日式煎餅(瓦煎燒)烤箱就能做!口感最接近義美煎餅的配方 Kawara Senbei

  • 這種煎餅表面很滑順,第一口咬下比較硬脆,但是越咬越香,可以吃到濃濃的雞蛋與焦香味,跟一般奶油餅乾完全不一樣。就算家裡沒有煎餅專用鑄鐵壓模,用烤箱也能做出類似效果,吃起來真的是像義美煎餅的口感和味道,很有成就感!

    Kawara Senbei(瓦煎燒) is a kind of Japanese cookie. In Taiwan, there’s a popular cookie made by the I-Mei company(義美煎餅) that is similar to Karawa Senbei. The surface of these cookies is smooth. When you first bite into them, they’re crispy, then the more you chew, the more the rich eggy and caramelized flavors come through. It’s totally different from regular butter cookies. Even if you don’t have a special iron mold (the traditional way to make these cookies) at home, you can still get a similar result using an oven. The taste and texture are just like the famous I-Mei cookies, which is super satisfying!

    食材 Ingredients▼
    低筋麵粉 100 g
    cake flour, 100 g
    糖 50 g
    sugar, 50 g
    植物油 20 g
    vegetable oil, 20 g
    全蛋 1 顆
    egg, 1
    蛋黃, 1顆
    egg yolk, 1
    鹽 1/8 小匙
    salt, 1/8 tsp
    海苔粉 1 大匙
    seaweed powder, 1 Tbsp

    ●Making the Batter
    1. In a mixing bowl, add the egg, egg yolk, and sugar.
    2. Mix until the mixture becomes lighter in color and the sugar is completely dissolved.
    3. While stirring, add the olive oil.
    4. Mix until well combined.
    5. Add salt. Mix well.
    6. Sift in the flour.
    7. Use a spatula to gently fold and mix the batter.
    8. Scoop the batter onto a baking sheet lined with a silicone baking mat.
    9. Divide the batter into 12 portions.
    ●Preheating the Oven to 350℉/180℃
    10. Cover the batter with another silicone baking mat.
    11. Slightly press down the batter with a flat-bottomed heavy object.
    12. Transfer to the preheated oven.
    13. Bake at 350℉/180℃ for 10 min.

    14. Remove the upper silicone baking mat.
    15. Return to the oven.
    16. Bake at 300℉/150℃ for about 30 min or until the desired color is achieved.
