    Recipe
    Ingredients for 4 portions
    2 tbsp grapeseed oil
    1 brown onion, diced large
    2 carrots, peeled and diced
    2 potatoes, diced
    1 green apple, diced
    600ml chicken stock
    1 packet S&B Golden Curry
    2 chicken breasts, sliced in half
    200g flour
    2 eggs, beaten
    200g panko bread crumbs
    Oil for frying
    3 spring onions, sliced thin
    Salt to taste
    Steamed rice to serve
    Method
    1. Start by cooking some rice in a rice cooker to serve the curry.
    2. Heat the grapeseed oil in a large frypan and sweat off the onions and carrots with a pinch of salt.
    3. Once they start to soften, add the chicken stock.
    4. Now add the potatoes and simmer for 15 minutes or until the veg is just starting to soften.
    5. While that is cooking, heat the oil in a cast iron pan for frying the chicken katsu.
    6. To crumb the chicken, season it with salt and then dust it with flour followed by a dunk in the egg and finally the panko crumbs.
    7. Back to the curry, after the potatoes and carrots have been cooking for 15 minutes add the apples.
    8. Once the stock comes back to a boil, add the Golden Curry and stir through.
    9. Cook the chicken katsu in the oil at 170°c until golden brown on both sides, about 7-9 minutes.
    10. Once cooked, let it drain on a wire rack and season it with salt.
    11. To serve, add the rice in a bowl and the curry next to it, finally slice the chicken katsu and serve on top.
    12. Garnish with spring onions.
    13. Enjoy!

    The way you explain things is helpful to me, thank you. Explaining that you’re not looking for color on the carrots, just sweating them - that sort of thing is SO helpful for those of us who can’t cook.

    Oh man!! This is my newest favorite also!!
    Had it first time last summer, and have made it a few times since!!
    A tip to anyone who likes to make things in bulk.
    The curry sauce with the carrots, potatoes and onion mix does freeze very well for quite a while.
    As does the fried up chicken.
    You can basically pre cook all this, then reheat it for a quick dinner at your convenience.
    Do recommend air frying the chicken upon reheat.

    I love how Andy calls himself out. I noticed how the board was moving on him. Most chefs wouldn't say a word about it but he used it as a teaching moment. Same with the egg shells. Great job. Excellent video.

    Yo Andy , this one of those dishes where if u get a recipe for an authentic from scratch one, it is night and day better than the store bought stuff. If you’ve ever been Japan and just eaten at any of the Japanese curry restaurants or even chains (like CoCo Curry) it’s remarkable the difference there is despite S&B being a solid curry.

    Very good video. I make it all the time. I use the same curry cubes. I prefer it with a chopped pear instead of apple. The stickier short grain rice rather than long grain is a good idea. I top mine with cashew nuts. Some places top with coconut and raisons. Many options, all good.

    Japanese here. Instead of adding big chunks of apple, we like to grind it up to a paste like apple sauce then add it in. You can also add a little bit of dark chocolate, some people do that as a secret ingredient.

      Ive experimented with grated apple and other grated fruits in my curry and found that the sweetness is not missed when not including it and the flavor is better without the fruit in there. Only add fruit into your curry if you know thats what you want

    You can grate the apple and then put in the curry. You will love it. Japanese don’t leave the pieces of apple in chunks

    Fun fact! If you do not have apple cube green cabbage up very small and as the sauce cooks with the carrots it breaks down in the sauce and gives a silky texture ❤️ ✌️ 🇺🇸

    Andy, thank you for introducing Japanese chicken katsu karē. Please enjoy pork katsu, beef katsu, fried prawn, hamburg steak as toppings as well. I think adding soy sauce , lea & perrins sauce and ketchup and pitting karē sauce into the blender would be better.
    Letting it rest overnight in refrigerator is also a great tip.

    This is my favorite Winter comfort meal! I use the S&B powder because I don't like the mouthfeel of the roux cubes, and because it's more versatile. But regardless, S&B brand is the way to go!

    Nice video, I live in Japan and have been here for 30 years. Never seen apples cut up and put into Curry (Kare). My wife is Japanese and she even said no one puts apples into the curry. There are curry packets that have apple flavor already in them.

