- Chicken salad on sliced bread makes for one of my favorite sandwiches of all time, but ever once in a while, for a fun and much more interesting change of pace, I’ll give it the old rice paper treatment. Easy, delicious, and see-though! Enjoy!

Hi chef John! As a Vietnamese, I enjoy watching you do this! You can substitute the green mango or green apples for the avocado. It’s very fresh and complements well with the chicken. Also, you can place the wet rice paper on a plate and let the edge kinda hang over the the plate, that way it’s easier to lift up the rice paper and roll.If the rice paper is too soft, just wet one side with your wet finger.
You can also add some shredded carrots for extra crunch. To kick it up another level: boil some shrimp in beer and crushed fresh garlic. You can also use the rotisserie chicken, or both.

I was going to mention a single small piece of lettuce underneath could be used as a “tab” to make picking up the edge much easier?

Chef John, just dip your rice paper in room temp water until all surfaces are covered. Put it on a plate with no major rims or a cutting board and by the time you add all your ingredients, it should soften enough for you to roll. If it's a bit stiff, wait a minute or so and it'll soften. No need to continually dip. And overfilling will definitely break the paper - I do this all the time since I'm always about the perfect bite which means every bite should contain everything. :)
I was looking at him dipping too, wondering if it’d get over saturated and tear.
Using a cutting board always works for me and just dipping the rice paper once is enough cos it softens by the time all the ingredients are on 😁
I use warm/hot water and I just dip it once on each side. There's a little stiffness as I roll, but by the time you eat it minutes later it's perfect.
Hello Chef John, I’m so happy that you call it a “Summer Roll- Vietnamese Salad Roll”. It is called Goi(salad) Cuon(roll) in Vietnamese. A lot of people called it Spring Roll or fresh Spring roll which is a better term for Egg Roll in Chinese. So thank you. I love all your amazing videos. 'Round these here parts this would most often be called a "fresh roll".
Goi cuon is the Vietnamese term for it, but spring/summer rolls are the typically the uncooked versions of the rolls for those whom can't say goi cuon. The fried versions are sometimes called fried spring rolls or eggrolls (although eggrolls are really the Chinese versions).
What is the difference between a summer roll and spring roll?
@@krypticsentinel It depends on different regions in the US. Spring rolls are typically the unfried versions, but others will call the unfried versions summer rolls as well. You'll just have to look at the ingredients on the menu: if it contains fresh ingredients like herbs/veggies/fruits inside, it's the fresh version. Had Viets convinced peeps to call them goi cuon way back when, there would not have been such confusion. LOL

A spoonful of sweet pickle relish in the chicken salad works wonderfully. Just the right balance of sweet and tart!
1 tip: don't lay the soaked rice paper wrap on a flat work surface. Use a plate without too high of a border elevation instead. Position the wrap with a little bit hanging off from the plate's edge. This way when you are about to begin the rolling, the free edge is much easier to grab and pull compared to scraping the edge from a flat surface that it sticks to.

I’m Vietnamese. Another tip: use warm water. Quickly dip the rice paper into the bowl of warm water, no more three three seconds. By the time you have all of the food on the rice paper, it would be soft and pliable, and you wouldn’t need a second layer.

I've made a LOT of these types of rolls, so I have 3 tips to help out.
1) ALWAYS use the larger wraps. They're simply easier to work with.
2) Lay the wrapper out a clean, slightly damp kitchen towel on a flat surface. Lay your wrapper on the towel. It will make getting them rolled a lot easier than teying to get them off a flat surface. Then...
3)You don't need to SOAK the wraps. Using a dedicated spray bottle full of clean, COLD water, spray the surface of the wrapper until it is fully wet. Then just lay it on the damp towel and wait a few moments. They WILL absorb the water and soften into pliability. Then just add the ingredients and roll as necessary.

