Really?!!!! Every restaurant I’ve worked in New Orleans feeds their staff even the ones that charge you a dollar per shift they at least give you something you know
Yeah it speaks volumes, I have worked in restaurants for about 4 years now and it's rare a place gives you free food let alone feeds you like family. Respect! It's a different pain cooking delicious food while starving yourself :/
Love this series/concept! Prep cooks and sauciers have such an immense amount of knowledge about cooking you can’t even capture half of it in a single video
Arnauds is a New Orleans institution. I’ve eaten here several times throughout my life, my great grandmother required we eat there every family visit to the crescent city with show our respect dressed in a nice jacket. Just recently dined there and it’s still such a great experience. They are a true example of New Orleans fine cuisine. ❤
So cool seeing Bobby in the chat. He is so so humble but Sauciers are incredibly underrated taste demons not even mentioning the creative side of things. Seeing Bobby and Sauciers in general get the love they deserve is awesome! Great Video!
The jazz brunch at Arnaud’s should be on everyone’s bucket list. Gotta experience it at least once. Lot of great food in New Orleans, but this is a whole different level. Incredible.
Love the atmosphere of that kitchen. Lots of pride, respect for the culture, not trying to be something they're not. All can be said about Bobby to. He's a vital part of what makes that restaurant great, and love to see everyone being treated like family, on top of that he actually has family in the business. As a business owner you can't ask for anything more.
I'm truly impressed, especially with the way he makes his chicken stock. It's labor intensive, EXPENSIVE, and nothing goes to waste. That mirepoix is top notch, the leeks are a nice touch.
so true! you rarely see establishment using such quality ingredients to make stock in such a large scale, most of large scale kitchen nowadays are using stock powder for such a large setting. im nerding out when i see such a classic menu such as marchand de vin.
@@Jbraj69i went to new orleans one time. didn’t go to this restaurant - but every meal i had was incredible and i highly doubt this would be any different ;)
Great Video I also worked as a saucier for a Private club for 34 years. Best time of my life. Its nice to see someone explain to the public what a true working Chef does. Spot on!
I absolutely adored listening to Chef Bobby's down-to-earth NOLA twang and getting to see behind the scenes at one of the coolest restaurants ever! Thank you for filming this piece, it brought much needed warmth on a cold and wet northern evening. There's a lot of places I like, but I like New Orleans better 😉
"There's a lot of places I like, but I like New Orleans better" Is that on a T-Shirt somewhere? If not, should be. The music, the food, the atmosphere. Been all around the world, literally, and there's no other place like it.
@@paolobrigante1761There are a lot of different dialects. In my decade there, I noticed plenty of them. The New York(Yat accent), isn’t really a New Orleans thing. It’s more of a suburb thing. Metairie, Kenner, Chalmette. Uptown has its own accent as well. It’s definitely a more southern accent.
You really gotta love the enthusiasm and knowledge he exudes. His passion speaks, even if (like most folks in Louisiana) it’s like he’s talking with a mouth full of gravy. It’s easy to see why they chose him to be the spokesman
I have been to Arnaud's. I will tell you, without hesitation, it is one of the BEST MEALS I've ever had!!! The sauces and flavors are absolutely delicious. If you are ever in NOLA, do yourselves a favor and go there! Also Jazz and great cocktails!
Great restaurant. Been there once and loved it. What a process they go through to gear up in size and scale to serve so many people eat in this popular eatery.
New Orleans is America's true dining city. The passion, and tradition in the food is without question among the best in the world. That was great to see
Incredible establishment! 11 townhouses added. Wow. They literally own the block. They must go through a ton of butter a year. Menu looks very turn of the century.
New Orleans has the best hospitality industry of any large city in the US. Better than NYC, Boston, LA or Las Vegas. The best combination of hotels, bars, restaurants, professionalism, and friendly staff. Visit more than the Quarter- that said this restaurant is amazing.
It's such a unique business to be in . You are in essence a production factory , but what you produce is only in existence a short while . It takes an incredible amount of planning , coordination and VERY stressful labor to produce it and then it's gone and you clean up and start it all over again. Short of pictures and memories there's no record of what you made. I was in it about 8 years , mainly as a line cook , then became a house painter . At least now when I am done theres something to look at for 10 years or so. But there's a sense of adventure to food service that's kind of hard to explain that I miss.
At 2:37/12:30, that beautiful lady has been at Arnaud's for 36 years (since 1993, she said), working her magic! Thank you, Bobby, and all of the family at Arnaud's. I hope that I make it there before I go to that big gourmet restaurant in the sky!
Talk about outstanding quality . Instead of just using the bones for their stock they literally use about 30 whole chickens. Unbelievable to put out that many covers and have top notch recipes .
Thank you so much for your wonderful recipe and for helping us take care of our health. Wishing everyone who is watching this video always healthy, peaceful, and happy❤
The saucier has so much personality and charisma. Great representative for the restaurant.
Thank you for the kind comment!
That’s the best part of New Orleans! The people have so much charisma!
Charisma is a fancy word for b_llsh_t.

I think its a New Orleans tradition. Everyone who worked at most N.O. restaurant feed staff.
Normal for some of the top restaurants

wow - a restaurant having a designated Saucier is a throw back to an older time......really fun to watch this guy
