So interesting! In Mexico you can find a dumpling with the exact shape of the fellah kofte, made with corn meal. In the Oaxaca region they are called chochoyotes/chochoyones. The cooking technique is pretty much the same (added to broth/sauce/stew), just a completely different flavor profile.

Correction: try to avoid rolling boil. Some people add fat to the basic recipe, it’s tricky. A little bit of cheese is a good binder - depends on whether you want to keep it vegan.
I just finished making this, and it’s amaaaaazing and so flavorful and bright! I didn’t have the fine yellow bulgur, but I had some medium coarse brown bulgur, so I blended it smaller in my food processor. Used fresh cilantro because I didn’t have parsley at home. And I added some delicious Turkish Aleppo pepper flakes for a little more heat. And it still came together beautifully ✨💖🥰. You have to make this recipe 🌸!

Looks delicious. Central Americans make the little dumplings that look exactly like the ones you made but from corn masa and cheese which are then fried. And are then added to a vegetable soup of carrots and potato’s. It’s called capirotada soup. Very delicious, too. 🌹

Yes! I just made these delicious vegan balls, and they turned out perfect! I watched this video at least 4 times and I nailed it! I had a hard time finding pepper paste, so improvised a little with tomato paste and chili paste(yikes!) but it was so tasty! I put it on top of a little plain yogurt, and it was perfect. I will definitely do this again. Thank you!
I love those bulgur köfte in many variations I experimented a lot with it. I came up with a variation that I call "Foelafel", I tried to simply deep fry some of those köfte balls and was surprised how good and crisp they became and because I'm lazy I used my Falafel forming tool to make little pucks it's way more practical and I use those like Falafel as fingerfood snack with any dip and/or salad you want or in a wrap.

In my region we simply call this "bulgur köftesi" or "sarımsaklı bulgur köftesi" (sarımsaklı meaning "with garlic/garlicky") and trust me guys, it is much more delicious than you can imagine 😋

Mmmm I love those. I know it's not healthy but I sometimes quickly saute the köfte after boiling like you can do with gnocchi. I like the little bit of crispness. This is one of the staples to serve when neighbors family members visit each other during the day. This is soooooo good, and can be done with dried red peppers if you don't have red pepper paste (although the pepper paste really transforms the recipe)

I am vegan too but modify the recipe into vegan. Depends what part of country you live it easy or hard to find vegan substitute ingredients.

You could replace the pepper paste with finely chopped (red) bell peppers

Make sure the bulgur isn't course or it won't work or not as well.
When you buy bulgur, check it shouldn't be for pilaf. It should have similar texture with polenta.
