OLD SCHOOL CAFETERIA STYLE SALISBURY STEAK

  • This is a very awesome dish that we all ate in school and still do
    RECIPE:for the meat
    2# ground beef (80/20)
    1/4 cup small diced onions
    1 tablespoon Dijon mustard
    1/4 cup Worcestershire sauce
    2 eggs
    1 cup dry bread crumbs
    1 package onion soup mix
    RECIPE:for the sauce
    2 cups beef stock
    1/2 cup sliced mushrooms
    1/2 cup sliced thin onions
    1 tablespoon Dijon mustard
    mix all ingredients together in bowl
    form in oval shapes
    sear in large pan on both sides until brown
    remove from pan
    add sliced onions and mushrooms to pan and saute until soft
    add beef stock,mustard,and Worcestershire sauce
    simmer for 5 minutes
    thicken with roux(oil and melted butter 50%/50%) until slightly thick
    you dont want a thick gravy ,it should be thin
    add meat back to sauce and simmer until fully cooked(about 15-20 minutes)
    enjoy with white rice or mashed potatoes

    I love just watching Chef Jeff .... some folks like to watch things like fish in an aquarium, or birds, or whatever, but these videos and Chef Jeff's soothing voice are like meditation to me. I learn so much! Thank you Chef!!

    The folk's in his family really did get through to him at an early age With their kind of food fixing Preparations of different kinds of Soulfood meal's in their very Own downhome food Preparing type of Way's ! He have took those learned lessons from those Older folk's back then and he have enhanced them to a much higher level of Preparing different types of good'ol food in a knowing his Way around in a kitchen type of Manner.

      Up at 6:a.m. checking frog for ingredients no mushrooms. So instead of a roux ima use mushroom gravy and add bell peppers smothered with the onions
      Yummy I'm thinking. I can't wait. Love this chef truly old school. Trust me I know.

    Dear Chef Jeffrey, my daughter has made these Sailsbury Steaks for the fourth time and my husband and I have requested she add it to our regular "rotation" of monthly meals made by her! They are delish and so satisfying and are honestly the "good ol' Salisbury steaks we elderly fans remember from back in the day. Kudos to you! My daughter and I love to cook and we find ourselves checking in whenever I try to describe some of the meals my mother used to make while growing up back in the 1970s. We've made many of your step-by-step recipes and all with great success. Oh and we miss your sweet Mama and we loved how well you showed your love for her. You were a good son, indeed.     i miss old school soul food ! used to eat at a soul food dinner in detroit back in the day . moved to tn 27 yrs ago and tried a couple of places in nashville but just not the same . this looks just like what i got in detroit back in the day . going to try cooking it up soon . keep up the good cookin !

    👍💯%💓👏👏👏. I agree this is comfort food. I think in school we had green peas and a roll. My mama fixed butter peas or butter beans. If she had baby carrots she'd fix them. It's still good with just mashed potatoes. Just like Chef Jeffery did it here. Of course this would be super or Dinner. At home. Love, respect and positivity always. Vee.🙂👋👣.

    Really like the old school cooking, that is how my Momma cooks and just watching you make these reminds me of how they cooked and never measured anything but it was always so good.

    My good memories have to go with chili Mac when I was 12. That was the only thing that didn't test my gag reflexes in school. I would drink my milk that my mama would pay extra for and dump about 90 percent of the food in the garbage can on the way out. Thank you for the Recipe.

    When I saw "cafeteria," I went right back to my childhood, eating at Wyatt's and Lubby's in Houston. I always switched between Salisbury steak, and chicken fried steak. I think your version would be exactly like what I used to love back then. This is a family recipe for sure. Thank you!

    I do remember this meal in school..........your right, it was relatively dry, served over instant mashed potatoes and a sauce they called gravy. I am going to try this recipe.

    Made this last night. It's delicious. Hubby liked it and he was skeptical when I told him I was making Salisbury steak. He thoroughly enjoyed it. Will totally be making this again. Adding it to the monthly line up along with Old School's smothered pork chop recipe. Even went out and bought us some Cavender's. Chef Jeff, you've got fans/followers in Flower Mound, Texas!     Greeting Chef Jeffrey, my name is Patricia Donaldson. I consider myself your # 1 fan as I feel many of your followers do. You arr m y go to for any thing I have a taste for even if I have been making it for years. You always have handy tips that really work
    I guess its true you're never to old to learn. I always give you a thumb up. Wish it could be a high five and a hug. I come from a great cooking family of elders
    People would go to social function especially church functions and just look at certain dishes and automatically know which cakes or greens with corn meal dumplings chicken pot pie etc, etc,my Grandma Laura Bell made. She always said put your brand on everything you do. People should know your brand just by looking at even before they taste. Back then all the seasoning we pretty much knew about was basic, salt pepper, smoked meats sage vinegar and onions. Now I'm still learning new spices from all cultures. That's why I go to your channel first. You not going to lead me to far out there. I can't tell you how many seasonings I bought and only used once. Well that's enough chit chat. Let me get to the point. I must have watched 20 videos o Salisbury steaks. I mostly take a little bit from each one but yours arr always I follow pretty much exactly. I even brought some Cavendis Greek seasoning. Was not disappointed one bit. And i use it all the time. The only thing I changed was I shredded celery and my grand kids went off about this dish! They said Grandma this food busting. From the look on their faces and the sound of their voice I'm guessing that it was good. Can't keep up with their language. But once again never to old to learn. Made home made mashed potatoes. Peas and carrots and the best cornbread ever
    I have 6 grandkids the oldest one is ten. The youngest are 5 months Twin girls. My oldest wanted to give the babies mashed potatoes peas and gravy and put cornbread in there and mash it up. Oh boy my daughter would have hot with me. I just wrote all this to say you are the Goat (greatest of all time. Another phrase my grand kids taught me. On my day you call a person a goat. It would be on and popping. Thanks for all the love and patients you put in your videos. Now you see why I just do thumbs up. To long winded but they all come straight from the heart.     I love the way your Salisbury Steak recipe turned out, I will try this recipe I use to bake mine I like the way you cook yours, that Lipton onion mix is a plus I normally use that when I'm grilling hamburgers so much flavor. 👍

    Bring back old memories. Didn't eat the gravy . We made sandwiches with the bread 🍞 that was served. Meal looked good.

    Hey chef, kids of today do not eat like we did in 70 and 80's at school. This made me think back of my days in school out in suburbs. When we moved to City living, I took my lunch. There lunches where nasty, at city schools, more of a box lunch. No big kitchens within school, no more smell a vision. Kids of today eat so much junk food, then when I cook a real meal they say its nasty. My son are daughter will tell their kids they missing out on the real deal meals from granny. Thanks for past memories......
