Recipe: 260g Plain flour 2 tsp Baking powder 1/2 tsp fine sea salt 1 1/2 tsp gr, cinnamon 295ml vegetable oil 200g Granulated sugar 190g light brown sugar 1 tsp vanilla extract 4 large eggs 300g grated carrots 100g coarsely chopped nuts 60g raisins Frosting: 200g soft cream cheese 140g Icing sugar 80ml fresh double cream 50g coarsely chopped walnuts/pecans BAKE setting 180c/350f for 35 mins, I added significant amount of minutes so maybe better to try BAKE 160c/320f for 45-50mins - keep an eye near end of cooking time and if the tops go a bit burnt! you will be trimming them off to create a flat surface for the frosting. Mix flour, baking powder, salt and cinnamon until well blended. In a separate bowl, whisk the oil, sugars and vanilla extract. Add the eggs, one at a time. Scrape the sides and bottom of the bowl before adding the flour mixture a bit at a time, folding in thoroughly. Stir in the nuts, raisins and carrots. Divide between pre-prepared baking tins. Bake until a toothpick or the like, comes out clean (see below for times etc) Frosting: mix the soft cream cheese (room temp) icing sugar and double cream until smooth, set aside until cakes are completely cool. Once cakes are completely cool, trim the domed tops to create a flat surface for the frosting. Apply frosting to middle and top. Sprinkle the coarsely chopped nuts onto the top. ENJOY

Hi Kerry. Before you put your cakes in the oven, try making a 'well' in the centre of each cake. That way they won't rise so much in the middle. That's what I was taught, and it mostly works.
i tend to cover the cake after 25mins to stop it over browning but it will cook better too if you use foil on top like a lid, try a lemon cake sponge with frosting made from cream cheese and lemon curd and no icing sugar its so lush i made myself for my partner.

You could always use the top of the cake as your base once you have levelled it up. Then you get a perfect top. I bet it tastes nice. Maybe like someone else said a piece of foil on the top will prevent it browning., maybe this is due to being very near to the element as it rises. Xxx

Thanks Kerry from Australia. We love carrot cake, but so much sugar. OOh my teeth were feeling all funny at the thought of it. I only use 2 tablespoons of demerara and find that sweet enough. Otherwise the recipe is great.

The trick of "baking" the potatoes, then removing the skin, and then "roasting" them in beef dripping was a game changer for boxing day. The days all merge into one when it's Christmas 😂. Hi Kerry, the cake looked very tasty, i don't like walnuts so would have gone with the pecans. Could you not have cooked it at 160 degrees which is 180 in a fan oven. Your gifts looked amazing especially the cookery book. Did you used to get Xmas albums for kids with the broons in, i'm sure i had one when i was a child

My son-in-law is a chef and couldn't get enough of sausage/stuffing, brie & cranberry. They were so tasty and went down a storm. You could try the steam bake facility on the round ninja. Thats the way I cook my carrort cake and it is divine. There was a recipe for it came with my machine.

Recipe:

Looked delisious. I know in America the Carrot cakes Ive made always take at leats 55 min to bake. In my airfryer I usually do 325 degrees for 50 min.
