All my life, Ive enjoyed Pizza. As O got older, I learned to stop eating bad pizza and settle for GREAT pizza. Where I live, I only know of TWO places where great pizza is made. Even so, both places are well over 50 miles away. So, I learned how to make pizza myself through YOUR videos. Now, there is no place around where we live that has better pizza than what we make. We owe it all to you, Vito. Thank you!

Just fantastic. This is what I, as a 70 year-old, life-long “kitchen dog”, like to see; it’s like IM there; IM at MY job! What I see here is what I experience everyday at the restaurant that I work at (but it’s Greek food, not pizza). So interesting so see the differences in that type of preparation as opposed to what tasks I do, on a daily basis. More, please👍

I agree. I thought Vito was mad or something at first as I had no clue what ASMR was. ASMR (autonomous sensory meridian response) is a new phenomenon. I liked Vito's smile showing the pizzas, so this showed his passion was still there, he was just trying to be quiet as the point. I prefer his animation and enthusiasm, but I can definitely appreciate this video for what it is. I agree @Studiovette, who is enjoying all these pizzas? Also notable, I think that this is the first time I have seen him make "quantity" in an electric oven...with the small exception of when he "made pizza for the whole family" at home.

Hi Vito and all pizza lovers, I've been using your poolish dough recipe for about 6 months now with an Ooni Koda 16 and was very pleased with the results every time and only went out ocassionaly for pizza just to compare - never found a pizza yet which was much better than mine. Last week I visited my wife's family and I knew there was a world champion pizzaiolo (2021) nearby so we went there to try it out. We sat near the oven and they used an electric one, so nothing fancy. The dough was a bit bland for my taste (so in this case Vito's recipe is way more complex) but the crust was much crunchier than mine. When I tried to replicate that crust with my pizza I lifted it at the end of the bake with the peel close to the flame (to avoid over baking of the underside), but this only darkened the crust and it did not really gave me the same crispiness like the pizza from the world champ. Any suggestions? I use 65-67% hydration with Caputo 00.

@@clausanders2886pretty sure it’s 70% as that’s how go to hydration. If you watch every videos you’ll know. If you’re a beginner I would use 60% as it’s way easier to manage without it being sticky. Don’t have to move as fast.
@@aLaCartePizza Calculate the hydration yourself (numbers don't lie): 25kg of Flour and 23kg of water=>hydration=23/25=0.92=>92%..For 70% hydration you would only need 17.5l of water.Otherwise I agree with what you are saying.I'm using 70% always.

I love this! I just made the most beautiful Neapolitan margherita pizza at home this morning! It sure seems like everybody has their own recipes though… The underlying method remains the same, but even when it comes down to making the sauce, the fact that you added the leaves of basil and olive oil into the sauce is something I have not seen yet… Will give that a try!
I lived in Italy for two years, in a little town called Gaeta. The first time I had pizza I was astonished at the none use of garlic in the sauce or anywhere to be seen. Having lived all my life in the East Coast of the US, primarily in the tri-state area of NY, NJ, CONN, I grew up with pizza heavily ladened with garlic in the sauce, maybe because most of the pizza makers were from Sicily. Anyway, I never ordered pizza in Italy again, but there were plenty of great restaurants with fabulous foods that I very much enjoyed. Thank you for your videos, it’s great to learn a proper technique and options.

You make the balling process look super easy. I used to have to make the dough at a Pizza hut... (sorry for bringing them up). This meant that I had to weigh every single ball of dough, to ensure it was the right size for the pan it was going to be placed in. Your method would make that faster, by a bit, but would ultimately be slowed down by the weighing, the flattening, and the placing in a oily pan. Still. Neat method. Will use it for personal use, since I left that job a long time ago.
Vito, you are the greatest ever. You thought me how to make pizza, and just a couple of months ago, I got my first home pizza oven. I make pizza about two times a week now with your recipe, what you thought. I'm still in the process of learning as it takes time to perfect it and become comfortable with the dough, but, these videos encourages me to keep going. I took notes of everything even though I only, ever, make enough dough for two pizzas! I'm not sure I got your math right, but it looked like your dough hydration was over 90%! Can you tell us what the size & weight of each dough ball was, ; and what temperature was the oven. Is the dough ball weight the same as you give in the master class book? Your oven looks like the Rolls Royce of pizza ovens! Wow! It was amazing watching you stretching , topping and then baking all six pizzas at a time! You make the balling process look super easy. I used to have to make the dough at a Pizza hut... (sorry for bringing them up). This meant that I had to weigh every single ball of dough, to ensure it was the right size for the pan it was going to be placed in. Your method would make that faster, by a bit, but would ultimately be slowed down by the weighing, the flattening, and the placing in a oily pan.
Still. Neat method. Will use it for personal use, since I left that job a long time ago.

Vito, you are the greatest ever. You thought me how to make pizza, and just a couple of months ago, I got my first home pizza oven. I make pizza about two times a week now with your recipe, what you thought. I'm still in the process of learning as it takes time to perfect it and become comfortable with the dough, but, these videos encourages me to keep going. I've even been thinking about maybe open my own pizza place one day, because Hey, I LOVE pizza. Thank you Vito, for showing us and teaching us. 🤌🙏

Very interesting to see the difference in crust with a traditional wood oven. I'm pretty sure they were a little bit drier but still very good to eat

Vito, this video was the best ever-a real master at work - so generous and brilliant. It was like watching a dancer as your moved silently through the whole process. I was blown away!. I took notes of everything even though I only, ever, make enough dough for two pizzas! I'm not sure I got your math right, but it looked like your dough hydration was over 90%! Can you tell us what the size & weight of each dough ball was, ; and what temperature was the oven. Is the dough ball weight the same as you give in the master class book? Your oven looks like the Rolls Royce of pizza ovens! Wow! It was amazing watching you stretching , topping and then baking all six pizzas at a time! If I can, I'd like to figure out your recipe so I can make just two balls of dough! Congratulations on your well deserved million subscribers and your success! Your family must be soooo proud!
