  • Fancy a bite from a tender and spicy meatball that' actually does not contain meat? Then this popular Turkish recipe made with red lentils and bulgur is perfect for you, especially if you're a vegan or vegetarian.
    In Turkey, this delicious fingerfood is called mercimek köftesi and they are usually served as cold appetizers as a finger food at social gatherings. They are great for parties, very easy to make, quite cheap to prepare and loved by everyone.

    Ingredients:
    • 1 cup red lentils
    • 1.5 cup bulgur (fine or medium)
    • 1 onion
    • 5 green onions
    • 1 bunch of parsley (50 g)
    • 5 tbsp olive oil
    • 1 tbsp chili paste
    • 1 tbsp tomato paste
    • 1 tsp cumin
    • 1 tsp black pepper
    • 1 tsp chili flakes
    • 2 tsp salt
    • ½ lemon (juice)
    • 2 cups of water
    • Lettuce, pomegranate molasses and lemon slices to serve

    I made this Kofta today as a trial run for a brunch next week. I have never tasted them before but all the ingredients sounded tempting. I ended up making my own pepper paste and finally found some pomgranate molasses to drizzle. These are the perfect food to transport and serve at room temp. The crunch of the romaine is a must! The taste is amazing and I wouldn't change one thing about your brilliant recipe. Your video and technique are awesome. I'm looking through all your videos now, I'm hooked!       I used a 16 OZ jar of whole roasted red peppers. These need to be well drained and blotted dry with towels. I dry pan roasted 4 Jalapeno peppers and once cooled peeled and seeded them. I used a blender to make it into a paste. I added some lemon, salt, black pepper, and several pinches of chili flakes. I kept tasting as I went to make the adjustments. Besides being mixed into the Kofta, I served it on the side and everyone loved it.@@malabhojwani9156

    The best and most authentic. I used Aleppo pepper instead of chili flakes and I think I add too much but still delicious and healthy. Love this recipe.

      Aleppo peppets are the best substitute for pul biber. There are different sorts of them both, ranging from mild to very hot.

    Beautiful video and great recipe. I almost skipped it, thinking deep-frying would be involved, but no, so simple. I love that you keep the water after rinsing the lentils! Not down the sink, but to the garden! Makes me happy...

    I am so proud to see your recipes. I am a 3rd generation Denmark-born Turkish offspring of an immigrant. We’ve had our share of struggle settling in this society which is rather up tight and closed, but we’ve always had our food.     As always, an awesome recipe and great video work!! I like the use of the lettuce leaves for a bit of crunch as well as a great vessel to hold the koftas. A squeeze of lemon to finish was perfect!

    I appreciate the recipe. Looks great and I will try it. Always looking for hiking foods 😋, and this seems perfect. I don't know about other viewers but, as a fairly experienced cook, I prefer videos that are more to the point- no need to see veg prep, as we know how to do that. Just the recipe coming together. Speeds up the browsing experience. Just my opinion. 😊

    It looks surprisingly easy to make, but it involves a lot of ingredients, doesn't it? I was expecting the finished product to have a hard exterior, I didn't realize that the were going to be soft. Of course they look totally delicious and I love lentil based foods.

    That is split peas the orange color we have green and yellow! Lentils are whole peas gray and green and taste totally different 🤷🏼‍♀️😊and this recipe as wonderful as it is got lots carb and I personally can’t eat it ( diabetic ) 🥲

      No, bulgur will just soak up the liquid in the cooked lentils.

    Looks delicious! Can I substitute bulgar with something else? Maybe cous cous? I know it's not the same but it's not easy to find bulgar in Italy. Any suggestions?

      Sure, just to make sure it has the right consistency after cooking and mixing it with the rest of the ingredients ;)
      Alternatively you can just eat it as a salad without making balls!

    Hi! Cant i put them for a little bit in oven? With what non vegan dish do you suggest them, because they are too vegan for me 🤭😅

      Although not common, you can heat them in the oven, maybe a bit more olive oil will help them to avoid drying. It's usually served as a side dish and can be enjoyed with everything.
