Had this for lunch yesterday, (made a pretty good job of filleting the trout myself thanks to all the lovely people of Food Tube sharing their knowledge) quite enjoyed preparing and chopping all the ingredients, enjoyed it even more eating it, tasted fantastic, liked it so much i replaced the fish with pasta and had it again today.

400 degree F , russet potatoes cut appx. 1/3 inch slices, the thicker slice longer to cook. Oven appx. 10 minutes, take out poke a few potatoes with a fork, looking for little to no resistance. Fish on top of cooked potatoes, 3 to 5 minutes check with a digital thermometer, looking for 145 degree F on the internal temp of fish, insert thermometer in thickest part of the fish filet, place back in oven if 145 temp not reached, check again in 1 to 2 minutes minutes. Like potatoes, thicker the filet, a little longer to cook. Breadcrumbs on, 1 to 2 minutes or until desired color/crunchiness. Invest in a digital thermometer cost about $10.00 u.s., very handy.
Gennaro..looks wonderful! I plan on making it this evening. I have tried to capture most of the ingredients, but not sure on two items. Are you using fennel bulb? Also, what did you add right before the red onion? It sounds like you are saying gurgens and I am not sure what that is. Thank you!
