      Canned tomatoes and beans are not mexican inspired. I love chef ramsay but this is not one of the dishes I would associate with him.

      I noticed that he very rarely prepares Mexican dishes.. He does all other types ! But really stays away from it for the most part. I wonder why? Heck he does asian dishes.. french.. (obviously) Indian.. hmm.. ?

      @@skateurself I didn't notice that, but if it's true, my guess is that there might be a lot of factors. He learned being a cook in France, the UK has a pretty "big" indian community, asian dishes are trendy, so there's that. This I have no idea about, but geography could be a part of the explanation, in the sens that spanish food is our equivalent to american's mexican food while there's no "equivalent" to asian cuisine, and some ingredients can be a pain in the ass to find (in both cases).
      Plus europeans still have to embrace spicy food, lots of people are just intimidated by the idea, or straight up can't handle it.

    As a Mexican I appreciate the word "inspired" mexican cuisine. I've seen so many "Tex-mex" dishes passed out as true mexican food that it truly makes me a little uncomfortable to think people think that's true mexican food.

      @ICharlyl I agree, but honestly nobody that is buying TexMex actually thinks it is authentic. It tastes good, so I don't care. It is closest to the "Mexican" category, so I don't think it is crazy to call it by a revised name (tex mex).

    Thank you for reuploading this video! I was pissed when you got a bunch of overly offended people saying that this wasn’t Mexican. I just appreciate Gordon putting his twist and bringing more attention to Mexican dishes.

      As someone born, raised and living in Mexico, this isn't a Mexican dish. However, this has so many mexican elements, it might as well be. Honestly, best "inspired by a culture" dish I've seen.

    Anthony Bourdain (God rest his soul) was in love with mexican food, for a good reason. Mexican cuisine is huge: Varies from state to state, and sometimes, even from town to town. Chef Ramsay, in my opinion, is more of the international type of cooks, and his take on mexican food is not as pure as it may seem.

      The title did say inspired rather than actual Mexican food. Good chiefs always want to cook new dishes, so that means often looking for outside influence. Ramsay is a French trained chief, so he uses as his base for cooking.

    I'm hearing that people got mad over your take on Mexican dishes and that's just crazy. I'm no chef but I've seen a lot of Gordan's videos when he travels or makes ethnic food and you immediately can tell that he really cares about the culture and the roots of the food he's making. Yeah these are inspired dishes and not like the exact thing you'd get traditionally, but there's nothing wrong with taking inspiration and putting you're own culture and twist into it, like he did here adding his own cheese instead of a Mexican one like queso fresco or cotija, or his take on tortilla chips. I wish my mom made tortilla chips like he did here ha. These are good recipes and I'm sure if I served these to my parents who were born and raised in Jalisco, they'd probably enjoy it all the same as if they were done any other way. I'm never adding olive oil to my pico though, he can have that one!

      Lots of chefs and cooks get hung up on orthodoxy or authenticity. I for one say they're just silly. Good food has no borders and crossing the streams is fine if it ends up tasty.
      But im with you about the olive oil in pico.

      I'm mexican and all of my family members always use oil with pico de gallo and salads. Theres a lot of cooking recipes of mexican food that use olive oil, it makes the food softer and light. It's true that we use pepper basically in all of our food. And some recipes need different kinds of peppers so in fact sometimes it is necessary to use olive oil to avoid acid indigestion.

      @@SuperDrPancho perdón si sone brusco, no era mi intención. Solo aclaro que la gran mayoría de gente que conozco e incluida mi familia usamos aceite de Oliva. Efectivamente nuestra gastronomía es muy extensa y se presta a hacer infinidad de combinaciones y el aceite aunque en muchos de los casos no lo lleva ayuda a qué muchos de los platillos no caigan pesado.

I was raised on a very abusive home with an insane father and exhausted mother. I have 3 siblings and we currently don't live with my father. I am safe.
    I am a long time fan and am always inspired by your beautiful dishes and ideas.
    Your shows are entertaining and inspiring. I am graduating next year and my 16th birthday just happed on the 13th. I've always looked to you as a role model and whenever things got down, I think "hey Gordon Ramsey wouldn't quit, neither should I." I completely agree with your methods of leadership.     Great recipes! My only tip is that mexicans don't use coriander, we use cilantro. :) We're not heavy on cumin either. Chile's are a must!

    I love Gordon so much. He got criticized and laughed at in his other Mexican dish videos so much that he’s being so careful. It makes me so sad to see him being so careful and delicate with his words instead of being his usual well spoken self. I’m Mexican btw

    A lot of people are confusing real (authentic) Mexican food with Mexican-inspired. The title of the video says “inspired” which is 100% true. Stop criticizing and actually read the title.

      I’m moving to Texas and was worried that it won’t be as good I visited recently and it’s not as good but close and Mexico is also just. A short drive lol.

    A helpful tip would be to place a stack of corn tortillas wrapped in a damp paper towel then microwave for 30 seconds, this will steam the corn tortillas making them more flexible to fit around the baking dish.
    In all the Mexican cooking videos I've seen they always steam the tortillas because store bought corn tortillas can be a little dry.

    Im Mexican and this is huevos a la mexicana and a homemade soup, just with a little twist on it very interesting how he does every step because they're the same ingredients but with his own harvest.

    Few pointers before you read the rest of my comment: I'm not a chef nor aspiring to be one, I´m aware this is a "Mexican Inspired" recipe, I'm just a 40+ yo Mexican who likes and has tasted most of my country's amazing culinary culture. I love Gordon Ramsay, big fan since Hell's Kitchen series, this has been written with great respect and with the intention to help, I'm sure Ramsay is used to this kind of scrutiny.
    1:27 We don't use olive oil (too expensive for everyday cooking), best flavor with lard, if not availabe, vegetable oil. (Not sure if that's olive oil but I can guess it is)
    1:40 We don´t mix pepper with sugar, unless you're making candies, there are some exceptions like when making Mole, but we use chocolate there. Fun fact, one of the ingredients of chipotle is "piloncillo" which is like brown sugar.
    1:52 We don't use canned tomatoes unless it's purée, we cut them fresh.
    2:10 I wouldn't call that a Mexican dish, it's more like a Tex-Mex one (American) called (suprisingly) Chili.
    3:08 Almost perfect! Unfortunately, you lost me on the olive oil (check first objection above).
    3:17 Again with the olive oil! I suppose in the UK it's cheap or it grows on trees! (I wrote that intentionally to add irony) and then paprika! It's a great Japanese movie, but we don't use that in México, well, not normal people.
    3:35 Going to the opposite side, we don't bake tortilla chips, it's simply not practical, we buy them at the store, if we want to make them from regular tortillas we fry them.
    4:10 We use avocado, cheese and sour cream to add flavor not to "cool down" the food, nor to make them less spicy, I think you meant "freshen up" the dish
    4:23 Well done there! But you should've done that with all the ingredients you replaced from the beginning, like, I don't know maybe something like: "I used olive oil because here in the UK it grows in trees and it's cheaper than lard" or something of the sort.

    There is a belief that cheese is used a lot in Mexico, but this is not the case, many recipes use corn tortilla but not toasted, only hot so that it is soft, in the north of the country the flour tortilla is widely consumed.👍😊😋
