INGREDIENTS
- 7 slices bacon, diced
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 tsp kosher salt
- 4 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cups chicken stock
- 2 1/2 lb potatoes, peeled and diced
- 2 sprigs fresh thyme
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 3/4 tsp black pepper
INSTRUCTIONS
- Add the sliced bacon to a cold 8-quart stockpot. Set the stockpot over medium heat and cook the bacon until it is browned and crisp, 8-10 minutes. Once cooked, remove the bacon and place it on a paper towel-lined plate. Measure the bacon fat in the stockpot, return 3 tbsp of bacon fat to the stockpot, or add butter as needed for a total of 3 tbsp.
- Heat the bacon fat or butter over medium heat and add the diced onion, celery, and kosher salt. Sauté until the onion is soft and translucent, 4-6 minutes. Add the minced garlic, sauté for 1 minute, and add the flour. Stir and cook the flour for 1 minute. Slowly add the chicken stock and whisk until it is smooth. Add the peeled diced potatoes and thyme. Bring the soup to a boil, turn the heat down to a simmer, and cover. Cook until the potatoes are tender, 20-25 minutes.
- Once tender, remove about half of the potatoes with some stock. Using an immersion or canister blender, blend the potatoes until they are smooth. Return the blended potatoes to the stock pot. Add the heavy cream, cheddar cheese, black pepper, and cooked bacon. Stir until the cheese is melted and the soup is warmed through, 4-6 minutes.

Beth here... I just put a potato masher in the pot and mash up enough to thicken. Also, if you want it thicker you can add some potato flakes 😉
I have celiac, so I use potato flakes to thicken my soups. Works great!

I make a mushroom soup with the same technique,but I also chop up carrots for the aromatics and diced mushrooms…after sautéing,I add chicken stock,cream,heaping T.of sour cream,sprinkle of ground red pepper…then add bigger slices of mushrooms…let simmer..serve with shredded mozzarella cheese! The aromatics of the onions,celery,carrots and mushrooms are essential! I use this recipe to make beef stroganoff by adding fried ground beef and pouring over cooked noodles!(anyone wanting to make this,it is not with potatoes and bacon) I was led to find a good recipe because most of the canned soups have bioengineered ingredients. I'm making a baked potato soup for St. Patrick's Day. I'm going to follow your pattern, as I don't make this often at all. But I'm going to roast the garlic and squeeze the garlic paste into the roux at the end (the roasting of the garlic creates a beautiful flavor and blends perfectly to whatever you add it to). For the garnish I'm chopping up some chives instead of the parsley. Can't wait!

I have a funny story about bacon grease. In the south, we save bacon grease, too. When I was a young girl, I saw my mom saving the grease. When i got married, I started saving it in a jar. But one day, I realized I didn't know why I was saving it. So I called my mom and said, "Hey mom, I'm saving the bacon grease like you do. But what do I do with it?" She laughed 😂😂😂 and said,"I use it when cooking to flavor vegetables" (mostly peas & butter beans). So, with that mystery solved, I started flavoring my veggies as mom did!

This is one of the soups my German husband grew up with, but not with cheese. It wasn't until l made it for him with added cheddar that he now loves ! Sometimes l add cooked smoked sausage in place of bacon, equally as delicious 😋

I soo need this in my life. I never made potato soup. My mom would boil potatoes, onions and celery, add milk and butter to the water and call it done. That soup was made every Thanksgiving eve and served with crackers. It was very tastey...when i was 5. But this I will make.
Now can you make and give us a recipe for oyster stew? That was our every Christmas eve dinner. She basically swappped out the potatoes.

We save our bacon grease in the south too and use it quite a bit
I add cheese to mine and make cheesy potatoe soup. Some times I also add thin ham instead of bacon sometimes, but mostly I always add lots of onions.

I made this soup a number of days ago and , while absolutely delicious, I had to throw it away because it was way too salty. BUT I’m not giving up,as I believe that was my fault. Will get back to you again. Love your videos !,
I don't use the celery, etc, can use veg broth, my recipe calls for cream cheese cooked in it. Love ut. Though i make a whole recipe if too many potatoes.
Next time i need to use smaller amount i suggest putting in the cream cheese!

How do you cut onions without tears, a runny nose, and stinging eyes?
When they are fresh from the garden, they do not sting the eyes. If store bought and not fresh, cut very cold onions.
I’ve heard that before but never the reason so why can’t you eat a green part of the potato?