      Never and no one are a wide brush. regional variations happen. people put apple in curry in Hirosaki region, grated or diced. There is even restarants putting apple in the pork katsu. You should take her there.

    I made this.
    It was absolutely delicious. I did omit the apples though but even without it was amazing. I was fortunate enough to find the exact Japanese curry powder.
    The only issue I had was that I overcooked the veggies. I think with a little more practice I'll be able manager my time better. But everyone loved it. It was so good. Definitely a keeper!!!

    never seen whole pieces of apple in kare - only grated or incorporated with the roux. i've used house brand vermont curry my whole life, but recently found the deliciousness of kokumaro curry. if s&b golden curry isn't up to your tastes, feel free to try other brands. also, you don't have to eat curry with chopsticks, most japanese will eat with a spoon. it is a stew, after all!

    My japanese wife was mortified by the apple. Usually Japanese MIGHT add some apple sauce but her family never used it. I've had it both ways but i can definitely say the curry without apple is better.

    I love curry rice but I cannot use the flavour blocks because they contain wheat flour as a thickener.
    S&B make a curry powder which is gluten free (it comes in a small, red tin). A maize flour slurry will thicken the sauce. Rice flour crumbs (or potato starch double fried) are the closest things to panko people with wheat allergies can use to coat the chicken (or you can put bite-sized pieces of cooked meat in after adding the apple).
    The main rule of Japanese curry someone from Japan told me is: there has to be potato and carrots! 🤣

    Instead of using plinko chicken and chicken broth, soft beef brisket with a little fat still on the brisket and beef broth mixed in this curry sauce on rice is amazing.

    one of my fav's!! thanks Andy :) Pro tip, if you use a spray bottle to moisten the panko before you crumb, crisps up awesome, and gives you time to remove the loose crumbs before they overcook in the oil :) That curry also goes awesome with the aussie classic curry sausages :)

    Japanese-style curry is absolutely delicious! I am curious, though - would you be willing to make a version that doesn't use the premade curry blocks? I know most Japanese households tend to use the blocks, but they can be kind of tricky to get a hold of where I live - plus, a 'fully homemade' version would make it easier to control what you actually eat, and thus make it a little bit healthier!

      Japanese style curry roux is quite easy to make with fairly basic ingredients - butter, flour, garam masala, curry powder are key, from memory. There are many good videos on RUclips.

      @@ticctacc I've sort of made it from scratch before myself, but it ends up being quite a hassle to... well, properly mix the curry roux into the curry itself; following the recipe my girlfriend found (if I remember correctly, it was a version that was supposed to replicate the curry shown in Persona 5, which she's a big fan of - it turned out pretty delicious, so we've stuck with the recipe, despite it being a hassle to make), I'm supposed to take a small spoonful of the roux and slowly stir it into a ladleful of the curry, and then mix the stirred curry + roux into the rest of the pot, repeating the process until all of the roux has been mixed in. It's annoying to say the least, and it's always fun to see alternative methods!
      I saw J. Kenji Lopez-Alt do a super simple version of it, but I somehow suspect my girlfriend won't be a fan of his version.... plus he emphasises how important the specific type of curry powder he uses is, and I've never seen the brand locally.
      Still, thanks for the advice; all too often, people feel the need to put others down for asking simple questions, and it's nice to be met with positivity for a change :)

      @@eivind261093 I have not looked for it in our local Asian groceries but I bet it is available. The brand name is S&B which is well known. The product is named Golden Curry Japanese Curry mix. It was available in mild, medium hot and hot with different serving sizes as well. I opted for the 5 serving container in mild and medium hot. I combined one of each with 1 1/2 cups of broth and it was quite tasty. Tonight I will use additional seasoning servings and more broth to see if more is better.

    The best Chicken Cutlet Curry’s I’ve ever had was both in Japan! One is from Coco’s Curry House in Okinawa, Japan and the second was a street cart in Mainland Japan! One was a well known restaurant and the other was literally just a guy who brings a cart to high popular areas late at night and he said he also goes out during the late afternoon rush when people are going and coming from work or wherever they are going. Just can’t get enough and I can’t wait to go back to get my hands on it again! lol

    You can also make a curry stew. Cook the onions then add cubed up chicken. Once cooked, add stock and potatoes and carrots, serve over rice.
