    Thank you this was a perfeect video. Never made a fruit cake let alone a Christmas cake before. I wanted to make a traditional Christmas cake that I remember from my childhood waaaay back in the 70's. Cake turned out perfectly, marzipan done, so it was a matter of going through posts and recipes for traditinal royal icing with just hint of lemony flavour. The amount of codswallop out there along with 'this is the right way' is ridiculous and then I found your video. You even decoratad the cake the way I intened to do bar peaks around the sides and a few silver balls. Thank you and have a Merry Christmas.

    Nice looking sugar shocker Steve! The Christmas cake looked great before you added marzipan and Royal Icing. After it looked elegant. I’d be happy with the plain cake! Take care.

      Cheers Deb. In the old days, marzipan was used to seal a cake and keep it fresh for longer. Never known a cake last long in my household LOL

    Brilliant demo! It’s gonna be my first ever attempt to make a Christmas cake this year as I love royal icing on it and they are really hard to find now unless you want to pay £80-90 😳 you explained it perfectly thanks 😊

    I remember my mother making a Christmas cake with hard peaks just like that, I think it was back in the 70s, loved it, then after that the 'in thing' became that horrible sickly sweet soft stuff. Yours looks lovely.
    Not keen on almonds, do you think cashews would make a good substitute in the marzipan??🤔🤔😁🌱☀️

      Not sure about a "marzipan" made with other nuts. If it worked I think the taste may be too strong - a bit like cashew butter. If the cake is not going to be stored for too long then a layer of buttercream works under the royal icing. Another way is to do 2 layers of royal icing. I've done this so I know it works. Apply the first layer just thick enough to fill any dimples and give a smooth coating. Let it dry for a day then ice as normal. Okay, you have to make the icing twice but hey - no almonds!

    I’ve only got a small handheld electric whisker. It says it will overheat after three minutes! Any advice?

      That is strange! If it does overheat it will reset once it cools down. Have you tried using it for longer?
      It only takes about 5 minutes to whisk by hand anyway - I was just lazy!
      Maybe start off with the electric whisker, let it do the hardest part (getting air into the eggs) and then switch to hand whisking if it does overheat.

      @@DigwellGreenfingers thank you - I’ve been whisking in three minute intervals, and waiting 20 minutes in between. It’s still runny, so I’ve added more icing sugar. Still not getting thick enough though!

      @@DigwellGreenfingers thing is, I never bake! Literally once a year, I will attempt a Christmas cake🤣 it’s not really worth buying a mixer for that!

      Absolutely!
      Fanny is a feminine given name. Its origins include diminutives of the French name Frances meaning "free one", and of the name "Estefanía", a Spanish version of Stephanie, meaning "crown".
      Also, fanny is Naval slang for a cooking pot, a sort of big deep-sided rectangular aluminium thing that could hold a few gallons of baked beans etc.
