As a meat lower, I can confirm that lentil köfte is freaking delicious. Don't hesitate to try it even if you are not a fan of vegan recipes. It's a food older than a few hunderts years old and it survived for a good reason.

A Turkish friend taught me how to make this YEARS ago - and it has become a firm favourite! These patties make GREAT party food just on the lettuce leaves but rolling them into coated balls takes them to a whole new WOW level - so *THANK-YOU Refika!!* I've found the paste can happily be made the day before but leave the herbs to the day of serving. We have also used leftovers in burgers and wraps - versatile, delicious and healthy!! Next time though any leftovers will definitely get the 'fried patties' treatment. YUM!!

So delighted to learn that we will be able to enjoy your natural warmth instead of artificial intelligence. I very much doubt AI would come up with the phrase, "lentil sponge"! This technique is fascinating and seems endlessly modifiable. We are not vegan but we have vegan friends and we always like to have things to offer to them. We can't wait to prepare this for them!! Thanks to you and especially to your lovely team. Be well and stay safe!!
I love this channel.... I am learning all my Babanna's recipes . She has been gone for 15 years, - watching your video's is like being with my Nurten Teyze in her kitchen watching her cook. Thank you.
You can do a children's cartoon Refika version with easy recipes and safety tips in several languages. That would be adorable. You could also include cartoon versions of your crew to teach about herbs, spices, vegetables, and some basic gardening. That would probably be a great idea and will get children more interested in real food.
Great tips and I love the balls options. I am English married to a Turk, we live in southern Turkey. You have helped me a lot in cooking Turkish foods, your videos are very well edited and I love your recipes!
This is really delicious. I made it with just the oil for frying the onions, and didn't knead it as much as Refika did, and it was terrific, despite my laziness and the much lower fat content. Thanks so much for this fast and easy healthy recipe!
That looks yummy. I would love it if you came to America and open up a restaurant. We would welcome you and your crew and your family here with open arms and love and peace.. Thank you once again for sharing your recipe. Sending prayers and love to you and your crew and your family and to Turkey God bless ❤
As a vegan, English speaking living in Istanbul I really appreciate you bringing us Turkish cuisine with a twist that I can prepare and enjoy at home! Cos tesekkur ederim!
I always wait for your videos and watch them as soon as they are uploaded. You're such a beautiful spirit Refika❤ thank you for bringing Turkey closer to us through your wonderful cuisine, love from India!
Thanks. I’m always grateful for your videos. I’m not a vegan, but most of my family members are pescatarian or vegan, so this recipe is very welcome. Do you have a video for making the red capsicum paste? Thanks again.
My mum always made a red onion, tomato and sumac salad with even more chopped parsley, olive oil and lemon juice and its great dipping the köftes in this salad.
I am new to Turkish food. (I started dating a guy who's half Turkish, half Persian a year ago). The salad you mentioned sounds good. Could you give rough estimates of measurements for the salad? If you are like me, you never measure anything. LOL
@@tessalynne6778 oh, how nice 💕 let me give you an estimate recipe, you can add salt, olive oil and even the sumac to taste, and if you're not vegan, this onion salad goes sooo well with meat köftes as well) Onion Salad 1 medium onion (diced or strips) 1/2 cup (or a little less) finely chopped parsley 1 medium-sized diced tomato 1/2 tablespoon sumac 1 tablespoon olive oil Add sumac into the onions and mix, add parsley, tomato and olive oil and mix, serve with lentil köftes.
@@ulqulqu thank you so much! Just one more question for clarity if you don't mind. Is the sumac you use the powdered stuff I can get at Middle Eastern stores? Just checking because I grew up with wild sumac trees and some people used the berries from them to make a drink similar to lemonade but I don't have access to that now.
Thank you again for this vegan video and so happy to hear you will be doing the videos it is much more personal and feel like you are right here with us. You and your crew are very amazing. Thank you and be safe!🐞🦬❤️🐢
Yay, finally! Was waiting on your version of this dish for a while… thank you! And especially different ways to present at the end- will definitely make them
Thank you for putting out your videos in English! I love them! I was just telling my family about you and how much I appreciate you sharing your passion and your humor. There are so many channels that make you read the directions on the screen. They make me tired and I don’t follow them.
I am not vegan but I really would like to try This. You have so many amazing recipes. I have tried and repeated a huge amount of them already. There have been none that I didn't like.
I made it today. OMG. We could not stop eating them. Thank You, for all your great recipes. I watch both, in Turkish and English. I looooove the Scenes of Istanbul. Gurbetlik zor. Keep up the Great Job!!
Hey Cindy, it’s lovely to know that you made our recipe and everyone loved it 😍 i strongly recommend having a look at all the other recipes, we’re sure there are many to make you and your people happy 😘
Thank you for another inspiring video and recipes! I love your energy, your love for food and for me this kind of a totally new approach to cooking! I saw a bunch of your videos til now and discovered lots of new things coming from a German cuisine to then cooking more Italian stuff and I love how you make my cooking horizon much more wider! Through your videos I discovered cumin for marinade my meet and use just the juice of an onion (I normally would just use chopped onions for marinade) to tenderize it and it made SUCH a difference!!! I made a farmers stew today and with those little twits it tasted really like another level! Thank you sooo much! Thank you very much Refika! It's been 6 years that I am vegetarian and looking for different recipes. Recently came across your video, watched some videos and like the recipes. It's simple, easy, peasy and doable.
Love the English version as it gives me access to your delicious recipes! Turkish is really hard for westerners, so thanks so much for your efforts to bring your cooking to the world! Yummy!
I just have to say this is the most delicious recipe. I have made this so many times, and even love it warm, makes my mouth water! keep the awesome recipes coming! Thank you!
This is one of the forgotten recipes that you once in a while see when you are visiting a aunt or something . Great to see it and i am definitely trying it my self.
Who says you can’t teach an old dog new tricks! (I’m 75) My word! I’m mouth watering and definitely will try this and all the rest of your lentils works! By chance I stumble on this site. Oh yea! I’m in it🫶🏼👏🏼thanks so mucho. ❤
There is a similar dish we make in India, with cumin, black pepper and ginger. We use the Mung lentils traditionally for this with lots of clarified butter instead of olive oil. Lentils and rice traditionally, but the healthier version I do is with Bulgur. Adding other spices and veggies are optional and are also regional variations. Personally I enjoyed this video! Good job Refika!
Not only do your recipes make my mouth water, I love the tasting because seeing the look on your face when you really eat your food makes me want to eat it. You cook your food with love and that is to me the sign of a great chef. Thank you beautiful girl for your inspiration 💗
A day late watching this due to time management 😩( torturous for such a Refika fan) Your sincerity regarding your AI presentation was lovely and made me so relieved and happy🥰 Your presence is like tonic for the soul. Thank-you for this video- yet another fantastic recipe- full of enthusiasm, team spirit and passion for your cuisine. Keep well and can’t wait for next Saturday‼️😁💃🏼

