- Fried Tsukune, chicken meatballs can easily be made with a frying pan. Tsukune may also be grilled, deep-fried or simmered and they are used in a variety of Japanese dishes.
How to Make Tsukune

150g Ground Chicken (5.3 oz)
¼ tsp Salt
50g Onion, Chopped (1.8 oz)
½ Small Egg
1 tbsp Nagaimo Yam, Grated
1 tsp Ginger, Grated
1½~2 tbsp Potato Starch
- Sauce -
1 tbsp Soy Sauce
1 tbsp Sake
1 tbsp Mirin
1 tbsp Water
1 tsp Sugar
2 Egg Yolks
Sansho Pepper Powder or Shichimi Chili Powder
Vegetable Oil

鶏ひき肉:150g
塩:小さじ1/4
玉ねぎ(みじん切り):50g
卵:小さじ1/2個分
長芋(すり下ろし):大さじ1
生姜(すり下ろし):小さじ1

I just made these, oh my GOD they were amazing!
Since I couldn't find Nagaimo Yam, I just increased the amount of egg and starch and it came out just fine. I made a lot of tsukune because they looked so tasty and I wanted to make enough to eat them as a meal for four people, so I more or less tripled the recipe. Here's what I used:
1 lb ground chicken
3/4 tsp salt
100g chopped onion (about half a large onion.. would've used more but I ran out)
1 large egg
1 Tbsp grated ginger
7 Tbsp corn starch
And for the sauce, I tripled the amounts on everything, so 3 Tbsp each soy sauce, mirin, sake, and water, and 1 Tbsp sugar.
I cooked the tsukune in two batches, wrapping the first batch in some foil while I cooked the second. After the second batch was done, I put the first batch back into the pan and poured the sauce on, reducing it and tossing the tsukune in the sauce.
They were delicious! The sauce was tasty on its own, but you can try putting red chili flakes on them for a nice zing. I think they might be great in an orange chicken sauce too.

Bonjour! Yes, you can make this without Nagaimo :)
Long green onion (negi) can be used instead of the onion :) If it's not available, add minced mushrooms to the chicken mixture. Tsukune with the mushrooms are also delicious and healthy!
The grated naga-imo yam will help the tsukune have a soft and light texture! You can just leave it out if the yam is not available. The naga-imo yam is also added to okonomiyaki batter for the same purpose :)

The egg yolk is optional :) The tsukune with the sauce is also delicious!

omg i just made this for lunch...it's SOOO GOOD!!! I also used the raw egg dipping, the tsukune is fine without it, but dipping them in the raw egg yolk made the taste so...silky and lustre. IT'S SO GOOD.
