    I love fried corn made with fatback grease, biscuits buttered with a big slice of tomato too. My daddy use to make them for breakfast when I was a child. I absolutely love you and your channel! My favorite kind of cooking.

    Tammy, on July 4th, I made okra for the very first time! My 68 year old sister-in-law, me, and my 93 year old mom had never tasted okra and we were curious. BOY did we love it!! I'm 73 and never tasted it before and we did it just like you do.

      Have you ever fried okra and added fresh cut off corn on the cob? My Dad use to cut off an ear or two in with the fried okra. He used corn meal to coat the okra. Of course we had fresh tomatoes also. Nothing better than a vegetable plate for lunch or supper!

    My Daddy showed me how to make creamed corn by slicing off just the tips then turning the knife over and scraping out the flesh, then add a lump of bacon grease add salt and pepper and it’s the best. My kids just love it and we are probably just about the only people in Australia that eat creamed corn that doesn’t come out of a can. My Daddy was from Kentucky. Your supper looks delicious 😋

      Same here. My daddy cut the corn just like yours. Sometimes bacon grease was added, if my mother had enough. She always put it in a coffee can. She put it in about everything and started putting butter in the fried corn to save the grease for other more important uses.

      I don't understand it, I love corn but don't like creamed corn at all! 😜I had okra as a kid and did not like it, felt it was slimy and haven't eaten it since. But recently have thought about trying it again because tastes do change!

      @@pattyclark1296 I've had canned creamed corn, and it's nothing like my mothers "fried corn". You have to use fresh, small grained, sweet corn. The corn at the grocery store is what we called field or dent corn. It was used after it was dried and made into corn meal; hominy;, chicken, hog, and cow feed. When we made fried corn, no milk was ever added. The small, tender, sweet kernels were sliced off halfway through the kernel. The remaining half-kernels we're scraped off downward with a knife blade tilted at an angle. Water, bacon grease, and butter were added. The corn was then simmered until done and more water was added only to prevent sticking to the cast iron skillet. The corn thickened as water evaporated, we had to stir more frequently towards the end. No sugar was added unless the corn had lost its natural sweetness. Old varieties of sweet corn would loose sweetness if not cooked shortly after picking. As far as okra goes, it will be slimy if not cooked with tomatoes; or sliced and coated with cornmeal or a batter and fried. We always fried it in bacon grease or Chrisco. Very little oil was used. Ours was basically dry fried in a few tablespoons of melted shortening or bacon grease. I hope this helps. I've never seen anyone fix corn the way my mother did. Both my parents were part Indian and I'm sure that's how they were taught. All ways of cooking were handed down the generations. My great grandmother's were from the Blackfoot and Cherokee Nations.

    I’ve never cooked green tomatoes with my okra, but I always add chopped up potatoes, cause that’s what my Mom did, my guess was that she added the potatoes to stretch the okra, but have no idea if that’s actually the reason or not. My favorite meal would be thick bone in pork chop, mashed potatoes, gravy, fried okra. Tomatoes would be great too. My daughter in law went to the farmers market a week ago and brought me tomatoes, squash, onion, potatoes, okra, and a watermelon. I don’t add flour to my okra, I use cornmeal. I’m in N.Texas, it’s only going to get up to about 105 today, thinking about getting my winter clothes back out! 😂

    Oh Lordy! This brings back so many memories of my growing up. Can’t count the times my dear momma made a veggie supper an instead of biscuits she made fried hocakes! We’d have green beans, fried okra, sliced tomatoes/cucumbers/onions, fried potatoes and hocakes! Yummy

      That’s me too except usually butter beans and corn bread was in the rotation. Yum to all those good vegetables. Also reminds me of picking tomatoes and putting canning them for winter.

    My mom used to say they had biscuits with tomatoes on when they got home from school. It was the dirty 30s and so things were scare for their family. My gramma made biscuits for breakfast with left overs for the kids after school. Love this vid! Thanks for sharing. God's blessings.......

    Looks yummy! Whenever I’ve made fried okra from scratch, it ends up in a great big blob. So I usually use frozen. My best friend when I was a little girl, her family grew all sorts of veggies for the farmers markets. One year it was okra, and I helped them pick. And pick, and pick! Never thought we would be done! And all the little porkys- my fingers were so sore. But a nice memory I hadn’t thought of in years! I’m in Spring, Tx. 106, heat index of 116 🥵

    My mother used flour to bread the squash and okra from our garden and it was always delicious. I’m in Texas and our temperature today was 104 degrees. Tomorrow will be 106. We are in a severe drought right now.

