I have never been interested in working at a restaurant, but I would relish the opportunity to spend two or maybe three years learning from this man to experience his expertise in meat and wood fire cooking.
A beautiful and magical human being and artist. His vision is revolutionary and respectful of the past. That being said he's about 10 years ahead of the everydayer or he's right on time for the right dream and idea. The variety is Insane and yet simple. Awesome presentation. Great staff. Hands down should he should be easily getting a Michelin and James Beard. A teacher that's naturally great at doing. Peace and Prosperity to this Chef.
Wow I would love to travel to Singapore and eat at this restaurant. It's incredible! There's an emphasis on high quality fresh ingredients. This chef truly understands flavor and that it takes time to develop it and he puts that time in. He's also really on top of things. His entire brigade is a well-oiled machine. His manner of running The restaurant is very efficient.
I’m coming next time in Singapore. This is my type of heaven. Well worth the money. Most butchers put this effort in. We just don’t see it. Love this. Put one in London. I’ll be there at least twice a week!
Love the production of the video, the choice of music in the background matches the ambience of the restaurant and the style of cooking. Time for a trip down to SG to try out this place
IMO, This is a beautiful example of what composes the culinary arts. Yes, everything in the restaurant was idyllic, but that’s the point. Mise en place. Mise en place. Mise en place. Besides the beauty of the setting, hearing the years-emphasis on years- of work chef put in, in addition to a formal education is what I respect most. Before you get to cut the fish, you watch.
This was such a beautiful place, I'll definitely have to check that out when I'm in Singapore. Thank you for taking time to film, edit and post this video.
I love oeganisation with passion, its about the client experience ultimately. 100% I will be coming to your restaurant when I am next in town, love from london 🎉
This video was awesome. i love that everyone working there is so passionate and works hard. It sucks that the consumer shots are just them taking photos for social media. The table he plated just looked like they could care less
I am not sure but the most common wood fired grill is the Josper Grill. If you check on Nisbets you will find some smaller versions of these grills. Hope this helps
The beauty of this extraordinary establishment is the effort put into every detail by so many dedicated people. The downside to the business model is that you must hit your numbers by feeding wealthy folks that can afford the prices they charge. Lose that demographic group for any reason, and you're immediately in trouble.
They are in a $1000/night hotel. A four top business dinner there is like $2000-3000. I’m sure they’re making a killing. The prices are higher than high end restaurants in NYC for example
Simple economics - the kitchen has to bring in enough revenue to survive and with them only having 10 covers a night, you’d naturally assume guests are paying $$$ for their meal. Quality over quantity.
So I looked at it, this place is actually a restaurant in an extremely expensive (aka $1000+/night) hotel called Raffles Singapore. They are charging an extremely expensive amount for the rich clientele of the hotel. That is why they have such low covers. Tasting menu alone is like $220/person, before any alcohol.
Looked up the menu. The meat prices are BEYOND OUTRAGEOUS. Way more than you would even pay in NY. THey charge by the GRAM!! I would guess average 4 top.....1600-2000$ with alcohol!!!!!!!
"if you chase the knowledge, I guarantee you'll get there faster. And when you get there, you'll get there in a more authentic way that actually has the foundation and the skill you need to be successful long-term."
Would love to experience an work-environment like this. I just trouble to understand how is this kind of restaurant surviving with these few sittings and that much ppl working per shift... Not even the craziest prices would cover the cost of everything that's going on there in one day
Singapore 🇸🇬 is a wonderful place. Since this restaurant is in Raffles Hotel (5 Star) I know it is first class and quite expensive but well worth a one time splurge.
Absolutely Fantastic Video I really enjoyed it. ❤️. But I bet he doesn’t go around and fist bump every worker at the end of the Night. I hope he does tho.🙏
I wonder how much fuel and resources they use per anum shipping pork from western Australia lmao worrying about food scraps but shipping animals across oceans. Lmao makes sense. And just like someone else mentioned 11 for lunch 16 for dinner. Idk this seems just like any other common "high end restaurant " , 27 total that's not even covering ingredients for the day probably
"We use the whole animal" Okay, where are the organ meats, head, cheeks, cheeks of pork or lamb are excellent. They just like to use the latest buzzword. They're not really doing whole animal butchering. No head or organs? I mean c'mon.
Everybody stiff as shit in this setting. Me chilling at the house cooking whole lamb getting drunk and waiting for the rest of the party to come over. Oh i forgot i fed 20 for the price of a tasting menu.

The dining experience here has to be fantastic
Ah, Eagle Rare as the house bourbon? Bravo!!!!!
Oh I'll definitely eat there when I'm in Singapore! (And, I'll never be in Singapore!)
This is so beautiful ❤.
I see all these dope restaurants with really passionate chefs doing 10 covers a night. How are these situations making money? This is a cooks dream.
Simple economics - the kitchen has to bring in enough revenue to survive and with them only having 10 covers a night, you’d naturally assume guests are paying $$$ for their meal. Quality over quantity.

You don’t need to google this restaurant to understand it’s pricey EVERYTHING you see “screams” high level including your bill
Looked up the menu. The meat prices are BEYOND OUTRAGEOUS. Way more than you would even pay in NY. THey charge by the GRAM!! I would guess average 4 top.....1600-2000$ with alcohol!!!!!!!
Insanely rich people in singapore. Why do you think it isn't in a major city here?
Why sommelier dont hold the bottle right? did he knows why there is a punt on the bottle for?

Wonderful! I hope the comment below is wrong!
Good shout out to Western Plains Pork
Give me a good chips, steak and eggs…and you will have a return customer for life
hey chef, buttermilk dont tenderize meat, its a fact, how about that? 5:29
What effect, if any, does buttermilk have on meat?
❤👍👍👍
Absolutely Fantastic Video I really enjoyed it. ❤️. But I bet he doesn’t go around and fist bump every worker at the end of the Night. I hope he does tho.🙏
Chef is very friendly, doesn't seem like he just did it for the camera
As a respected chef myself that can see through, I bet you he does.
Woooooe
I wonder why this place does such a slow business? Is it me or was this place close to empty in this video???
I wonder how much fuel and resources they use per anum shipping pork from western Australia lmao worrying about food scraps but shipping animals across oceans. Lmao makes sense. And just like someone else mentioned 11 for lunch 16 for dinner. Idk this seems just like any other common "high end restaurant " , 27 total that's not even covering ingredients for the day probably
Wait !
10am ????
No way u start the operation by 10am
Lunch is $300 per pax. 10 pax is alrdy $3k. If dinner? Easily $8k per day
I hope not everyday is as slow as this one …that payroll is expensive 😮
I’m pretty sure it’s not. This is a restaurant you’re paying for experience it’s probably booked out for months
Looks like the kind of restaurant you go to when you’re not hungry.
Small portions at exorbitant prices aren’t really my thing.
Pork sashimi? 😅
Lunch $350 dinner it’s gonna break your heart and wallet
Small portions. I’d leave hungry and pissed.
Restaurant looked empty for lunch & dinner service
He literally said that during the video...
@@dasrealdband?

A fail for Chef
Local ducks from Malaysia
Everybody stiff as shit in this setting. Me chilling at the house cooking whole lamb getting drunk and waiting for the rest of the party to come over. Oh i forgot i fed 20 for the price of a tasting menu.
Time and place. Nothing wrong with formal dining or backyard grilling
Looks like he's drying weed over the canopy
Romi jansen
