      No, egg whites do not have to be cooked in marzipan. Traditional marzipan is made by combining finely ground almonds, sugar, and raw egg whites to bind the ingredients together. The egg white helps to create a smooth and pliable texture. Because of the sugar's preservative qualities, the risk of bacterial growth is minimized, making the use of raw egg whites generally safe in marzipan.
      However, suppose you have concerns about using raw egg whites due to potential health risks. In that case, you can use pasteurized egg whites or substitute with other ingredients such as corn syrup, glucose syrup, or water to achieve a similar consistency and binding effect without cooking.     Is this anything like the Odense marzipan? The dough is hard to come by where I live so if I can make it that would be preferred.

    The hard part is finding almond flour and the concentrate. I travelled to Robinsons (Tops) to buy some lemons. I found grated almonds but no flour or concentrate. This was in Lopburi.

      Just peel almonds (in hot water) and then grind them up in a food processor.

    I've never seen that type of plastic wrap dispenser. After cutting does the remaining plastic ever fall back inside and stick to the roll? Thanks for showing me how simple Marzipan is

    Great and a first for me. Can I use Almond powder rather than flour. Think if I grind the Almond Powder that is Almond flour, am I correct? Thanks

      What quantities and proportions did you use ? You can calculate from the size of bowl you used and the spoons. Google will not have the same recipe as you.

    Ummmmm - no what is denaturing the egg whites? That sounds like salmonella waiting to happen.
