Wholesome Red Lentil Focaccia Bread❗️ Nutrient-Rich and Gluten-Free Bread Alternative 💯

  • Red lentils are a powerhouse of nutrition, boasting high levels of protein, fiber, and iron. Their versatility makes them an excellent alternative to regular bread. We've crafted a nutritious and delectable focaccia-like bread using red lentils and a few simple ingredients.
    Indulge in the nutritious and delightful flavors of red lentil focaccia bread, a wholesome alternative to traditional bread options. Enjoy its rich protein, fiber, and iron content while savoring its versatile taste and texture.
    Instructions:
    Thoroughly wash and soak the red lentils for at least 4 hours or overnight in the refrigerator.
    Rinse the soaked lentils thoroughly and drain them well before transferring them to a mixing glass.
    Add eggs, cottage cheese (or sour cream or yogurt), and salt to the lentils. Use a hand blender or food processor to blend the mixture into a smooth consistency.
    Incorporate the baking powder into the mixture, blending for a few extra seconds to ensure thorough mixing.
    Brush a large pan (approximately 20 x 20 cm) with olive oil and line it with parchment paper to prevent sticking.
    Pour the lentil batter into the prepared pan and distribute pitted black olives evenly, mimicking the arrangement of a traditional focaccia bread.
    Sprinkle rosemary leaves (or preferred herbs) on top of the batter and drizzle olive oil over the surface.
    Preheat the oven to 350°F (180°C) and bake the lentil focaccia bread for 45 minutes or until golden brown and cooked through.
    Once baked, remove the lentil focaccia bread from the oven and allow it to cool before cutting and serving with your favorite additions.
    Ingredients:
    For 6 servings of this lentil focaccia bread:
    1 cup (190 g) red lentils
    2 eggs
    1 cup (200 g) cottage cheese, sour cream, or yogurt
    2 tbsp. olive oil (for drizzling)
    1 tsp. salt
    ½ tbsp. baking powder
    50 g pitted black olives (or green olives)
    1 or 2 rosemary stems or other herbs of your choice

      Feel totally free to experiment the recipe with your own favorite spices and herbs. The real focaccia bread is very versatile (you can add, dried tomato, green olives, cheese, herbs, onion, garlic and the list goes on 😅)!

    Isn't there an advantage to rinsing before soaking?

      Actually, it depends on the quality of your product. If it looks clean and well packaged, I will soak directly. But if you see the product dusty and with average packaging, I would clean and rinse before soaking. In all cases, you need to rinse extremely well after you soak to discard the leptins, phytic acid and other anti-nutrients. I also sometimes, when I have time, I change the soaking water once or twice to improve the taste of the bread (you’ll decrease the lentil aftertaste) 🙏

      You can always use green lentil and get a nutritious and delicious meal. But the texture and taste won’t be exactly the same. This recipe turns almost like the regular borek or spanakopita in terms of taste! That’s not the case with lentils with skin, unfortunately 🙏

      Sorry to hear that 🥲
      Usually, if it’s dense that means the batter was too runny! Make sure you drain completely the rinsed lentils out of the water.
      It takes some trial and error before you get the right batter consistency and the best results 🙏🥰
