delicious SMIDDY dumpling an AIRFRYER bake

    1 Cup/240g Sugar (I used granulated)
    2 Cups/480g Sultanas/Mixed dried fruit
    4 oz/100g Butter/Marg
    1 Cup/240g grated Carrot
    1 Cup /240mlWater
    1 tsp Mixed Spice
    Combine all the above ingredients into a pot and boil for 2 mins
    Once completely cooled down, add the following:
    1 tsp baking soda (or 3 tsp baking powder)
    1 Cup /240g Self Raising Flour
    1 Cup/240g Plain or all purpose Flour
    2 beaten eggs
    Combine thoroughly and pour into pre prepared tins.
    BAKE setting 140c/280f 45mins

    I think Smiddy means a Smithy, so a Smiddly dumpling is a Smithy's fruit cake. The cake originated in Scotland. Hope that helps You can buy sets of cups quite cheaply. They are marked from one cup through to a an eighth of a cup. Thankyou Kerry for another great cooking session. . Happy cooking 😃

    It reminds me of Bara Bryth tea cake. I would eat a slice with a slab of very cold butter. Naughty but nice!

    Because I bake bread I always use my scales Antare the bowl to zero and just keep adding ingredients and if I have dry ingredients to sift and add put both bowl and sieve together on scales. If using my stand mixer to cream butter eggs and sugar put bowl from mixer on scales very quick and very accurate 😊😊

    Hi! it's not theoretically a dumpling for dumplings are steam cooked. Tea cake is more like it and I'd always eat it with a nice, knob of butter. Smiddy does actually come from smithy, a blacksmith, for the blacksmith was in general the hub of the village where people would meet up and have a wee blether. I've not long had an air fryer and it's really good, almost cuts cooking time in half saving on electricty and with the price of electricity going through the ceiling, it's a really good investment.     A smiddy in Scottish it was the place horses went to have new shoes put on, nowadays the farriers mostly shoe horses at their stables

    Hi Kerry, love your videos, I emigrated to Canada from Essex in 1977, so your channel is a taste of home. And to answer your question of cup sizes for baking, we use cup measurements in Canada and a cup is 250ml if that helps. We measure wet and dry ingredients in cups, we have nesting cups of 1/4, 1/3, 1/2, 3/4 and 1 cup. Keep up the good work.

      We do sometimes use cup measurements but they aren’t the same as American; a little larger I think. But thank you @mmoreau8284 for the ml equivalent.

    Second comment. Those cakes look absolutely delish. I think I'd have butter on and a nice cup of tea. Those induction hobs are super quick. I bought one the other day and am really impressed. I have a ceramic hob and it takes much longer to heat up.

    Nothing beats a induction hob, I stayed at my daughter in laws looking after the grandkids while they were away for a week, oh, my goodness, every meal took forever, it was a total nightmare, what heats In seconds was like 20 minutes for the pan to come to boil, then it would boil over because it didn’t turn down instantly. Since haveing my airfryer I’ve hardly used my hob or my oven.

    Amazing Kerry,so tasty looking and well done converting the time for the air fryer,they were perfec,custard would be nice but nice thick butter would be my preference, I am looking forward to your new channel as I served my time as a Motor Mechanic in the early 70's and I worked on Austin Morris cars,thanks for the mention and I thought you would use that section the back of the garden for a small allotment as I mentioned it in your new home tour video,another brilliant video Xx

      Loved cooking from my Maw broons cookbook, the smiddy dumpling was delicious. Froze 2, so will def have custard with one of those😋😋😋 but a buttered slice with a cuppa was heaven on earth

    Smiddy Dumpling is more like a traditional teacake, baked in the oven and served by the slice. It's crammed with fruit (sultanas, raisins and whatever else you like) and has grated carrot in it to add moisture and some additional sweetness. It's great with a cup of tea (what else would you drink in Scotland?) xx

    My cooker is ceramic but I've not used it in 18 months, I've turned it off at the wall socket. I have a one plate induction hob but I barely use it as just about everything is done in the air fryer. I'd be interested to see how the induction cooker fairs up against your single plate induction one. The only thing I do on my induction plate is rice.

    Looks delicious Kerry, I am not really into baking, I have a really small kitchen, in a one bedroomed flat and there is no room to swing an egg whisk in my kitchen.

