    Hello Gennaro!!! You are a legend!! Been watching you for more than 10 years via Jamie's shows. Love the way you cook, the way you love the food itself. You give us the Italian food spirit. I am from Greece, been in Italy when I was kid, but now that I studied cuisine chef, I want to go again in a food trip all over Italy!!     Big thank you dear Gennaro Contaldo for sharing your knowledge. I have tried this recipe two times. First I cooked the original dish, it was so delicious. At second time I used cornbreadcrumbs which is a good friend of fish. The final flavor was more intensive and also satisfying.

    Trout is one of my favorite sorts of fish. My grandfather used to make the best smoked trout anywhere this side of heaven... Even though this is a different dish, I will think of him when I make it. Thank you for such a delicious looking recipe, Gennaro!

    Had this for lunch yesterday, (made a pretty good job of filleting the trout myself thanks to all the lovely people of Food Tube sharing their knowledge) quite enjoyed preparing and chopping all the ingredients, enjoyed it even more eating it, tasted fantastic, liked it so much i replaced the fish with pasta and had it again today.

    Divine trout dish Genaro! We have a wood fire oven at home so I will attempt to make this on the weekend. I have barramundi fillet & I am sure it will be fine if I cut it a little thinner. Thank you dear :)

    How hot should the oven be when you put the fish in ontop of the potatoes, and for how long?

      400 degree F , russet potatoes cut appx. 1/3 inch slices, the thicker slice longer to cook. Oven appx. 10 minutes, take out poke a few potatoes with a fork, looking for little to no resistance. Fish on top of cooked potatoes, 3 to 5 minutes check with a digital thermometer, looking for 145 degree F on the internal temp of fish, insert thermometer in thickest part of the fish filet, place back in oven if 145 temp not reached, check again in 1 to 2 minutes minutes. Like potatoes, thicker the filet, a little longer to cook. Breadcrumbs on, 1 to 2 minutes or until desired color/crunchiness. Invest in a digital thermometer cost about $10.00 u.s., very handy.

    Gennaro..looks wonderful! I plan on making it this evening. I have tried to capture most of the ingredients, but not sure on two items. Are you using fennel bulb? Also, what did you add right before the red onion? It sounds like you are saying gurgens and I am not sure what that is. Thank you!

      Yes! The oven is very hot and fish is very quick in cooking.