      A friend of mine she is deceased now she was from Raleigh but moved to Michigan a friend told her about okra using flour and corn meal to batter okra it don't fall off as bad that's how I freeze mine the mix and when u take the okra out of freezer it taste like you just cut it out of the garden,so good

    My favorite meal would be pinto beans fried potatoes w onion crispy cornbread fried corn and a big tomato out of the garden. Love Collard Valley Cooks. Your the best!!!

    This is one of my most favorite videos because I LOVE THIS MEAL! I eat mostly meat, but I sure do love vegetables, especially these! I would only add one more thing, Fordhook Green Lima Beans! 🥰 Love this video Tammy, THANKS!
    I am a Texan in Michigan and it is 30 degrees here today. Michigan rarely gets the memo about spring arriving, then hits us with summer. Michigan is like me, it is months behind on messages.
    I tried fried okra using only self-rising flour, It was very crunchy!! Loved it! I made your Okra Deluxe because it sounded awesome! I think next time I will coat the tomato, peppers (I used poblano) and onion separately and add later because they browned way too much by the time the okra was done, but I sure love the idea of having them 🤩

    My grandma use to cut corn off the cob in slabs and fry it in butter in a cast iron skillet. It was the best corn ever. No one made Okra but I went to a friend's grandma's house for Sunday lunch and she had fried Okra, corn meal style. I was hooked. I love Okra fried, in soup and I love it pickled! My favorite is Okra pickled like dill pickles. It's hard to find here but if I go south I buy a bunch of jars.

    I’m from northern Wisconsin. It was about 80 degrees here with a few passing showers and a lovely breeze. I love watching you cook, love hearing your cute southern accent and am so happy you invite us into your kitchen. I’m going to try cooking okra like you do, it looks so delicious!       I live in south-east Wisconsin. I wish we could find okra and collard greens in this part of the country. Not even available at the Farmer's Market.

    I'm 73 and am from KY. I grew up eating home grown and home cooked food. My mother didn't know how to cook but a few things. She hated to cut up veggies bc she always cut herself. At 7 yrs old, I was given that chore. My daddy cut the corn off the cob to make fried corn. He scrapped the cobs for the "milk" from them. My mother used butter in the corn and added only salt. Okra was tossed with plain cornmeal, and fried in a small amount of Crisco or bacon grease. The "okrie" as I call it, was delicious. I never knew ppl put deep oil, or flour, or batters on okra until many years later. I still prefer the nearly dry fried okra my mother made.I never knew ppl fried green tomatoes until that movie came out. We ate homegrown vine ripe sliced tomatoes with about every meal. Our biscuits were made from plain flour, salt, baking powder, a pinch of soda, Crisco, and buttermilk. Nothing was ever measured. They were cut with my grandmothers tin snuff can. I sure miss having those little cans to cut biscuits with. We buttered our biscuits hot out of the oven. Sometimes we ate them with coffee gravy. Most times we just had homemade wild blackberry jam. I still cook a little. I have been using mostly canned or frozen veggies. I don't drive and the transit bus doesn't run on weekends, so I can't go to the farmers market held on Saturdays. I I've in an apt and have nowhere to grow veggies. I enjoy all your vids. There are so many similarities on how we cook, as well as a few differences. My grandmother took care of me a lot until I was 5. She was a fantastic cook. She started feeding me something called "hot salad" as soon as I had teeth. I don't remember what she put in it and I can't find a recipe anywhere. She was half Cherokee, so maybe it was something they made. I'll have to see if I can find a Cherokee site and ask them. Her tribe was from Georgia. Ty for all the wonderful vids, they bring back wonderful memories. 🙏

    It was 103 actual temp here in north Louisiana yesterday . Today it 84 and overcast all day long! We call that a “cold front!” My favorite all veggie meal is fresh cream corn, purple hull peas, sweet banana peppers, fried okra, fried cornbread fritters, fresh tomatoes and mama always cut up her cucumbers and added sweet Vidalia onions. She added some vinegar salt and pepper. She made these up days in advance. She chilled these in ice water so those cucumbers were so crisp and crunchy. Yummy! We were in heaven. And didn’t feel slighted the least bit bc there was no meat in this meal. We wanted it this way. Enjoy your vegetables girl. Enjoy your quiet time. Curl up with a good book and go to sleep instead of reading! Lol that’s what happens to me….I fall asleep! Until next video….. forgot to tell ya, we always put both flour and cornmeal but I am going to try it with flour only. Yours looks delicious!

