    7 Up Pound Cake
    Ingredients I used:
    1-1/2 cups butter, softened
    3 cups sugar, (Domino)
    5 large eggs, room temperature
    2 tablespoons lemon juice, room temperature
    1 teaspoon pure vanilla extract & pure lemon extract
    3 cups Gold Medal all-purpose flour, sifted
    3/4 cup 7-UP soda, room temperature
    Baker’s Flour Cooking Spray
    For Glaze:
    1-1/2 cups confectioners' sugar
    1 tablespoon lemon or lime juice,
    1 to 2 tablespoons 7UP soda
    1/2 teaspoon grated lemon or lime zest, optional
    Preparations:
    Preheat oven to 350°. Grease and flour (or use Baker’s Joy cooking flour spray), in a 10-inch fluted or plain tube pan. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in lemon juice, vanilla extra and lemon extract. Add flour alternately with 7UP, beating well after each addition. Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Check after 55 minutes because ovens may vary. Cool in pan 20 minutes before removing to a wire rack to cool completely.
    For glaze, in a small bowl, mix confectioner sugar, lemon juice and enough 7UP to reach desired consistency. Add more confectioner sugar if you like glaze thicker. If desired, stir in zest of a lemon. Drizzle over cake.

    Hey Auntie!! Also for people who bake frequently they can make a cake release with equal parts all purpose flour, shortening and vegetable oil. Example 1/2 c flour, 1/2 c vegetable oil and 1/2 c shortening.
    Mix until smooth. You can brush the mixture into your cake pan. You can keep it in an air tight container in the fridge until the earliest expiration date on the flour, vegetable oil or shortening.
    I have added this recipe to my repertoire!! I need some more Recipes from Grandma!! Love you

    I’m making that for Christmas! Miss Sandfay, that cake looks absolutely delicious! I remember that old school cake. Anyone who made it, everyone wanted a piece... and not everyone could make it. Either someone’s southern Mom, grandma or auntie who knows how to put that foot in it could make it. Thank you for the memories🥰

    Love your recipe, very simple…Love easy pound cakes. Have u tried Sprite instead of 7-up. I have tried both and can’t tell the difference

    can you use Smart Balance (non dairy) butter for this recipe? I have a son who loves cake but can't have dairy

      @@cookingwithsandrafay thank you for your response. I may try this cake with the Smart Balance and the kid asked for Sprite instead of 7Up. I said well it won't be as good as Sandra Fay's but I'll give it a shot ;) I will let you know how it turns out

      You can try another brand. The reason I always say use Domino’s sugar is because it takes less to sweeten cakes, pies or any dessert. All sugars are not created equally.
