip mirin as i don't use alcohol at home i never had udon noodle soup / vegan dashi / homemade inari age and 2 minute microwave onsen tamago before perfect for my after office meals

      You could probably omit it, since it is only a little part of the soup. Taste the soup beforehand. Since mirin is a bit sweet, you might want to add a bit more sugar. At the end, the soup should be to your liking. I always tweak the recipes after having tried it the original way first.

    It looks so good!!! I’m glad you added the “lower the microwave wattage” and “pierce the egg to prevent bursting”-parts, cuz that seems to have been something a lot of TikTok recipes didn’t include and it ended up getting some people hurt :(
    Do you not soak the seasoned tofu pouches in hot water first? I tried making a (admittedly rather poor attempt) at Katsune “Miso Soba” (had no udon noodles and no dashi, so instant miso and some Wakame and rice “soba” noodles would have to do), and the pouches were very sweet! When I tried soaking some in hot water first (as had been suggested on the internet), and squeezing out the excess, they got a lot less sweet. Would it be bad if I did that first, before adding them to the udon?

      I'm glad you enjoyed my video. Regarding the tofu pouches (inari-age), the sweetness can vary depending on the brand. If it's too sweet for your taste, you can soak it or run it through hot water to adjust the sweetness according to your preference. I hope this information helps!

    Which soy sauce do you use? Light, dark, or sweet soy sauce?

      I used dark soy sauce. Koikuchi Shoyu (Japanese Soy Sauce) 濃口醤油

    Instead of dashi packets I have dashi powder. How much should I use then?

      Usually, the ratio is 1 cup water to 1 tsp dashi powder.