    Tammy I'm in Mesquite Nevada our high today will be 110° right now we're 107°!! I have to tell you I've never eaten okra I love fresh corn on the cob but I don't like cream corn I love love sliced tomatoes open face on a slice of bread with mayo!! That is the most wonderful thing in the world LOL!! God bless!!

      Tammy, I'm in NC & temp is 80+ today! That's unusual because it's usually in the 100's In July! When i was 12 yrs old, i had my tonsils taken out & I asked my mom to make me some green beans, lol! She did & cut them up real good & they were the best thing to me & didn't hurt my throat at all! My mom was an excellent cook & canned a lot too! It came to mind just how good those snap beans were when everyone else wants ice cream after throat surgery lol! They were better than ice cream to me, at that time! I Love & blessings to u Tammy! BTW, I love everything u cooked in the video

    Also my mother's favorite, though she would add cucumbers from the garden, then field peas and snaps with a cut of fresh onion on the side. Yumm! She always used cornmeal for the okra. hmm hmmm hmmm. Now, you know I've got to try it your way, Ms. Tammy. :)
    Oh, forgot: North Carolina and the temps were mild since we have this, what, rain front? over the top of us. Been this way for 2 days now and I will never complain heh.
    No, never had okra fried in flour but you can bet I will this summer for certain heh heh.

    Oh, my goodness Tammy…!! You are absolutely the greatest…!!! I’m from Florida, not a true native, but close enough, as I lived my first 11 years (I’m 76…), in South Carolina…my mama cooked just like you do…that okra was exactly how she cooked hers…and my sister and I cook the same way…I so enjoy your show and I’m trying to watch every one of your videos…and by the way, I talk just like you…!!! And the temperature is 92 with a heat index of 102… !!!❤❤❤

    I started out just looking through videos on making homemade buttermilk biscuits. I had been very sick for a long time, and after I started improving more, I wanted and needed some practice on making them. I watched several videos before I got to yours, but once I saw yours, I was hooked!! And I didn't need to look any further!!

    My mama was born and raised in NC. My daddy's mama in Missouri. I was raised up on southern cooking and this meal you've prepared has my mouth watering! I was born and raised in CA by the way, but I was raised right! Only thing missing is some hush puppies and fried green tomatoes! 💗 And some sorghum/ butter for those biscuits!

    I was just dying for you to butter that biscuit. LOL. It all looked so scrumptious! Just wish you kept eating, I loved to listen to you chat while you enjoyed your food. It felt like family. I grew up in California, but all my folks were from Arkansas, Oklahoma, or missouri. Some started out in Georgia and all across the south, so even though I was born and bred in California, I am still a southern girl at heart. I love Southern cooking, and now that I've married and been in Australia for over twenty years, I am so homesick for everything country! I love a fried potato, beans and corn bread, sliced garden tomatoes, and sliced onion from the garden. Yummy, I never knew how to cook okra as my mom always boiled hers, and you know what happens when you do that. Hehe, I won't go there, but the result is a bit of a slippery 😜 situation. Yay, now I can add okra to my homesick southern comfort meal. My grandma used to use "clabbered milk" for her biscuits, and there's nothing quite like it. She'd get them almost done, then move them up to the top of the oven and brown the tops so the inside didn't get to dry before the tops browned. Sometimes, she'd use a little leftover bacon drippings in the biscuits. Whatever she did, they were magic. I imagine it's like a great buttermilk and lard for the fat in the biscuit recipe. I definitely am dying to make all your recipes. Home-made dumplings and chicken for the win! Thank you, gorgeous. You made my heart happy. God bless you and the family.

    Tammy with me being from Rome Georgia I live in Houston Texas now you cannot get silver Queen or sheep had corn you just cannot do it you can do the yellow white corn that's not too bad but my sister always ships me to bushels every year thank God she goes to the farmers market in Atlanta the off of 75 south and north it depends on which way you're going and that's all I get my corn and I'll get my cornmeal and flour from Rome Georgia I mean that's just you can't get it here and you think Texas you can get anything well that's not true but I'm going to watch you do this video cuz I know it's going to be delicious thank you so much.

