    Ingredients
    For Simmering
    - 1 cup vegetable oil or peanut oil
    - 4g cinnamon stick
    - 3g star anise pods
    - 15g dried japone peppers
    - 45g garlic rough chopped
    - 100g shallot rough chopped
    - 10g sichuan peppercorns
    To Combine
    - 30g red chili flakes, thai dragonfly
    - 10g Gochugaru
    - 20g soy sauce
    - 15g sugar
    - 3g msg optional - use sea salt as an alternative
    Instructions
    1. Rough the chop peppers, shallot, and garlic. Add to a wok or pot along with cinnamon stick and star anise.
    2. Add oil to pot, heat to a simmer
    3. Cook until ingredients browned, about 20 minutes
    4. Meanwhile, add chili flakes, Gochugaru, soy sauce, sugar and msg to a heat proof mixing bowl or pot
    5. Once simmer contents are browned, carefully strain hot oil from pot into mixture, leaving simmered bits out to cool and continue crisping
    6. Remove cinnamon stick and anise pods from crisped bits
    7. Combine all, refrigerate overnight