Just the recipe I wanted. I love all your recipes and you make them so easy to do. I am so sorry if last week my comments came across as arrogant being English speaker firstly, I can assure that was not my intention. Your English is amazing I don't know how you do it, you are so fluent. Your personality is the shining star as are all your wonderful team. I love you all. ❤❤❤❤ I have had Turkish tea and really enjoyed it. I maybe old but not past trying your wonderful recipes although I can no longer have much chilli. Bye for now beautiful girl and will see you next week ❤🙂💐
3:36 and we appreciate it!! sometimes it's just easier to follow along in english. i mostly watch the other channel just to listen to turkish. :) i like a lot of other languages. anyway, just LOVE your whole demeanor and way of speaking. it's so welcoming and wholesome? but also, you are like the guru of cooking. never seen anyone else cook where i actually had the urge to buy the same equipment JUST because they are using it. but for you, apparently yes! i also love the channel because i learn about different styles of cooking AND food. you're like the lovely aunt who brings us under her wing and bestows great wisdom and knowledge for no other reason but to share. : )
Mmmmmm as usual I wish I could step in and take a taste 😋 it sounds and looks so good. I'm sure it smells and tastes amazing! Another recipe to keep up my sleeve, I'm sure I'll give it a go over the summer if not soon. It was great to have you back speaking directly to us. I so appreciate being able to understand you while still being able to hear your voice and the passion that's there for your food. I'm so glad you enjoy doing the videos in English for us too! Thank you so much. It would take me too long to learn enough Turkish to be able to watch and take in your videos this well. I do enjoy the language though and even watched a Turkish movie today (with subtitles of course) - it has a lovely sound. I made your mütebbel recipe this week and oh it was so good! I never thought an aubergine dish could be as tasty even though I do like them. Give each other a big hug from me! ❤
I’m Armenian. We do not wrap the keofte in lettuce. We dip them in a salad made of tomatoes, red or yellow onions, parsley and fresh mint diced very finely, and some lemon juice as a dressing. No olive oil. It’s sooo good! Of course, naturally, we have integrated a lot of dishes into the Turkish cuisine as we have cohabitated for centuries. Too bad I can’t eat keofte bc I can’t eat bulgur or any kind of grain. 😊
Oh heavens, I cooked this today and I must say, I am utterly amazed by it - I was very nervous, not my usual approach to cooking but it so, so, so works - I think next time, a bit pul biber and tatli biber too but I would strongly urge anyone who is a bist suspicious - just go for it, I don't think anyone would regret it! Thank you so much for this amazing video and recipe!
Dear Refika, I sow this chapter in your Turkish chanel I did not understand a singular word, but still I loved watching it. I'm so happy to fined an English version
Refika, I lived in Istanbul fifteen years, and I miss you guys! Your personality is adorable, and I will make some mercimek koftesi! Thank you for your videos! I loved the one where you made simit . . . my most favorite bread in the world.
My grandma used to make a big pot of vosp (lentils) and then add wide noodles and broth to make soup one day, or add bulghur to make kufte another… such a wonderful memory. And lots of ideas to try, too-definitely going to be the vegan dish at our next party!
Thanks for the recipe. I used to eat something similar in a Lebanese restaurant, and I liked it with labneh and pita. I tried making up the recipe, and I used mashed potatoes in it and Harissa, but this sounds much better
Love love love Refikas kitchen! Love your crew! Love the family ambiance! Love the filmography! And the life shots of Istanbul! Love your social consciousness! Love learning more about culture & history! And of course.. I love the RECIPES! More!More!More!
thank you so much for this recipe! my favorite takeout salad comes with three beautiful kofte topped with crispy fried onions. yum!! i'm excited to try making them myself.
Just finished making these and they are delicious! I found the really fine bulgur at my supermarket. I already had some and it was much coarser and I can see why the fine version would be better. These taste surprisingly "meaty" and I think any meat lover would enjoy them. I was going to make a double batch, but didn't have enough ingredients and I'm glad now that I didn't...this makes a LOT. I am going to try freezing some of them to see how that works. I think it would be wonderful to have some on hand when I don't feel like cooking. Thanks so much for this, Refika!
ah, thank you! This is my Turkish husband's favorite dish (ok besides barbunya) :) and mine never turn out the way we had them when we lived in Turkey. Now I know why!! thanks for sharing. I am making them this weekend!
I started to watching your program during Covid and have tried so many of your dishes. Thank you for bringing these wonderful flavours into our lives. So tonight for us it's Koftes. 🇦🇺
as a carnivore, I can attest to these tasting amazing and very morish and filling. Putting in the air fryer is a new idea I will definitely give that a go.
Refika you are a genius!!! That is one of the most beautiful things I've ever seen. That is going into circulation in my take away lunches from now on. Thank you and ten thousand hugs 🫂
If I need to be encouraged to feel happy ........I just watch your cooking videos and immediately I am on Top of the world! You have such a wonderful personality and the food you cook looks absolutely Delicious! ❤ From Johannesburg South Africa .
Thank you so much for making this! I am always excited to learn from your flavours and techniques but usually have to make adaptations. I am looking forward to have a full recipe to try!
Hey lovely, Getting creative while cooking is how you master your skills in the kitchen.♥️👌🏻We share mathematics behind the recipe, you are welcome to adapt it for yourself… Don’t forget to tell us how it turns out when you try 😍 enjoy!
I made these yesterday and they are delicious!! We are having them tonight for dinner. I'll probably freeze some as there are only 2 of us. If i can stop eating them.