    Hi Kerry, I was really fascinated by the title. Sounds and looks delicious 😋 Nothing like i thought it would be😅 I have done boiled fruit cake, as a Christmas cake. It sounds very similar. Have you done barn brack. That does have cold tea in and is lovely and moist.       Kerry that looks so so nice it would be better if you wrapped them up and left them a couple of days I bought a double induction hob about 6 month ago and it's so quick and I've just bought a airfryer oven and I'd rather use that than my corsoi 5.5 airfryer I think it's on its last legs love fran xxxx

    Yes please do a comparison because I was thinking of upgrading to induction as my old hob is working but not heating up very quick

      You will love an induction hob, instant heat on or off or slow and fast, but choose carefully, the quality you buy, the more varied the ring size I think is important. I had a bosh at my last house, ring size was never a problem, we’ve down sized to an apartment and it still has an induction hob, I didn’t think anything about it till I started using it, it was a Howdens kitchen and there appliances, I’ve only got one ring that fits small pan, the other rings are larger for larger pans, well I only cook for my husband and myself I do not need large pans, I need medium and small, so only one ring works on my hob unless I use large pans. If you can buy one with various size rings that takes various size pans, it’s better, also having the larger rings at the back of the hob so your not reaching over the big pans to work on the small ones. Those are my thoughts, but don’t be put off you will love the instantaneous heat, most places make pans that work with induction hobs just need to check them out with a magnet, even Dunelm does good pans and they work.at really good prices.

    I have a set of stainless steel cups measuring one cup, half, third and quarter. Very handy. Can't remember where I bought them though. Ebay or Amazon.

    Hi Kerry, re your induction hob, i have one too and never had a problem until i changed my pans recently, it now takes so long to boil anything using these Scoville pans, they’re great though, just wondered if it was your pans? 🤗🏴󠁧󠁢󠁳󠁣󠁴󠁿

    Hello Kerry I am new to your channel and really enjoying it. I got a tower vision airfryer just before xmas and love it as you can see in the little windows. I was amazed to see you have the Broons cookbook. I have one that I got years ago and yes I love the Broons annuals have done since I was a child and I am now 68 lol. The Smiddy cake looks fantastic and will deffo have a go. I think adding carrots will be a bonus. Keep up the great work Kerry you are a pleasure to watch. Xxx

    Hi,
    Here is the formula for converting Farenieght to Centigrade. You will have to use a calculator which will let you use parenthesis. ( 400F - 32 )x 5/9= 202.4C. Or you could do.
    400F - 32= 368F. 5/9= 0.55. therefore 368 X 0.55 = 202.4C + or - but close enough.

    Hi Kerry....my first car was an Austin 1100 not a princess tho....the Hydrolasic suspension ad to be pumped up wiv wot I describe as thick grease ....they suffered wiv leakage.every maybe 5 to 6 months ...av to be pumped up again.. you wud often see them driving down the road leaning to one side ...good luck wiv this project av subbed 👍

      You always need magnetic bottom pans to use with an induction hob, if you have a magnet try it on your pans to see if suitable, but now a days they are so common the pans are no more expensive than other pans, but an induction hob wins every time, make sure you get one with different size zones, having just moved here, this induction hob is nowhere near as good as my older one at my last house, I chose a Bosh induction hob, and it took 2 small pans and 2 larger pans, but the hob I have now we have moved seems to have 3 large rings and only 1 for small pans, well there is only my husband and I living here I never use large pans, so only one ring works, which is useless really, but since having my air fryers it’s not mattered.

    Smiddy Dumpling sounds and looks like Clootie Dumpling.
    I wonder if it is another area name for same thing.
    Tomorrow is battle of Pancakes and heck I lost my hand written recipe book in move let's just say I am doing Scotch Pancakes if I can remember recipe I have looked on YT way to many variations.
    I am not making Crepes tho and as husband wants me to bake he will eat and be grateful non will stick on ceiling lol

      It's similar but the clootie is wrapped in a cloot (cloth) and it comes out with a nice shiny skin,my gran made it all the time and we used to fry slices of it for breakfast

    Kerry I am definitely going to make one of those Smiddy cakes, it looks super, think it would be nice with whipped cream maybe? but just as it is or with some butter also lovely. Thank you for letting us see you at work I so enjoyed having a morning in your kitchen. I also am so interested to hear firstly about your Cosori 24L fryer and also that you find a big difference in the heating time of your two induction hobs. I am just on the verge of the air fryer oven type and think you have persuaded me the Cocsori is the one to go for. And should I go for the Von Chef portable induction too? I have looked at a million and can't decide which would be the best make. Thanks Kerry. Ray.
