  • I’ve done it. I’m in trouble. I changed things up, and now I’ve ruined my whole pizza future; the family has spoken, going forward, THIS is the pizza I am to make!
    I was doing laps (as one does). We had already decided that it was a “leftovers” night for dinner. I forgot I had some pizza sauce in the fridge I needed to make. I’d always wanted to try and make a Ledo’s “like” pizza at home. Ledo’s Pizza was my Grandmother Harpers favorite pizza. It’s a Sheet-pan style. Square. Thin. Not my favorite, but from my childhood, a classic.
    Long story short, I accomplish my task. Follow along in the video, but the big reveal that was NOT recorded was my entire family saying “yes, this is the pizza you are miking going forward!!”

    TIME TO PREPARE
    20 minutes for dough
    4h for dough to rise
    20 minutes to prepare dough, sauce, cheese and toppings
    15 minutes to bake
    3 minutes to broil top
    5 minutes to cool
    INGREDIENTS FOR CRUST
    1 Cup All Purpose Bleached White Flower
    2 Cups 00 Flower
    1 Packet Active Dry Yeast
    1 tsp. Salt
    1 tbsp. Sugar
    3 tbsp. Olive Oil
    1 Cup Hot Water (not from tap, start with cold water then heat)
    Butter
    HOW TO
    1. Microwave / Boil water
    2. In mixing bowel, add dry ingredients (just 1 cup regular flower)
    3. Mix
    4. Add Olive Oil
    5. Mix
    6. Add water
    7. Mix
    8. Add 1 cup 00 Flower
    9. Mix
    10. Add 1 cup 00 Flower
    11. Mix
    12. When dough comes together, take out of mixer and kneed on clean / dry countertop
    13. Form into a ball, put back in mixing bowl, cover with cling wrap and wait a couple hours for it to double in size
    14. Take your Sheet-pan and glaze with butter
    15. When ready, set over to 425 degrees
    16. Take dough and move from bowl to clean-dry-surface
    17. Using a rolling pin, roll out dough
    18. Size it like a rectangle, not a circle, for the sheet-pan
    19. Place stretched dough into butter-greased sheet-pan, trim edges, use dough cuttings to fill in gaps
    20. Poke whole pan with fork
    21. Bake dough in oven for 5 minutes
    22. Take out, let rest and cool
    23. Add your sauce
    24. Add your cheese
    25. Add your toppings
    26. Add more cheese
    27. Put Pizza in pre-heated oven (every oven is different, so this will require testing on your part)
    28. 10-15 minutes of regular Bake
    29. I add 2-3 minutes of Broil to brown the top once Bake is done
    30. Take out
    31. Cool
    32. Cut
    33. Enjoy