Wow.
I imagined now plating these lentil balls in quartered bell pepper boats. All colors, red, green, yellow. Real party for both taste buds and eyes.
Can you get good results even if you do it with an ice cream spoon-scoop? Worths trying i assume.
Love that idea
Finally a DELICIOUS lentil recipe that is not curry. I just made a half portion. I may eat the whole bowl. ❤❤❤
Flattering…. Enjoy honey ♥️
Also try Turkish lentil soup and Turkish lentil dish with ground beef or you can replace beef with bacon

YOU MADE OUR DAY HONEY! 🥹 we love you ♥️
I’m Armenian.
I completely love your vegan recipes

Thanks!
Thank you so much 😘
I m so happy I found you
I love Turkish food ( my grandmother from turkey) my cook so similar to Turkish but I want a new recipes 🥰
Some great tips on what to do with lentils, thank you.
Thank you for sharing this delicious recipe! I made it 2 weeks in a row. It's even better with some pomegranate molasses 😊
Did it work to freeze?
Yes, it did. The texture of mine changed a bit, but the flavor was the same. @@bulent2435
ah, thank you! This is my Turkish husband's favorite dish (ok besides barbunya) :) and mine never turn out the way we had them when we lived in Turkey. Now I know why!! thanks for sharing. I am making them this weekend!

as a carnivore, I can attest to these tasting amazing and very morish and filling. Putting in the air fryer is a new idea I will definitely give that a go.

Wow, I don't know what I love more, the great recipe, the way you present this video or the fantastic house with a spectacular view.
I made these yesterday and they are delicious!! We are having them tonight for dinner. I'll probably freeze some as there are only 2 of us. If i can stop eating them.
