No shame in making substitutions. My dad was stationed in Thailand and when he returned he made a lot of the dishes he had eaten there. Kaffir lime replaced with bay laural and lime zest, fish sauce replaced with blended anchovies, soy sauce with Maggi sauce etc. (Measurements adjusted) It's the same process many Asian expats go through. Making Asian dishes using European ingredients can result in something wonderful. That said, it may result in a few failed attempts before nailing an approximate or better flavour.

GOD, I love Thai soups, especially Tom Kha Gai or Tom Kha ANYTHING. When looking for Galangal and Keffir lime leaves in the states, look in freezer section in the better Asian markets.

I came close to madness trying to find it here in the States, but they just can't get the spices right...