    I grew up with Field Corn in Literally Every Direction !
    My Grandma Cooked it really Good and Canned Pickled corn with it !!!

    I am from Canada , Tammy..it is 85 degrees today, ...I have never had okra...I am 74 yrs old. Only ever had creamed corn canned as a kid. My mother made it for our dinner. I swore when I grew up I would never eat canned cream corn again. I eat corn on the cob of course. We also don't have biscuits with our meals , only special occasions and then it is Pillsburys, and I haven't had cornbread, so I guess I am missing out on a lot of things..!! I love watching southern cooking, and wish I could taste some of your dishes.!!

    We only use flour on our fried okra here in Seagraves, Texas! In fact tonight we had fresh black-eyed peas from our garden, fresh okra from the garden fried, big salad, and fried spare ribs for supper!

    This reminds me of summer at my Granny’s. My aunts, uncles and cousins (my Granny’s kids and grands) would stand in the shade shucking a ton a corn. Granny would cook creamed corn as we brought it in. At the end of the work she would feed us creamed corn, fresh sliced tomatoes, fried okra with biscuits. If she had some, we would occasionally have ham. This meal says summer to me and fond memories.

Tomatoes most wonderful. Never had fried green tomatoes either. I love all veggie dinners. No, I’m not a vegetarian . I just don’t like meat as much as I used to! I’m 72.my son brought me fresh tomatoes yesterday! Mercy, so delicious! We’re not Baptist’s , sorry…… we belong to THE CHURCH OF JESUS CHRIST IF LATTER DAY SAINTS (Mormons)!     My Granma always planted a big garden where they lived in Arkansas. She and my Mom and I would get up early, grab a couple of those little cardboard salt shakers, go down to the garden and pick tomatoes and eat them like you would eat an apple. We had to go very early before it got hot out and the tomatoes were cool from the overnight temperatures. Nothing better.

    My favorites Fried Okra , mine are flowering finally , Love love Honemade Bisquits & Tomatoes wooooo, that I could have by themselves with 2 slices of homemade bread , Dukes Mayo & Big slicer home grown .

    I remember the heat in 2011 as we were going to Kaui , hawaii and it had been 103-109 for like now over 2 months , we landed in Hawaii with temps at 86 , i felt cold. .but after a few days it was breath taking .
    Im glad i got to go 1x in my life as NOW WE WONT ever go back .....with prices so hugh...

    From Louisburg, NC. I went to the state Farmers Market yesterday and bought okra, Cherokee Purple tomatoes, German Johnson tomatoes, sweet onions, squash, red and green bell peppers, little new potatoes, a huge canteloupe, and a small watermelon. Spent $60. I did not get corn. O am looking forward to the okra!

    I am watching your show on Thursday August 11,2022. I live in a small town in West Texas called Monahans. Today is the First day I have felt relief from high temps. It was 88 degrees at about 6 o’clock with clouds and a Wonderful breeze to go with it. I am watching your videos as I sit on my bench on the front porch and getting some ideas to cook for my daughter and her husband to Welcome them home. I want to treat them real Special. I am welcoming them home some tasty 😋 meals. They Just got home from Ft. Worth where my daughter had double mastectomy. She is doing Incredibly Well and Healing Wonderfully.
    God is SOOO GOOD. WE ARE THANKFUL FOR LIFE. BOTH OF MY DAUGHTERS have been fighting cancer. They are both tested Cancer FREE,,, PRAISE THE LORD 🙌🏻🙌🏻🙌🏻🙌🏻🙌🏻
    We lost my husband 9 months this Monday. We have been through a Lot, but Know Gods Goodness. HE is EVER PRESENT. MY husband and I Loved watching your show together.     I love the corn on top of the bisciit , like gravy and biscuit. Fried okra ,fried corn and biscuit with home grown tomatoes cant be beat in the summer.

    Hi Tammy! I’m a day late but I’m in Meridian MS and it was 91 today for the high. It felt hotter. Your supper looked so good. I grew up eating that way but my mom and grandma always had cornbread. I had Sunday lunch at my Aunt’s house about 15 years ago and she only had biscuits. I didn’t think I would like it but it was so good.

    I love love my fried okra. We always used some bacon grease but not a lot of fat. They were breaded in corn meal and so crispy as we let them cook for awhile.

