Hi Kunal, thank you for sharing. We have grown up eating Moringa in Mauritius and my mum usually makes Moringa soup. We need cooked rice water. In oil we add onion, garlic, ginger, tomato and sauté. Then add some leaves to sauté. Then add the rice water and boil. Add all the leaves and salt to boil for some 15 to 20 minutes. It’s very tasty with rice, fried potato chips and coconut chutney or tomato chutney.

Almost every house is Kerala has atleast one Moringa tree in its backyard and like Chef said almost every part of it is widely used in our diet. But it's also believed that one should avoid consuming Moringa leaves or flowers (the sticks are fine I guess) during the monsoon season. Specifically during the "Saavan month" or in our language "Karkidakam". It's the month of heavy rains & it's believed that moringa tree is recuperating during this period & consumption can be unhealthy or poisonous to the body.

We love to eat all the parts - Drum Sticks (Danta), The flowers (Shojney Phool), etc. But you probably won't believe that today only I have come to know from your show that Moringa is actually Shojney Pata (leaves). Moringa is called Sajana in Odiya. Integral part of Odisha’s cuisine. While drumsticks are added to curries and are fried too or even pickled, the moringa leaves are added to dals or made as a saag by itself. Rich in vitamin C and iron. Most homes would have their own moringa tree.

Sir we at Odisha are the extensive eater of moringa in every form, much extensive than that of south Indians and bengalis. You come to Odisha once and you will find many recipes using moringa leaves, flower and drumstick. Simplest yet a tasty one is moringa leaves fry.

This is what I call an authentic fusion dish...North Indian paratha made with South Karnataka / Tamil Nadu moringa leaves combined with North Karnataka kempu chutney...
    Way to go chef!
Moringa is said to be boon given by the almighty for human health. We in South love it and use it as one if staple vegetables. Leaves, drumsticks and flowers are all used in our cuisine.
Good to see you propagating bith eating and growing moringa. Just to ad, Moringa is a drought resistant tree, which starts to yield with an year of planting a sapling. Hardly demands any care.
It is prone to attract hairy caterpillars though. These caterpillars can cause severe itching, pain and burning sensation by the mere touch. I mean they would be in thousands as butterflies would lay the eggs under the leaves. ...therefore it would be necessary to prune it once a year during the mating season of butterflies. And it can become a host to colonies of red weaver ants which can sting pretty badly.
    Just to be careful....

A traditional dish from my grandma which she passed on to us from her elders. It's made with raagi and of course garlic, onion with few other spices should be eaten hot. It's a traditional village dish from Tamilnadu.
