To keep the inventory fresh and balanced on top of forecasting for resupply for a 24 hour/round the clock restaurant is ridiculously hard to manage. Bravo to the meticulous management with this lead chef.
This place is busy all the time. There is always a long line, no matter what time of the day it is. The food is amazing and it's also a great value. The bouillabaisse is my favorite.
I love how hes thinking of his employees and tries to help them when it gets busy. I’ve had managers not even care during those situations. When he cares and helps out it makes things run even more efficiently.
Omg! Such an inspiration!! Working in restaurants for 5+ years and I’m ready to tap out but, seeing this really validates my thoughts and ways of working. S/o Chef Sanchez!
Thank you, Chef. That’s incredibly hard being in Las Vegas and serving the quality of food that you do. I love everything about your oyster bar Palace station Las Vegas.
This is amazing video to be able to see the inside of this oyster bar. I’ve been eating their food for over 20 years now since I was 11 when my parents would get take out for me and my brother. Always consistent with amazing food!
Best seafood hands down! Chef Paul is top tier and knows his sh*t! When you visit you have to order the Palace Pan Roast and add lobster with an order of oysters.
Love Palace Station!! Favorite place in Vegas!! Been past this place 100's of times, but never stopped to eat because I'm not a seafood guy, but next time I'll have to just to try it out now!!
During CES 2024, I stayed at Palace Station Hotel and Casino for an entire week. I spent most of my time in Las Vegas, either at the convention center or staying up really late at night writing in my hotel room. I ate at every eatery at the hotel and The Oyster Bar was the best! It's off the strip, but worth the visit just for The Oyster Bar!
What no way! I love this spot. Also palace station still lets you touch your cards at the blackjack table! Happy to see them getting some love! My parents have been going there for years. I been trying to find the recipe for the gumbo for years but can’t find it.
I honestly would love to be part of the graveshift crew. I like the setup of the line. Plus, I have respect for the oyster supplier for banding the shellfish. I always found it a pain when my team doesn't check daily to make sure the oysters haven't lost their liquor.
When you go through 1000 a day and they come in fresh everyday the only thing you need to check is that you have enough day to day. Thank you ! You should come visit us one day. Ask for me!
10 hour graveyard shift is wild. Mad respect to the whole crew
Yep that sounds properly insane. Hope they get paid accordingly.
@@thierryfaquet7405 I doubt they do .
without a break as well he says at the end. that cant be legal lol

This brotha got the entire operation running like fine wine. Energy and commitment running at 100% 24/7. Highest salute to you and the entire crew!!

As a chef. I'm very Impressed with the operation run efficiently and chef Sanchez is a all star chef. Much respect
This place is busy all the time. There is always a long line, no matter what time of the day it is.
The food is amazing and it's also a great value.
The bouillabaisse is my favorite.
I was just there this weekend , waited 2 hours ALWAYS worth it ! The most I’ve ever waited was 4 hours , it’s a must every time I’m in Vegas
Where is this at hi
@@antoniozamora5276 Palace Station Casino , Las Vegas It’s off strip a bit but worth it
Came here about 6 years ago at like 1am and waited in like about 30 - 45 min but had one of if not the best meals in my life.
Where was this
I had to wait 2.5 hours once at 3am
My go to order at 3 am is a dozen oysters and a shrimp and crab pan roast.
I love how hes thinking of his employees and tries to help them when it gets busy. I’ve had managers not even care during those situations. When he cares and helps out it makes things run even more efficiently.
Love seeing someone who loves their job and can articulate all while working simultaneously. 🔥🔥
Paul is such a dedicated leader and incredible chef bringing the best seafood to Vegas! He is a shining star!
My husband went here at 4:30am just to cut the wait time down to 45 minutes. And that was last year. This place is crazy busy all the time
Chef Sanchez has such great energy!
I said the same thing
I love seeing these large scale and 24/7 operations. It’s just so fascinating, especially the use of steam. Not to mention the food looks delicious.
“You shouldn’t be thinking about what you’re doing in the moment, you should be thinking about what you’re doing next” - great quote
Hats off to Paul and the team at Oyster bar! Love his enthusiasm and the team's dedication on churning our amazing food on a 24 hour basis
Shrimp roast at 4am is the best meal ever 😂🤣
Must try when you’re in Vegas. It’s always a delicious meal.
Mr Sanchez is a natural born Showman .. truly Master of His Domain .. 🙂
The cleanliness in the kitchen was so neat!
Its really cool to get coverage of the Oyster bar! Always been curious how it runs on the operations side!
This is an incredible display of planning, and how teamwork is essential to execution. Much respect to this chef and his team.
The most incredible part of these videos is the total dedication of all the workers. It’s inspiring
One of the top restaurants in Las Vegas hands down. I guarantee you. Open 24 hrs. It's always one of the first places we hit up once we land.
Love this place. Don’t go to Vegas often, but when I’m there I always make this a stop!!
Omg! Such an inspiration!! Working in restaurants for 5+ years and I’m ready to tap out but, seeing this really validates my thoughts and ways of working. S/o Chef Sanchez!
Epic video of Oyster Bar at Palace! Chef Paul and his team rock 24/7. 🤘
Chef P was great with the commentary and for praising all members of his team!
We ❤ chef Sanchez! Thank you for highlighting him
so amazing to see restaurants still operating 24 hours, i feel its become rarer & rarer in vegas surprisingly
But it's Vegas...
There are a bunch of 24hr, or open to 4am restaurants off the strip. Mostly in the spring mountain area.
Thank you, Chef. That’s incredibly hard being in Las Vegas and serving the quality of food that you do. I love everything about your oyster bar Palace station Las Vegas.
This guy loves what he does! So cool to see his impressive operation.
Love this spot. Waited 2 hours in line at 2 in the morning. Worth it!

