INGREDIENTS YOU WILL NEED:
For the dough:
Bread flour - 500g (4 cups)
Sugar - 1 tbsp.
Olive oil - 2 tbsp.
Fresh yeast - 10g (1½ tbsp. of crumbled fresh yeast)
Warm water - 410ml (1¾ cup)
Salt - 8g (1½ tsp.)
A branch of fresh rosemary
For the topping:
Fresh Rosemary
Olive oil
Salt
For the filling (optional):
Italian dried salami
Stracchino cheese

I just measured mine, it's 14x10.5" (36x26cm). Both metal and ceramic are good, with ceramic I would just be careful with the cooking time as it takes longer to heat up. By the way, check out my video from yesterday, it's a new focaccia, you'll love it!

Ciao Nicola, per questa focaccia dovresti usare 5-6 grammi di lievito secco. Sì, 1 ora di lievitazione basta, devi tenere l'impasto in un posto caldo.

If you don't have fresh crumble yeast, what else can I use
You could use 2 teaspoons of active dry yeast instead, it works just as well.

Im making this now but my dough seens very stiff compared to the video. Now im worried its not going to work. Is stiff dough normal i followed the measurements to a T.
Add a little more water, some flours absorb more moisture and the dough may be a little drier. Add a little at a time and compare the consistency to what you see in the video.

@@Food-Language ok,omg it turned out soo delicious, once i adjusted the dough consitency,then it all worked out. I added grilled onion slivers and thinly sliced tomatoes, with sliced kalamato olives and dried rosemary as i didnt have fresh,but it was soo good. Ill be making this one often..thank you. I cooked it at 450 degrees for 20 min.

This didn't work. I followed instructions to the T. My pan is the exact same color and non-stick. Bread was darkened on the outside but gummy and mostly uncooked on the inside. Time and resources wasted. Now, the only way to make it edible without getting sick is to cut it horizontally and then cut those layers into slices and then toast. Thumbs down. Waayy down.
Sorry to hear that, I can assure you that the recipe is tested every week for years, it became a staple in my family and I follow the exact same steps as I did in this video (it's more than a year old, but the process is still the same).
Gummy and uncooked inside means only one thing: the yeast didn't do its thing. Did the dough raise? It should get bigger and bigger between the "folding" procedures. In the end it should be full of bubbles and very strong. I've had people with zero baking experience making this and send me amazing photos of the final result. You can use brewer's yeast or active dry yeast, the important thing though is for it to be very fresh.

Same here, im scrolling thru every utube video trying to figure out where i cud've gone wrong... i made double bactch, cooked one n failed n still have the other to cook😂
@@Food-Language The yeast did work. The dough did rise and the yeast came right out of a newly opened vacuum packed bag and which had been properly stored. It foamed within minutes of gentle stirring with the water. I'd be lying if I said I'll give this a second try, I won't.
@@killaashhpubgmobile8401 just find a good Italian bakery and buy it. I've seen recipes for pizza dough with just flour and Greek yoghurt, maybe you can try turning the second batch of dough into that? Let us know what happens!
I'm sad you don't get to enjoy your own focaccia. The recipe is so simple and so infallible, there must be something you could easily fix. Walk me through the last phase before baking. You transferred the dough into the tray, spread it, then left it to rise for 30 minutes? Did it rise well? When you dimpled the focaccia with your fingers, did it seem puffed, with bubbles popping up when you pressed your fingers down? You can literally see the timelapse of the focaccia baking, there's no secret trick to it, it's exactly what professional Italian bakers do (I learned to make focaccia from them directly).
