    I believe this is my first whiskey from Denmark. It won't be my last. I couldn't find the mash bill online. Is it 100% rye? I didn't think too highly of this at first, but it grew on me.
    Nose wasn't that pronounced initially, but after adding water I got more of the berries, pepper and wood. Nice amber color. Anyone know the age statement?
    The whiskey is well balanced and smooth at 96 proof. You get the 'heat' of the rye and not the booze burn. The finish lingers in an interesting way. I paused for a minute to take some notes. I was about to take another sip when I stopped because I suddenly picked up on the lemon and mint. It's very subtle, but was a pleasant surprise.
    I originally gave this a 7.5, but it's trending up. Cheers!

    Denmark, cool.
    With time (5 - 10 minutes), the initial intensity of the rye fades to let chocolate.surface with mint in the far back in the nose. Still later, a green fresh rye grain aroma comes out. Haven't experienced that before.

    Stauning Rye. Nose: Pumpernickel, peanut brittle, olive brine, alfalfa and pinecones. Palate: Pumpernickel, olive brine and hazelnuts. This is a fine whiskey with some fascinating aromas and flavors. As the mashbill is not 100% rye it mixes things up a bit. It is a bit nippy since it is only 3-4 years old and aged in new American oak barrels. A few more years in the cask to mellow out the heat and pungency of the rye as well as some cask finishing could make this even better. I've had some amazing pot still malted rye whiskey but it needs time and careful cask maturing to bring out its best qualities. Solid 7/10 and I look forward to trying more from this distiller.

    Stauning Rye is interesting as it appears to open up rather quickly and moves from cinnamon on the the nose to one of baked bread. Black pepper is present on the finish but then opens up to a nice Irish butter note. Probably the first time I had tasted that in a whisky. This one and Starward Solera are the winners so far.

    Remus bourbon... normally I don't like bourbon but I like this. Don't like the smell. When I first tried it, I was like medicine, just not a enjoyable smell. Then I tasted and niceee. Smooth... great taste and even after taste is good. Nothing harsh about it. I Enjoy this. Right now this is my 2nd favorite. Damn I love Christmas.

    On the nose, I got pepper, caramel, with a hint of vanilla.
    The taste was a soft vanilla and caramel, with some spice notes. The finish seemed to have cherry undertones which left a slightly sweet aftertaste.

    Stauning - love the rye, after I finished I picked up some Carmel flavor. Love this one, thinking of getting a bottle

    Black Day 9
    N: lemon pepper. Cedar.
    P: herbal. Vanilla on the tip of tongue
    F: heavy oak. Smoked butter
    Fantastic mouth feel. Completely coats your mouth. Lacks full depth though
    6/10

    Great Denmark whiskey, tho I’m really not liking the videos after the experiences the last few years. The comments are much better than the video… also not liking the super long repetitive intros.

    Pass on this one(Stauning Rye), getting lots of lemon and mint. Weird combo of flavors that isnt working for me

    It's fun reading the comments to see what other people think and what notes they taste. I had a hard time enjoying this one because the flavors (Mint, Berries, and Lemons) seemed to fight too much with each other for me to like it. But those flavors were very bold and stood out more than any of the other tastings so far. This was a unique and fun one to try but unfortunately lands at the bottom of my list.

      Same with my husband and I. Even with water it was harsh and not easy to drink. I got caramel, burnt sugar and peat on the nose, pepper and caramel on tongue. Our least favorite, but we have really enjoyed several others.

      Sometimes, if you wait a few minutes (or even fifteen, twenty, etc.) things sort themselves out. I usually pour half the tube, then cap the rest. The air in the tube will mean a different experience when I consume the rest. It's the same with a bottle of whiskey - it evolves.
