i have used the same method for scones for years. what i found is that as much as i liked making scones i would sometimes put it off or change plans because grating frozen butter annoyed me. so that i can more quickly make a batch, i grate from-the-fridge sticks of butter, usually four. i freeze each grated stick individually so that the process comes together faster when the family gets a craving for scones.
So i have my finals this summer ... once i'm done with those,i'll DEFINITELY get baking,you've been such an inspiration Gemma and it reallllyyyyy makes me grow up to be a successful baker! :) Just like you.

I just came back from traveling in Ireland, and my husband kept reminiscing about the fresh scones we had on one of the farms and in other places. I'm a pretty experienced baker, but I had never made scones before. These were simply outstanding. I didn't have self-rising flour, so I followed your instructions to make some. I also replaced the raisins with craisins. I needed a bit less liquid, but that's normal since we have pretty high humidity in Florida. Thank you for this recipe. My husband loved it too!
I also use my food processor, as I've never liked rubbing butter into flour. In addition, if am making plain scones I add most of the liquid and carefully pulse until the dough just comes together. The whole process is so fast I usually end making two or three batches. So lots of light and fluffy scones for freezing! Yum-yum!!
Hi Gemma, my husband and I have never eaten scones, so we thought we'd give it a try with scones I bought at the supermarket. Well, lets just say we were not enthusiastic about them. So I tried your recipe and wow they are delicious! My husband came home from work as I took the scones out of the oven, so he could dig in immediately! He loved them and said that it adding nything to it like jam or butter was necessary: they were fluffy (not too fluffy), sweet but not too sweet and the toplayer was crunchy because of the milk/egg trick you showed us! What an interesting scone recipe.... A tip I know with making scones. Do not twist the cutter as you cut the scones. Just press in and out. For some reason scones rise more doing this and are even fluffier as you are not working the dough more.

Hi Gemma! I just made a half recipe today, a day before St. Patrick's Day. Grating the butter is genius! And your tips about making my own self-rising flour and not overworking the dough were so helpful. I had to have one when it was still warm, and it was a bit crumbly but oh, so crunchy on the outside and soft on the inside. Next time I will make a full recipe and freeze some. Really no need to grate butter! By rubbing in the butter/spead the taste is mixed throughout the dough.

I always wondered what they do with the left over egg that they used to brush the product with. Saving the little bit and putting it on the scones makes a lot of sense. Will try it for other recipes too. Thanks.
