You can get one at walmart or qfc. A good way to find deals on expensive meat is to get meat that about to hit the “best by” date. I cook and eat the same day when I do this
I posted the process on my last short. Basically after curing you rinse off the salt and smoke it at a very low temperature for a couple hours to dehydrate it further and add some additional smokey flavor.

Keeps the temp more consistent and keeps the cap from detaching from part of the eye after fat renders . You'd only know if you cooked hundreds of them.

Smoke it anywhere from 180-250 until the internal temp hits 115-120 and then sear for approx 2 minutes a side. S/B a perfect medium rare.
