Today, I fully am fully understanding the use of crushed toasted bread with garlic and parsley. It has always been obvious that the bread would help thicken stews or soups, but to see the way the garlic and parsley marries into the bread, just shifted my understanding of the alchemical magic that happens. Plus, it is a good use for the last few slices of bread that have been hiding in the kitchen. Big appreciation for all of the tech tips that I learn at Spain on a Fork.
Yes, this is a perfect way to use the small round heels of boule-shaped loaves of bread, which could otherwise go to waste. I store them in the freezer for just this kind of recipe!
If you are out of bread, or just a bit lazy, you can also just take out a cup or two of chickpeas and potatoes a few minutes before the stew is down, mash it and throw it back in. Don't forget to add the garlic and parsley as well though!
My grandmother was born in Spain and she would make a lot of the dishes you prepare, like this one that I remember from my childhood. Love that your recipes are super healthy and use mainly fresh, simple ingredients that one can get easily. Thank you!

Came back to thank you for this recipe, it was dinner topped with a fried egg last night, then made a breakfast burrito filled with the mixture, scrambled eggs, and italian cheese. Toasted and devoured. Delicious!

Cannot wait to try this with the bread and garlic paste. My Abuela also would also make other versions of this soup. One with chorizo and another with kale and ham. I am hungry now.

That's similar to our german recipe too. Stews are very well known in Germany. For dinner, I'll cook a stew with our own lentil as the main ingredient and onions, garlic, carrots, leek, fennel, and bacon. Seasoned sweet and sour.
I don't eat much bread, but I have a lot of rice leftover in the fridge, I make this with dry roasted rice in a frying pan as a thickener, it works really well, I guess the thing is used whatever you have in your pantry that's left over... don't let anything go to waste!
I forget: have you done the Galician Soup? The one with kale and white beans? My husband and I hiked the Camino and it was such a satisfying pilgrim's meal.
Pretty much what I cook when I can´t think of what to eat. I start with that base and just add the potatoes and whatever vegetables I have on hand. If I have a frozen portion of skinless-boneless chicken thighs, I might add that. Probably will do this recipe tomorrow. Have some carrots and spinach I need to use. I wish I had some Red Argentinian shrimp, as I´m always slightly disappointed when I use any other type. But with the price of Olive Oil, and seafood, got to cut back somewhere.
