Great job! Couple tips for anyone else planning on building or for future reference. When using a chisel to mortise (create a recess) put the bevel side of the chisel inward and use the flat back side of the chisel against the outer edge. Also, that west system epoxy would probably be stronger than the CA glue that you used to put the handle on with.
Next time you have a tight fit with stainless pins try putting the pins in dry ice for a while, they will shrink and drop right in with no effort… we do it at work all the time.

Hard to say, I only did two coats. Just enough to fully cover it twice over. I know that's not very accurate but it ws my first time making one

You need to get a lot of details out of the wood and a better design, the square cuts stop a lot of water making it difficult to move sideways
