OLD SCHOOL RED BEANS AND RICE WITH SMOKED HAM HOCKS AND SAUSAGE

  • This is another fall and winter time recipe
    It’s very comforting and filling
    RECIPE:
    1# red beans
    1# smoked ham hocks
    1 cups diced yellow onion
    2 tablespoons chopped garlic
    1 cup diced green bell pepper(optional)
    1# sliced smoked sausage( your choice)
    1tsp salt and pepper
    2 tsp of uncle Steve shake( or your choice)
    1 tsp cavenders greek seasoning( or your choice)
    1 tablespoon white vinegar
    1/3 cup hot sauce( your choice
    2 quarts water
    place water, vinegar, ham hocks,onions and garlic in LARGE stock pot and simmer for 2 hours or until tender
    remove ham hocks from pot and add beans
    simmer for 1 hour adding water as needed
    add picked ham hock meat and sausage back to pot and season to taste
    simmer for an additional 15 minutes
    if you like a thicker beans,add 2 tsp of roux to the beans

    Being from New orleans, I've seen beans cooked a thousand ways, my mom, my dad, my granny all pros! I've been blessed with a good spoon in my hand, and am good at banging them pots in my kitchen, you sir make it look easy and you put the good stuff in your pot, so that the even better stuff comes out, you got to know how to love your food from the boil to the bowl, you know what I'm mean!     I soak my beans overnight. It reduces the cooking time by about 1/2 hour. This is my same recipe almost exactly! Love it!

    Eventhough I can't eat the ham hocks, I could use smoked turkey. It looks delicious. I like using garlic and onions too.

      My dad is from Baton Rouge & he makes this so good, this and smothered potatoes and gumbo all from scratch . Im so sad that I cant have his cooking anymore

    This is SO good. I swear you will find yourself eating the leftovers cold right out of the refrigerator. You can't stop. prepare yourself before by fasting for a day so you can really fill up. get your hot sauce ready, maybe some corn bread. (I let the corn bread go by so I can have more beans & rice)

    Love them smoked ham hocks, tailor made for a good pot of beans! I got some limas soaking for tomorrow, with hocks & sausage. Limas & speckled butter beans are my FAVE!

    Looks absolutely delicious. We smash a few beans also to thicken the gravy. I have never seen anyone use a light roux to thicken the gravy. Great idea!

    My mother-in-law used to put a potato cut up into chunks when she cooked ham to absorb some of the salt in the ham.

    I've been cooking beans for years, but they've never been this good. I followed this recipe but made pinto beans instead of red beans, the pot was so full of flavor after adding the beans to the stock from the smoked ham hocks, that I didn't need any salt. I almost wanted to lick my bowl when I finished eating, absolutely delicious 😋.

      @Lurena Mondane, I bought some smoked ham hocks from the store yesterday, for another batch of pinto beans I'm doing, and I thought, this was the channel I'm going to for the recipe. I've never cooked beans with ham hocks, but I'm excited. Matter of fact, I bought some neckbones too. I will be looking for Chef's recipe for neckbones later. Old School Soul Food, always amazes and I def write down his recipes!!
