You're doing a great job, Sir 👏. Thank you. I just tried your Scottish shortbread recipe and got an amazing result 👌. Though it looks like the video won't even get up to a hundred view, but am glad and thought to say thanks after watching this 😊

No, egg whites do not have to be cooked in marzipan. Traditional marzipan is made by combining finely ground almonds, sugar, and raw egg whites to bind the ingredients together. The egg white helps to create a smooth and pliable texture. Because of the sugar's preservative qualities, the risk of bacterial growth is minimized, making the use of raw egg whites generally safe in marzipan. However, suppose you have concerns about using raw egg whites due to potential health risks. In that case, you can use pasteurized egg whites or substitute with other ingredients such as corn syrup, glucose syrup, or water to achieve a similar consistency and binding effect without cooking. Thank you. Best, Rik
The hard part is finding almond flour and the concentrate. I travelled to Robinsons (Tops) to buy some lemons. I found grated almonds but no flour or concentrate. This was in Lopburi.
I've never seen that type of plastic wrap dispenser. After cutting does the remaining plastic ever fall back inside and stick to the roll? Thanks for showing me how simple Marzipan is
@@BackyardChef Great have the Ground Almond Powder so the better-alf loves marzipan so I can make this and place on the Irish Whisky Cake I've made. Thanks Rik. 🙂
@BackyardChef What quantities and proportions did you use ? You can calculate from the size of bowl you used and the spoons. Google will not have the same recipe as you.

Thank you Rik...will surely try this recipe
Is this anything like the Odense marzipan? The dough is hard to come by where I live so if I can make it that would be preferred.
This marzipan is soft as you can see by the Christmas cake vid - delicious! Best, Rik
I'm here for the pinch of salt
Thank you. Best, Rik
Thanks Rik, will you or have you done an icing video?
That is coming up - I will ice the cake I made. Best, Rik

Makro - baking section
Just peel almonds (in hot water) and then grind them up in a food processor.
Just what I do as well !😊😊@@change691

Hi there, no it just stays on the top. ready to pull again. Thank you. Best, Rik
Great and a first for me. Can I use Almond powder rather than flour. Think if I grind the Almond Powder that is Almond flour, am I correct? Thanks
I've changed the wording to Ground Almond - its basically ground almonds. Sorry for the confusion. Best, Rik

Ummmmm - no what is denaturing the egg whites? That sounds like salmonella waiting to happen.
