Easily Store Tomatoes All Year (Tomato Harvest ‘22)

  • Canning tomatoes can be intimidating, but using this method you can have your very own tomatoes all year long. This time of year, here in NC, it’s definitely tomato season. I’m getting new ripe tomatoes every single day and there is only so many fresh tomatoes a single person can eat (Andy doesn’t like them).
    Here are my favorite ways to use my canned tomatoes:
    1) soups/stews
    2) tomato sauces (esp pizza sauce, you can also find my pizza sauce recipe in my cookbook, link below)
    3)tomato sandwich 🥪
    4) tomato gravy
    Those are just a few of my favorite uses, plain canned tomatoes are so versatile!

    just canned tomatoes yesterday 🤗 i love watching people preserving food they harvest. im learning so much. we are growing tomatoes, peppers, corn, green beans, and pumpkins. my squash didn’t do well this year. 🤗christy from Va

      Wonderful! It must’ve not been a great year for squash and zucchini in this area either, as much as we had planted I should’ve been drowning in both but never really got that many.

    Last year I bought 2 tomato plants and 2 red bell pepper plants, and I was given seed packages from my son for mothers day. Small yard/Northern IL. I grew everything in pots. Most pots were given to me, I found by the side of the road, or I made out of large plastic containers. Bought 100 qrts of potting soil and a small bag of manure, some plant food for fruiting plants, and all purpose plant food.
    We had enough tomatoes to eat during the summer and enough peppers to eat and freeze.
    Grew from seed cucumbers, basil, parsley, and some flowers to attract pollinaters.
    I saved the seed from the plants and this year I started everything inside and transplanted outside 7 tomato plants and 5 red bell pepper plants. Still had pkg seeds for cukes, zucchini, spinach, and spring onions.
    I bought a 50 qt bag of potting soil to refresh the dirt from last year and added some compost I had made from kitchen scraps.
    I was late getting things out because of family grievances and illnesses, but things are really taking off and I figured that this year everything is a bonus crop and all I had to pay for was a bag of dirt. 😊

    ❤we always canned tomatoes. Boy are they good. Have only canned twice since Mama died in 2015. We don’t have enough family left to use them up. My sis and brother both have raised gardens. She only planted tomatoes. My brother planted more veg but I don’t know what all. Having these videos will be like having your life and legacy for your children on film. How great is that!!!     Hello Meagan and family , here in South Texas our garden is done. We canned everything we could and ate the rest.😊 Made some leather britches, garden is burnt up now, 41 days of 100 + degrees and no measurable rain in over 51/2 months. God's got us though . Love your videos 👍

    Watching this, reminds me of a time when my mama canned some red, and yellow tomatoes in the same jar, this was in the 70’s. Now that was pretty to look at! And of course they’re going to taste good.

    Thank you so much for sharing this little bit of Heaven with us. Takes me back 72 years when I was 7 then and I missed that time for years. I'll be watching and filtering back through your videos and learning lots of your recipes.     Hello from Australia, it is still winter here so not producing a lot at the moment but have just started my seeds ready for spring planting. We grow enough for us to eat and a little extra to preserve.

    I canned tomatoes yesterday and picked a bunch of green beans. Also, got sweet banana peppers to pickle tomorrow afternoon! There is ALWAYS STUFF to do now with harvesting season upon us!

    We canned some peach salsa today and it turned out so good! We are getting really hot here in Alabama and our plants are starting to struggle. Tomatoes and peppers are doing pretty good still and just really starting to ripen since it has been so hot it's slowed down the ripening. We've been eating some fried green tomatoes. :) Cucumbers and squash are pretty much done here until fall. I always enjoy your videos... you're doing great!

    We are getting tomatoes, some corn on the cob which we are freezing. Super easy process for that. Shuck, get as much of the silkies off as possible. Individually wrap each ear with plastic wrap, twisting at each end, and place in Gallon size freezer bags. Works well and much easier than blanching, etc. Thanks for your videos! Lee and I watch your family videos all the time and especially love the children's involvement and the life lessons you two are teaching them.

    I didn't know you could pressure can tomatoes. I only have water bath directions. Looks like I need to do my research. Thanks for sharing.

      I enjoy pressure canning them because the process is shorter, doesn’t take as much time, plus you don’t have to use lemon juice or citric acid in them ☺️

    That’s a nice harvest of maters you got there my friend. Can’t go wrong puttin up food for the future to feed family. We’ve pressure canned some beef we found on sale here in our area.     I planted late so mine is slowly coming.peas, ( they're almost done) a few cucumbers, herbs onions made, garlic(ok) getting some okra. Fighting bugs and worms with the rest.

    Your garden is amazing. My goal is to be able to grow tomatoes like that. I love to can so I put up as much as I can. I bought your cookbook and really enjoy it. I like that it is all very useful recipes.

    Like you I only pressure can my tomatoes mainly because I can't stand the taste of lemon juice or citric acid, which has to be added to WB canned tomatoes

    Tomatoes look yummy. Maybe you should think about selling some of your canned goods! I just don't have the time or room to grow large amounts of anything. I always have a tomato plant for my own personal use but not enough for canning. Thanks again!

      I really wish I could, NC has some pretty strict cottage food laws, I don’t have the means to have a commercial kitchen and I also have a 15year old dog that stays inside so couldn’t even be considered if I tried to apply for it 🙂 I love giving my canned goods to all my family and friends for Christmas tho! And at least you are growing that, every little bit counts and you just can’t beat the taste of a good dirt and sun grown tomato 🍅

    If you freeze corn in the husk wrapped in news paper it tastes just like it was just picked. Up to 2 to 3 years after its frozen.

    I'm going to try this method for sure, but I might dice them before putting them in the jar. It should work the same I think.

    Morning! Here in middle Georgia we have tomatoes, peppers, tomatillos and beans in excess. Just pulled the cucumbers, yellow squash and zucchini. And sow a second batch. Love your channel. Thank you for all you do ♥️

    New into gardening, canning and raising chickens. We currently have 9-brown egg layers. Should be getting eggs around late September/October. I desire to put up tomatoes, beans and cream corn. How do you know what size pressure cooker to get? Do you use your cooker for pints and quarts?

      My pressure cooker is a presto I bought about 10 years ago at Walmart then recently got another. It hold 7quarts or 9pints which I believe is about the general size of a pressure cooker. Good luck on this new canning adventure!! You’ve got this!

    I love that you always try to a kid waste. Giving scraps to animals, using all you can from the animals and milk.

    Why do you prefer this method with pressure canning instead of a water bath?

      I do it because it takes a little less time and you don’t have to add citric acid ☺️
