As a chef I can relate to cooking for special occasions, like being invited over by my mum for Christmas lunch, all she needed to do was ask " how would you cook this..?"....15 minutes after I arrive, everyone is out on the deck with drinks and snacks, yours truly in the kitchen slaving away on my day off.... lol

Gordon,you should NEVER put olive oil in the water that cooks pasta,because it makes the pasta slippery,and the sauce won't stick to the pasta. The best thing is to cook your pasta in plain water,so the starch on the pasta clings to the sauce. And that's coming from an Italian.

If you are trying the hollandaise do not leave it resting over a water bath without whisking it every minute otherwise it will start to split I learned that the hard way, however if it does split a few drops of hot water and a bit more melted butter with fix it :)
