I was surprised when I saw the Gia Russa olives. I live in Hermitage, and Gia Russa is from Youngstown, very close to me! I have been craving Boricua style empanadas. Your recipe is awesome!
Not a silly question at all! I don’t usually use the red sofrito, but I would say yes still use some tomato sauce. Can’t wait to hear how it comes out! 🙂

Does It Matter What Kind Of Sofrito I Buy? The Tomato Or Cilantro Base? I Have Everything Else And Can I Use The Whole 4Oz Can Of Tomato Sauce? Or That’s Too Much🤔
I prefer to use the cilantro base sofrito. There another sofrito that I have seen and have been getting in the Walmart frozen section, it’s called La Reyna, it’s the closest thing to homemade sofrito. Are you saying the entire small can? The 8oz? That would be ok but I wouldn’t put a bigger can of tomato sauce unless I was trying to double it🤗

Puerto rican empanadas are my favorite !!! Nothing makes my heart happier than when I see sofrito and olives go into the mix lol

Most definitely!!! Just make sure to wrap them up in plastic wrap or parchment paper so they don’t dry out.🤗

@313Chev Yes you can. I would just add equal amounts of water to the amount of paste you are using.
How many can be made with this recipe?
It depends how much meat you stuff them with. I can make about one pack of empanadas, I believe there are 10 to a pack.
