    I am latina BUT I love cooking different dishes from other cultures. I wanted to try making chicken shish kabobs and thought the yellow rice I typically make with saffron would not go. I made the chicken kabab with your rice and a Shepard salad it was Delicious! I will keep this recipe on rotation at home! Family loved it!!!!! Thank you!

      Yay!! It's a staple in my house too. Try adding some veggies like diced carrots, peas or even chopped Spinach. It's tastes awesome. :)

      Brittany- I bought turmeric for the first time. I heard about it's health benefits. When I smelled the turmeric, it smelled sort of minty. Is this the flavor you get when you used it in the rice?

    I made yellow long grain basmati rice perfectly cooked and in very easy way. Less oil and and less salt. I used saffron to make my rice yellow and I was surprised the taste like heaven lol

      The chili does make it hot, but you can reduce the amount of chili according to your taste and preference.

    When you use “green chilis” what type of pepper is it? I’m from Colorado and our “green chilis” are like 6-8” long and Hatch Green Chilis…yours look very small. I’d love to make this and your Beans Thoran! I went to Kerala to volunteer at an orphanage for a couple months when I finished high school. I LOVED BEANS THORAN! I never thought I’d figure out how they were made. But I would REALLY appreciate it if you could tell me which papers to use?

      In US, we get Thai green chillies from the Asian store. They are super spicy and a little goes a long way. At the Asian store, they will have red chilles and green chillies. Personally I prefer the green ones.

      We normally use 1:2 (rice to liquid) for most basmati rice. Please do check the cooking instruction of your rice brand. It's mostly mentioned.

      The stock provides most of the flavour. You can put any flavour stock you like. You can use just water but it wont be as tasty as it would be if it was made with stock.

    What is chcicken stock ?

      Chicken stock is the broth made by boiling chicken (mostly bones) with some vegetables and spices for flavor. The stock has a high level of collagen and it used for soups, curries etc.
      You can buy it at most grocery stores or even use bouillon.

      Not spicy. The spiciness of the chillies reduce a lot when you fry it. The chillies give it a special flavor.

      Ofcourse. A lot if recipes out there dont. And the 1st time I made rice, I didnt wash it because my mum assumed I'd know that 🤦🏾‍♀️. 😬 😅

    Not all Mediterranean countries use the same recipes, when someone states "Mediterranean cuisine" it means they share a lot of core ingredients but not necessarily recipes. There is no traditionally Mediterranean recipes, the traditional part equates to the recipe owner of a specific country not the group itself.
