However, I happened to pass by my laptop right when the dish was done. The Jalapeno caught my eye. Then the Empanadas itself. All I can say is good job and when the hell can I come for dinner?!
Just wanted to tell you how much this African American Girl appreciates your recipes when I lived in Texas I was able to experience the Tex-Mex style of cooking I also got to taste a lot of Mexican food when I lived in California. I am now back at home in New Jersey and it is very or should I say how you would say it muy dificil to fine good authentic Mexican food so I just want to thank you for your humble recipes that have been passed down from generation to generation you are appreciated

You are a delightful cook to watch! I'm an old grandma who enjoys all the things I can learn or re-learn from young women. I have never made my own corn tortillas or used a corn flour for empanadas. I make a regular white flour dough.
My in-laws were from Mexico and they brought me back a wooden tortilla press and it is fantastic. I've never used a metal but I see that Steph mentions that you have to turn the dough around because metal press is uneven. This doesn't happen with my wooden one. I highly recommend anyone interested in making tortillas or empanadas or sopes, to try to find a wooden one.
I have been watching your channel for a couple of months and was going back and watching older videos. I made the empanadas tonight and love them. I made them in my air fryer, though. I brushed with egg wash and sprayed with oil. 370⁰ for 5 minutes. Flip, brush, spray for 3 more minutes and they were perfect. I did fry 4 of them just so I can get the household consensus on how they liked them cooked and they preferred the air fried. Thank you for your contribution in my menu planning ❤️

So happy to find this. Where I grew up in Venezuela, meat empanadas were a thing. Here in South Texas, they only do fruit ones. So from what I can see, this is a thickened picadillo sandwich! Imma be all over this!

I'm just sitting down to eat after making these! OMG! They're amazing! I paired them with my favorite, frijoles al la charra! Definitely made some mistakes, dough too dry, but I learned how to make some glue real quick so they cook in one piece. These are so good! I didn't have potatoes but I had jalapenos from the garden and ground deer, wild hog, brisket and a touch of bacon mixed together and talk about BEAST MODE!!! I love all things Costco. But, maybe 3 years ago we bought chicks so we could have our own eggs. That and my kids really wanted chickens. I can't get over how tasty our backyard eggs are or how dark yellow, almost orange the yolks are. Just a thought. If you live some place where having a few hens won't get you in trouble then I say go for it! It's spring so chicks are being sold all over the place from feed stores to hardware stores. I love having a big bowl of brown and blue chicken eggs in my fridge. They're so pretty. I just found your channel a few days ago and I'm loving it. I've been wanting to introduce some new recipes into our lives. I love making everything from scratch for my family and I know my kids prefer home cooking to eating out. Thanks for sharing.

I've made empanadas before, but with a very different dough..more like fried pies. This, with the maseca, will be fun to try. I do have a recipe request, if you haven't already made it. Mojo de ajo sauce. There's a Mexican restaurant nearby that we love and they make an amazing sauteed catfish fillet with shrimp and cook it in mojo de ajo sauce and it has onions, tomatoes and peppers cooked in the sauce as well.

I use cornmeal instead of cornstarch as a thickener and I just like the taste it adds to the meat mix. I use it for all ground beef makings, long with everything you have added in this video, except potatoes for my tacos, and burritos ( i use the red potatoes also in the burritos).
