I use brown rice. At first glance, people think it's more expensive, but it's really not because unlike seed grains, it expands about 3x and absorbs alot more water. Also it doesnt waste weight on the hulls which are already removed. For people with a walmart, the generic walmart "Great Value" brand comes in 5lb bags for $4 and works great and is the most economical/easy to find at smaller volumes. You can find large sacks at indian and asian groceries as well, but for smaller scale home/hobbyists the walmart brand bags are likely the most economic choice.

They’re unmodified, so they don’t need holes. The lids are flipped upside down, and the bracket is not fully sealed (you can check out my video on lids for the full details)

Corn is WAY easier. You can't overcook it. It won't get soggy and is readily available and cheap. Some sell it in bulk. Boil it and then lay it out to steam dry until it's basically dry to the touch. The outer hull stays intact, and the insides are all hydrated and moist. After filling your mason jars, there should only be the slightest bit of moisture, only from condensation. Then autoclave and you're ready to inoculate. Only fill the jars 1/2, no more than 2/3 so you can shake the corn once the mycelium has covered it. Shake the corn and then let the mycelium cover the kernels again and you should be ready to go. Takes about a month.
