  • I’ve been lazy as of late. I’ve been under-the-weather. When I don’t feel well, and we travel, I don’t cook a whole lot. I live off of Chicken Noodle Soup and Saltines. Simple. I’ve done a few videos, but mostly they’ve been of me goofing around. I figured I would create something my family has been asking for. BBQ Chicken Pizza. Sorry, BBQ Chicken SHEET-PAN Pizza.
    This one is interesting. I have made this, the traditional way, with Red Onions and Wilted Greens. Couple of things: One of our family doesn’t LIKE Onions, and the last time I did Wilted Greens on a Pizza, it made the dough soggy. SO, this is a straight-forward example of BBQ Chicken Sheet-Pan Pizza no frills.
    It takes time. You have to make the dough. You have to (I have to) thaw the chicken. I had planned on grilling the chicken on charcoal, but woah boy, that would have added even MORE time (but amazing flavor). Next time. Today, I sub in the Air Fryer for the Grill.
    In the past, I have also constructed the pizza, added the chicken THEN using a squeeze-bottle, i glaze the entire pizza in BBQ sauce. It was good, it looked incredible, but the BBQ sauce & the Pizza Sauce combo made the bites VERY sweet, so I have since reduced the amount of BBQ sauce to just a dollop on each chicken bite; flavor explosion! It’s a lot of fun. The BBQ sauce is now a random ‘pop’ of flavor, not an overarching sugary canopy.

    HOW TO
    1. Microwave / Boil water
    2. In mixing bowel, add dry ingredients (just 1 cup regular flower)
    3. Mix
    4. Add Olive Oil
    5. Mix
    6. Add water
    7. Mix
    8. Add 1 cup 00 Flower
    9. Mix
    10. Add 1 cup 00 Flower
    11. Mix
    12. When dough come together, take out of mixer and kneed on clean / dry countertop
    13. Form into a ball, put back in mixing bowl, cover with cling wrap and wait a couple hours for it to double in size
    14. Take your Sheet-pan and glaze with butter
    15. Place 2-4 Bone-in Chicken Things into your Air Fryer
    16. Cook till done; 20-25 minutes
    17. Cool Chicken
    18. Remove skin, bones and pieces you will not eat
    19. Cut up processed chicken thighs into bite-sized pieces
    20. Place in bowl for use later
    21. When ready, set over to 425 degrees
    22. Take dough and move from bowl to clean-dry-surface
    23. Using a rolling pin, roll out dough
    24. Size it like a rectangle, not a circle, for the sheet-pan
    25. Place stretched dough into butter-greased sheet-pan, trim edges, use dough cuttings to fill in gaps
    26. Poke whole pan with fork
    27. Bake dough in oven for 5 minutes
    28. Take out, let rest and cool
    29. Add your sauce
    30. Add your cheese
    31. Add your chicken pieces
    32. For every piece of chicken you add to your pizza, add a ‘drop’ of BBQ sauce onto the chicken
    33. Every. Single. Piece. Of. Chicken. BBQ Sauce.
    34. Add more cheese
    35. Put Pizza in pre-heated oven (every oven is different, so this will require testing on your part)
    36. 10-15 minutes of regular Bake
    37. I add 2-3 minutes of Broil to brown the top once Bake is done
    38. Take out
    39. Cool
    40. Cut
    41. Enjoy
