Hi Bold Bakers! Join me and fellow Irish RUclipsr, Donal Skehan, for TWO traditional Irish recipes we know you'll love as part of a big St. Patrick's Day Collaboration. Over on his channel, Donal is making a gorgeous Apple Crumble. And by popular demand, I'm making my traditional Irish Scones. So let's get baking for Paddy's Day!

Gemma's Traditional Irish Scones
INGREDIENTS
3 ½ cups (1 lb/ 16oz ) Flour (all purpose/plain)
5 level tsp Baking powder
1 Generous pinch Of salt
¼ cup (2 oz/60g) white sugar
1 stick (4 oz/ 125g) cold salted Butter,
1 Whole egg
2 oz Double cream
7 oz whole milk
Milk to glaze
METHOD
1. In a large bowl mix the dry ingredients together
2. Rub in the cold butter with your fingers until it resembles breadcrumbs.
3. If adding dried fruit eg. Raisins, berries, citrus rind, chocolate chips add them now before you add liquid
4. Mix your egg with the milk and cream and pour into your flour mix (if you don’t have cream you can use only milk)
5. With an open hand mix loosely your scone mix until your dough forms. The bowl should be clean from the dough
6. Turn your dough onto a floured work surface
7. Knead lightly to give your dough a smooth surface
8. Pat your dough down with your hand until around 1 inches thick
9. With a scone cutter cut out your lovely little scones. You will have around 12
10. Put on a baking tray, glaze the tops of your scones with some milk to give them a golden top when baked
11. Bake at 350oF (18OoC) for 35 minutes.
12. Enjoy with Irish butter, jam and freshly whipped cream. Scones are best eaten the day they are baked but the next day you can pop them back in the oven to freshen them up again.
That trick with the leftover dairy in the cup was pure.....genius....and I've been baking for a long time.

I have to say you're right about your food/ ingredients they are absolutely so amazing.
Especially Irish butter!
Since I don't have an oven at home at this moment but only a Philips airfryer. I used it to bake the scones (set at 180C and baked for 13mins). I half the sugar and put cheddar cheese instead of raisins. The end product is beautiful! My family loves it! Thank you for sharing the great recipe!

I'd never liked scones until visiting Ireland this month and tasting the Irish version. Gemma, thank you for sharing this recipe, which turned out scones just like those my husband and I fell in love with on our honeymoon in Ireland. Scones spread with lots of butter and jelly and had with tea, coffee or a full Irish breakfast were amazing!

I've been to Ireland 2 years ago. What an amazing country. I tried scones for the first time, then I started to make them from scratch. And if there's anything better than a freshly baked scone, with some butter and a spoonful of jam+ a cup of tea, I haven't come across it.

Hey Gemma. I decided to make these scones without any raisins. My husbands dad was not only Irish but from Alabama. One of the staples of the south is biscuts and gravy. This scone recipe is perfect for it. With the buttermilk, baking powder and butter, oh my I can't wait till they come out of the oven! This way I can make both the Irish and southern side of my hubby happy. Thank you Gemma. Your Awesome sister!

hi gemma i tried your recipe. it was super easy the details and every thing was easy to follow. i used full milk didnt had cream. but it came out delicious. i used unsalted butter . it was yummy. thanks for the recipe.

Thank you for sharing your recipe, I tried it this afternoon and it turned out really well. So did my sisters and brother in law's. God bless.
I find if I add the raisins, etc. *after* I add the wet ingredients, I don't get the loose flour stuck in the folds of the raisins which stays there all the way through baking. You have to do it quickly and cast them broadly across the dough so they don't pool in one area. Do it just before the final few folds of the dough before you turn it out. (or maybe this doesn't bother anyone else! haha!)

Katie Flanagan I love Cobh because it is so unique with all the color of the houses and how it is like the whole town is on a hill :). I saw the cathedral but didn't go in. It was so incredibly windy (and I thinking raining) that we ate a scone and had tea in the car that we had gotten close by :)
These stones definitely are worth a try! And I love the fact that you don’t ask for a whole egg to be used just a glaze a few dribbles on top of the scones. I love your economical idea of using the little bit left from the wet ingredients!

These scones are absolutely wonderful. I made them mini and have made funfetti, chocolate chip, maple almond, coconut cranberry, and more. I love tweaking the add ins and giving them away as tiny little gifts!

lovely the way you make them, we have inherited it in Australia.. hands on and sensible... like not wasting another egg. Very gentle mix and using hands not a spoon. proper good irish butter. Was in Ireland last year, homemade food was all over Ireland. Made with love.. whether in a rough roadside cafe or tearoom at the Archeology Museum... homemade with love, yellow butter cake, flat apple pie, all with minimal sweetening.
FINALLY Someone who doesn't use a food processor. I'll try that out🙃

I have been obsessed with scones, from the time..tea became so popular here in Canada...I must say yours are the best. I left them in the oven a little longer as your recipe suggests and they browned so nicely, grated the butter..and wow , just wow.. You are a genius!! @@biggerbolderbaking So I also have a question, self raising flour has already baking powder does it not? why does your recipe call for more? just wondering because that is what my impression of self raising flour has in it, baking powder and baking soda..but it did not affect the overall taste of these scones.. at all!
I just made homemade strawberry jam and was looking for something to serve it with and THIS IS IT! I love the tip you added about freezing the preformed scones. Since there are only a few people in my home I like to only make what we will be using at the time (unless we are gifting) and freezing the extras means I can bake them off whenever we are craving them. Tried these with fresh raspberries and needed a lot of extra flour but they were yum

Thank you for making baking easy! I love to cook because I don't have to follow a recipe. Everything I do is "open the fridge, grab something and create." I love that you can do simple things like the mug cakes and even though there is measuring, it's not always exact. You also make it look super simple. I used cream too when I made the scones today, I followed your recipe and they were delicious. Now once I get the heavy cream I'll make the clotted cream, we can't get that here. My scones today were out of this world.

The scones are soo good! My dough turned out a bit sticky so I add a bit more flour! It turned out really yummy! I recommend this recipe!

BTW Too avoid stickiness add 6oz of milk instead. If it is too dry add more.
Fantastic scones, my family say the best they have ever had! Followed the recipe to the letter on each later attempt but never had the same results. One thing I have just noticed in the video it says about 25 mins and in the instructions below 35 mins baking time, this will solve one of my problems, working on the others.