    I'm happy to see in the comments that I'm not the only one that uses bacon grease. I use lard too, especially for pie crust. I have to keep an eye on my grandaughters though. They were going through my refrigerator one day, and a while later I discovered my can of bacon grease was missing. Then one girl saw the package of lard and asked her Dad what it was. He replied "pig fat" it wasn' long till that disappeared too.0il just doesn't give food the same taste.(sorry Tammy) it may be healthier, but who cares if it doesn't taste as good. I have had the same kids say something I made was better than the way their Mom and her Mom make it. I laughed to myself. It's because I use real butter, not margarine.

      Some Drs are coming out now n saying we were duped when they told us plant and seed oils were better for our hearts. They're now saying we were meant to eat animal fats, not processed oils. Plus butter is better than margarine. I'm even seasoning my cast iron with lard now.
      I've always preferred butter, and hated using Crisco. Heck, McDonald's french fries were fried in tallow for years!

    6 months late watching this but thank goodness here in Texas the summer was brutal. My momma was born & raised in Okla. & always cooked okra in flour! My favorite veggie in the world! If my mom only had a small amount of okra she would add it to the fried potatoes, sometimes along with flour coated squash & a little onion! OMG I miss her cooking!

    Tammy I am from Oklahoma and it has been a hot one here I believe the temperature is 102. It's very cool inside the house. I pray for those who do not have air conditioning and maybe not even a fan. My grandmother made okra and she used flour she coated it with flour so I don't think she ever used cornmeal and it was self-rising flour and I remember how good they were I thought they were better than the ones you get when you go out to eat.     Hello from north Mississippi, where the temp was 100°+ today, with very high humidity. Thank goodness I don't have to be out in it. I've shelled and put up 2 bushels of peas (pinkeye purplehull) and cut off three dozen ears of corn for cream corn. Last year I tried your flour coated okra, squash, green tomatoes and it is so good, the family loves it! Not used corn meal since. Your supper tonight is my kind of eating. I would probably have some peas too. Enjoyed the video. God bless.

    My momma used to fry okra and potatoes together. I thought it was the best ever. Something else she fried that I like was fried hominy. Cook some bacon and drain a couple cans of hominy and put it in that bacon grease. Man oh man, I always liked meat with my meal, but I could make a meal of just the hominy and fried okra and potatoes.

    Oh that looks delicious! My favorite meal is biscuits, gravy, bacon and sliced tomatoes. None ever better than made by my Granny. My dad's favorite food was fried corn. She always made it for him when we visited. There is actually a decent frozen one. It says fried corn on it not creamed. It comes in one of those frozen rolls. Has the fried corn tastel can't remember the brand of course. Old lady here. I am having bacon tomato sandwich for dinner. Too hot for gravy and biscuits.

    That looks so good! My Granny would put sliced tomatoes, onions, and cucumbers on a plate and a pan of cornbread. She might cut up a Cantaloupe. If PaPa was there, she needed to make a pot of pintos or make him a little steak. It was so good!

    Kathie says…I am going to have to go on an Okra hunt! I have only seen it at Walmart and it looked old and mushy…not appealing at all. I want to try it, so I will check some farmer’s markets. I have made creamed corn before and it IS delicious!! We have a good crop of pickle cucumbers this year. I make cucumbers & sour cream salad, refrigerator pickles, put them in salads, veggie trays and just peel them, salt them and eat them! We are beginning to get our LEMON BOY tomatoes now. We eat them every morning when we have eggs for breakfast…mmmmm!! We have a few red tomato plants also but the yellow ones always are the earliest in our garden. The yellow tomatoes are the only tomatoes that I can eat because the acid in the red tomatoes don’t agree with me (even tho I love them)! I sure hope that I can find some good okra!!!     This is the kind of country cooking I was raised on here in North Mississippi. My mom always battered her okra in cornmeal. I've tried the flour but I much prefer the meal. When I do okra using meal I don't cook cornbread. I guess the meal on the good crunchy okra serves as my bread.

    Tammy love the way you cook. I sometimes have to cook for my self only. Think you might have the flame too high only because you said it takes so long to get hot. Make sure the flame is directly under your pan. I’ve never had okra you make it look so good. I’m going to the store and get some, I’m in California here in Ventura county it was about 85 with nice ocean breeze. So blessed. We’re close enough to the pacific we get a nice breeze through our valley. I enjoy watching you so much. Thank you for your recipes.
