There are laser cutting services available online, at least in Europe. With some companies you can get your parts, maybe even from metal, for practically only the material price.
if you dont have a laser cutter just use a pair of old logitech pedals add the Motor bike break. and replace the potentiometers with Load cell and you are done.

This is a well thought set of pedals!I'm not a fan on the wood construction(although I understand the reason), the throttle spring also isn't what i'd install, but other than that the set is really brilliant!
please do a new and improve wireless dropper post conversion kit and sell it!! it would be amazing if i could by one as i need to route my dropper but dont have the budget to buy a wireless dropper and dont have the option to internally route it

where i live the library has a laser cutter. Not possible everywhere for sure, but good to look into

Why not putting a flat load cell directly between the brake pads?