Best oyster bar in Vegas, we go every Sunday 😋
Yeeeeeees! Combination pan roast at 4am in the morning. Jill and Stephen were the best!
This placr is very likable and packed with ppl all the time
Every on the line video has been fantastic and this one is no exception. This a very cool setup.
This was dope to see. Haven’t been back in 2 years but this upcoming Labor Day I’ll be there 🙌
Thank you Chef! What a team of professionals; thank you for your service!
We didn’t get to eat there…but boy it smelled fantastic! Next time we are in Vegas this is on our must stop list.
Finnsly just tried it at their new location at Durango , literally yesterday! It was AMAZING. Great service. Great food.
Amazing food. I always come here when I’m in town
What an incredible operation.
Best seafood hands down! Chef Paul is top tier and knows his sh*t! When you visit you have to order the Palace Pan Roast and add lobster with an order of oysters.

The shrimp roast while being belligerently drunk at 530am was literally a godsend
I went once on a rainy Wednesday and hit the jackpot -NO LINE!
Oyster Bar at Palace Station is a true Vegas gem!
He is OUTSTANDING
Well I know what I’m adding to my bucket list.
This is definitely the most interesting kitchen I have ever seen, I love it!
My respects for u and your awesome crew well done 👏🏻👏🏻🙌🏻🙌🏻
My favorite oyster bar!🍾🥂🦀🦞🦐🍤🔥🔥🔥🔥🔥🔥🔥🔥
Chef Sanchez has it on lock! 💪
I just love the infrastructure of a civil society that maintains health standards for citizens. wonderful
Terrific food! Get your fix at 8:30 9am, avoid the long wait. That's what I call breakfast.
I go here everytime I go to Vegas. It is worth the wait trust me.
This is my favorite place to eat on earth.
As a Chef I can say that's an well oiled machine operation
That’s the most ingenious and unique mis en place I’ve ever seen.
I would trust this guy with anything just based on his energy and passion.
I LOVE THIS PLACE!! They never disappoint
i been here twice and loved it. The pan roast is so delicious!
7am and there are people already gambling lmao
Already? Thay haven't stopped
Its Vegas, the gambling is 24/7. Some folks might just be rolling in but others have probably been there hours.
It’s Vegas. Were you born yesterday?
*still* gambling
Ftfy
you thought new york was the city that doesn't sleep...
wow, this volume is so impressive.
Omg this is my friend's dad!
plus no need for vents and boiling water is cheaper that burning natural gas 24/7 to cook ..i dig it :)
Love this guy's enthusiasm.
A living legend.
This is one of my Italian favourites and I was on Ponte Vecchio a few months ago... Wish I knew about Forno di Antoio Mattei back then!
Oyster Bar is my favorite place to eat in LV
Wow!!! Very impressive👌🏽
What no way! I love this spot. Also palace station still lets you touch your cards at the blackjack table! Happy to see them getting some love!
My parents have been going there for years.
I been trying to find the recipe for the gumbo for years but can’t find it.
Wow what an impressive operation. I wonder how it all came about at the beginning.
brilliant -thank-you Bon Appetit.
Thank you soooo much bon appetite for this episode ❤❤
Pro tip: go between 6am - 9am… usually no line
The real pro tip is to just go to the one at Santa Fe. Giving away the local secrets 🤫😂
That's such a unique kitchen, I love it!
600 degree steam. That’s epic
i wish they would go into more detail about the kettles how it's made & who made it for them etc ......
he's using warehouse ink on the green lettered screen at 4:36...
Chef Anthony is Goated !!🤌🏾🙌🏾🔥🔥
bloated*
Wow. Great chef
Amazing!!! I need to stop by and check this place out!
so packed. i only ate here once and it was so worth it
I honestly would love to be part of the graveshift crew. I like the setup of the line. Plus, I have respect for the oyster supplier for banding the shellfish. I always found it a pain when my team doesn't check daily to make sure the oysters haven't lost their liquor.
My favorite place ok stop telling people about it 3 hour wait is CRAZY thank you
Goes hard!
This is wild!
Another excellent piece.
1st thing i do is check on my oysters!!!
That should be #1 if its a real oyster bar!
This place is amazing!!!! I will be there some day!
When you go through 1000 a day and they come in fresh everyday the only thing you need to check is that you have enough day to day. Thank you ! You should come visit us one day. Ask for me!
This guy knows his stuff
The new Durango casino's Oyster bar is the alternative!
I visit the oyster bar on EVERY Vegas trip.
This might be my new favorite RUclips video. The head chef needs to have his own show on Food Network.
This place doesn't need anymore exposure. They have about 20 seats and it's busy all the time.
Facts I hate going to the Mfer I dnt wanna wait & standing in line
9:32 i think it's a holy quaternity if it's four ingredients
The food looks absolutely delicious