Concerning your comment about making rolls as a kind of substitute “mini-sandwich”:
I’ve really become addicted to my “BLT Summer Rolls”.
Some nice crispy bacon, fresh homegrown tomato slices, and some strips of iceberg lettuce (my personal favorite) and it really just can’t be beat…
(One suggestion, though: Just use the “body” of the tomato for the julienne-y slices; using the juicy innards of the tomato will be too wet for the rice paper.)

I made some of these tonight. Added cilantro, bean sprouts, and used baby greens for the lettuce. Also whipped up my own dipping sauce using sunbutter, soy, mayo, garlic, ginger, and sesame oil. Completely hit the spot. Today, Chef made my Food Wish come true!
I just dip my rice wrapper once I hot water, then set it to the side. After a minute or so, it's soft

Had rice paper wrappers & veggies but didn’t want to cook chicken in this heat, so subbed in sliced turkey. Yum!
Next time I’m going to buy the larger wrappers for better stability.

2:39 😂 All these US YTérs dipping rice paper multiple times and sharing their insight(?). Dip once for a tick, then use. Within a few *seconds* the paper will be pliable.

Don’t chop your lettuce, lay them in whole leaf, that way they don’t fall out when you dip the roll.
It Seems Obvious That All The Folks Who Gave This A "Thumbs Down" Don't Like Chicken, Don't Like Salad, Don't Like Summer And Are Not On a Roll.
I can never understand thumbs down. If ya don't like it, move on ! Like you said, are probably never on a roll !
Suggestion - place the most colorful items (like the carrot and pepper strips) down first so they show through the translucent wrapper. Follow with the green veggies, chicken salad and lettuce. A mesclun mix will probably look better than chopped lettuce, too.
Hey chef John, you should try this with Vietnamese-style chicken salad "gà xé phay" (literally translates to shredded chicken)

I love spring rolls. 💜 Brown spam fingers in peanut and a sprinkle of sesame oil, and wrap with your choice of vegetables.... peanut sauce with plain ground peanut butter (the kind with only peanuts listed in the ingredients); saute minced ginger and garlic in peanut/sesame oil add 1 cup peanut butter, a cup of water or broth, couple of tablespoon of soy sauce, Sriracha to taste, chives or cilantro, stir on medium low till peanut butter melts into the sauce and reduce heat to thicken if desired.
Rice paper rolls of various kinds are a staple for me during the summer! Same with cold rice noodles. Absolute wonderful ingredients to cook with!
If you lay the rice paper on a plate with a bit of it hanging over the side while it softens, you can easily grab that bit to start rolling.
Just I’m trying to think what to pack into my weekend picnic, Chef John drops this video. These RUclips chefs always seem to read my mind right when I need them to.

I make these for my kids almost daily to pack for school lunches. Instead of a damp paper towel I spray some nonstick spray in their lunch boxes to keep them from sticking.

Hey Chef John! My family and I gather around and make Vietnamese Salad rolls on a regular basis. We have found that a quick dip in some warm water and then working with them on a slightly damp tea towel, makes rolling them up a cinch!

This video made me so happy! I'm on a restricted diet because of a chronic illness, and I've wanted something to take the place of sandwiches. I had to make a lot of substitutions, but my rice/black bean/tamarind paste/fish sauce/shrimp summer rolls have made my lunches so much easier--and more fun. Sometimes I put in sacha inchi seed butter to substitute for peanut sauce. Thank you so much!

Another hit from Food Wishes! Chef John strikes again. Just as soon as I get me some rice paper wraps. This is precisely the sort of fare I’m looking for. Southern Ontario is a very hot and humid place (humid-dex total air temps often over 40* Celsius! Canada, eh! Who’da thunk?) Most days I can’t think about the bar-b-que, let alone the gas stove/oven!
These are going to go great with several of the 8 grandkids (and one great grand child - I don’t expect him to give up the boob for one of these beauties, though). I envision a platter of a dozen or so, ready to go, for a late lunch!

It's better to put platters of protein, herbs, veggies, and maybe crunchy sour fruit out for everyone to roll their own. That's how Vietnamese folks eat it. Everyone rolls their own and eat it as they are rolling it. Interactive fun and the rolls are fresh and won't stick together.
