If that's Santol, you can actually eat the rind. Peel it, cut it into small bits and add a bit of salt. The rind of unripe fruit (more sour) is also cooked with coconut milk. Grind the rind - not to the point of it being a paste but just a bit coarse then cook it with coconut milk and tiny shrimps.
Pete, you should try the Nanche again, you had an unripe one, you have to wait until they are little soft and other thing is that they come in different flavors, so only eating one doesn't give you the full experience of knowing how nanche taste, there are also some varieties, some are more sour some more sweet, there are also red, yellow and green varieties. Red is the best one...
Thinking about my birthplace Philippines while watching your videos. We have all this kind of fruits in our yard backhome bananas, coconut, jackfruit, santol, different varieties of mangoes etc. Love it

Wow that first fruit you eat was normally in Bali indonesia the tree are so high and we can only eat them when is fall from the tree..taste little bit sour and sweet. Really tropical fruits today wow amazing harvest

This camera takes me some amazing places! I believe they have two seasons on the Caribbean side. I’m not quite sure but if remember correctly spring and late summer. They only have two seasons in CR, rainy and dry.
That marang is a kind of variety that less on flesh..it's not totally pollinated is the reason but it's a variety. We plenty of more than 20 varieties of marang in the Philippines with different tastes and sizes.

Don't think I've ever watch a video where I salivated more....yum ..best tasting Mangoes in Costa Rica are in the NW zone of the Nicoya (Blue Zone) Peninsula bordering Guanacaste Provence. Massive trees humongous purple mangoes the size of a cantaloupe.
The first fruit, santol, can be cooked in coconut milk. Just scrape the soft flesh and google the recipe because I can't remember the process. But yeah the flesh can be eaten, too.
Actually jackfruits reach to weight even to 60 kilos and 2 meters in size depending on it's variety. In the Philippines I preferred to plant more on bigger sizes and sweetest kind because jackfruit differ from different tastes and juices. I love big fruits of same family like cempedak, lumyan jackfruit,chempejack,durians,marangs,tipulo,pedalai,entawaks and keledang aside from jackfruits...they are all so big fruits and yummy very sweet of different taste
"Not an organic nursery" explains a lot and is substantial here. Suggestion: add names of plants and type, as in the different mangoes. You're missing the opportunity to educate, as in most of your fantastic work.
I am kind of cringing at how they're using the machete to cut and serve the fruit, it looks unhygienic given how there's possibly rust and metal coating residues on the blade surface.
