  • 麻花捲真的好好吃!他可能不是那種你會動不動就想去買一兩包來吃的零食,可是如果你手邊剛好就有一兩包,那是很危險的不小心就會一根又一根!麻花捲就是一種大眾都能輕易愛上的零食,因為材料很簡單,味道也很單純,任何人不管愛不愛吃甜,通常吃上一根都會被勾住。想一想還真是很天才的最佳伴手禮!

    Mahua twists (麻花捲)are really delicious! Mahua twists are the kind of snack that anyone can easily fall in love with because the ingredients are simple, and the flavor is straightforward. Whether or not you have a sweet tooth, most people find themselves hooked after just one.
    I used an air fryer to make Mahua and it turned out so good!

    食材 Ingredients▼
    ○麵團 Dough
    中筋麵粉 200 g
    all-purpose flour, 200 g
    糖 25 g
    sugar, 25 g
    植物油 15 g
    vegetable oil, 15 g
    水 80 g
    water, 80 g
    鹽 1/8 小匙
    salt, 1/8 tsp
    速發酵母 1.5 g
    instant yeast, 1.5 g
    ○糖霜 Coating
    糖 45 g
    granulated sugar, 45 g
    水 30 g
    water, 30 g

    ●Making the Dough
    1. In a mixing bowl, add the water, flour, sugar, salt, instant yeast, and vegetable oil in sequence.
    2. Mix until a dough forms.
    3. Place the dough on the baking mat.
    4. Cover the dough and let it rest for 15 min.

    ◆15 min. later◆
    5. Slightly knead the dough and shape it into a ball.
    6. Slightly press the dough and roll it out into a rectangle.
    7. Divide it into 4 portions.
    8. Stack all the dough portions.
    9. Divide into 8 stacks of strips.
    10. Separate the small dough.
    11. Let the small dough strips rest for another 15 minutes under a damp cloth.

    12. Take one small dough strip. Roll it with your palms from the middle to the ends back and forth to make a longer strip.
    13. Hold each end of the strip with your hands and roll in opposite directions to twist the dough.
    14. Lift the twisted strip by holding both ends together. It will twist into a spiral shape.
    15. Let’s make a double-twisted dough.
    16. Roll a small dough strip with your palms from the middle to the ends back and forth to make a longer and thinner strip.
    17. Hold each end of the strip with your hands and roll in opposite directions to twist the dough.
    18. Lift the twisted strip by holding two ends together. It will twist into a spiral shape.
    19. Hold the ends together and twist again to form a double braid.
    20. Tuck the ends into the braid.
    21. Place the twisted dough on a baking sheet.
    22. Sprinkle some water on the surface and let them rise for 40 min.

    23. Place half of the risen twisted dough on an air fryer basket lined with baking paper.
    24. Brush a thin layer of oil on the surface.
    25. Transfer to an air fryer.
    26. Air-fry at 350℉/ 180℃ for 15 min.

    27. Take out the twisted dough halfway through.
    28. Flip over and brush another thin layer of oil.
    29. Return to the air fryer.

    30. When done, repeat the same steps for the second batch of twisted dough.
    .
    ●Making the Icing
    31. Add water and granulated sugar to a flat pan.
    32. Slightly rotate the pan to mix the water and sugar.
    33. Heat over medium until it starts to boil and large bubbles form.
    34. Add all cooked air-fried twisted dough.
    35. Stir the air-fried twisted dough to coat it thoroughly with the syrup.
    36. Keep stirring the air-fried twisted dough until the syrup crystallizes into a sugar coating.
