Royal icing recipe for the purists amongst you:
3 Egg whites.
600g of Pure icing sugar sieved well (not icing mixture).
1 and a 1/2 Teaspoons of Glycerine.(optional).
1 Tablespoon spoon of lemon juice.
Whisk the egg whites adding the icing sugar as you whisk. Beat well until the icing sugar makes soft peaks (like whipped cream). Then add the glycerine (if using) and the lemon juice.
Once made, follow how this lovely lady iced her cake, or use a flat ruler (or similar) for a flat top and buy some cake ornaments and a cake ribbon to make it special for Christmas or Birthdays.
Using the glycerine will make a slightly softer icing (not tooth braking).

Never seen Royal icing made with just sugar and water...when I was training in a bakery we used egg white icing sugar and glycerine
You can buy "royal icing sugar" it has the dried egg white in so you just add the water 😀
I've always used egg whites, and a tip from a master cake maker, I drop of blue colouring into the mix. This will keep the icing, snowy white! 👍

What quantity of icing sugar did she use? She says how much water to add, but not how much icing sugar she was adding it to...

how much icing sugar is used ?
I’ve never used royal icing before but last year I watched the Waitrose video on how to cover a Christmas cake with marzipan and fondant icing and it turned out well so I think this year I’ll try royal icing. But can someone tell me how much royal icing I would need to cover a cake of that size? I have a box of royal icing sugar but I don’t want to use the wrong amount and either run out midway through icing or have loads left over which would get thrown away

Excellent tuition! What exactly is the purpose of the layer of warm jam between cake and marzipan? To stop marzipan a here to the cake? So a “lubricant “?
Hi Tim, glad you like the tuition! Adding the jam helps to adhere the marzipan to the cake. ^Alan
Jam is the glue to hold the marzipan in place.

How much icing sugar to how much water?
How many more people are going to say where are the egg whites and lemon juice? Word to the wise, just read someone else's comment before posting your own. It is a pre-made mixture containing.........guess what?....... The egg whites and lemon. You just add some water :) :)

It should be made clear from the start that this is not a royal icing from scratch but is a pre made Royal icing.

what is marzipan?
It's basically an almond flavour covering for a cake,
that tends to go underneath icing,mainly on
celebration cakes,though it can be used on small
cakes that are eaten daily.

Here's an easy recipe from

Ingredients:
1 lb. Almond paste, cut into small bits
3 c Powdered Sugar, sifted
2 Lg. Egg whites, or use
Pasteurized whites from the store
1/4 t Almond extract
Either in a stand mixer or a
Food processor, combine the almond paste, egg whites and powdered sugar and beat until mixture has consistency of fine crumbs. Add the flavoring; beat in. Mixture should have a smooth texture. Wrap tightly in plastic wrap, keep chilled.
Marzipan can be eaten as a candy. Usually it's tinted in pale colors or bright red and green to shape into Holly leaves and berries. I love it.
It's more than a almond flavored covering. Go to

cake in a container at Christmas +birthdays,just
to keep it fresher..( Though a fruit cake lasts ages!).

She is not using “Icing Sugar” she is using the ready mix “Royal Icing Sugar” ;)
That's fondant icing! Royal icing is made with egg white, and I use lemon juice not water.

Why marzipan & not almond paste? Why bother with the boiling & straining of the apricot jam, that’s just a waste of time.
Anyone watching this please do not make royal icing this way. This is glacé icing you would put on cup cakes. royal icing is made with egg white, a little lemon juice and a few drops of glycerine

She used royal icing sugar that is pre-prepared with egg white and just needs water added. Silver Spoon royal icing sugar is available in the supermarkets.

How is this royal icing? No egg whites? No lemon juice? It would taste awful. Not impressed with this at all.
"Royal Icing Sugar", that substance contains dried egg white powder....
Have you not seen the package in the super market. It's pre-made and it tastes no different to the old recipe.
