- Bok Choy is an incredibly healthy but often under utilized vegetable. Being high in calcium and low in oxalates makes it one of the best sources of calcium and other minerals. Just two cups of cooked Bok Choy contain almost half your RDI of iron and more protein per calorie than black beans! It also contains one of the most powerful anti-oxidants found in food called Sulforaphane that helps to fight cancer, prevent memory loss and protect our DNA.

SAUTEED BOK CHOY WITH TOFU
4 cups bok choy, chopped
1/2 cup chopped onion
1/2 block tofu, cut into chunks. (You can sub cooked/canned beans or another protein source)
Sauce
1 tbsp chopped ginger
1 tbsp peanut butter
1 tbsp ACV
1 pitted date
3 tsp tamari
1 garlic clove
1 tbsp flax
2-3 Tbsp water. Use more if needed.
I like the sauce thicker, but you may like it thinner. Have fun experimenting but remember, if you can always add more water, but not take it away!
Saute chopped onions and tofu chunks on medium heat. Add water to prevent sticking. Sauté for 3-5 minutes until onions cook through and become soft. In a blender or magic bullet, blend all sauce ingredients together until smooth. Add sauce and bok choy to onions and tofu and sauté until bok choy is soft. Serve hot and enjoy! When is Derek going to get recognition as the best RUclipsr??💪🏽💪🏽
Haha there's so many good channels! Smarter Everyday? Colin Furze? Gas Station Encounters? There's lots but you are vey nice to me and my ego! :D
@@Simnettnutrition I have to agree with Ed P, I enjoy your channel and have learned so much from you. Thanks!
Exactly!
Simnett Nutrition , a tip when cooking with tofu when you use it in stir fried!! You should lightly fried it so it will keep it shape when you fried it with vegetables. If you like to add the crispy into your dish , you should fried until it became golden brown and add it last when you finished cooking the rest of your ingredients.
Immediately after he renounces veganism. 😉👍
You're one of the few legit nutritionist vegan you tubers! Your channel is so beyond informative!
Not a dietitian or nutritionist.
Tell him to talk about his steroid use . that's very vegan last time i checked lol
@@kalprao You must be some hard gainer if you think you need roids to get to Derek's size. Feels bad man.
@@tummyrubber2k939 for a Vegan bodybuilder that's active that's pretty big lol . Compare to what he used to look like, it's obvious he is taking something
@@kalprao Being vegan has nothing to do with how big you can get. Literally nothing.
you deserve so much more recognition than you do now. you’re such a great youtuber.
I agree 🙏
Bok choy side dishes have always been my fave when going out to eat at places that do serve it. I decided to start buying and cooking it at home, now I have the bonus knowledge of knowing it's actually a great source of vitamins that I need in my diet!
What I love the most about being vegan is how your body starts to crave on good food, I m Just looking at stir fried vegetables, salivating
Basile Châtelain true! I get hankerings for broccoli. 🙈
Totally - I never thought it would happen but I'm now excited by healthy food :D
I wish that happened with me... 😥
You're right. People out there, keep eating vegan (mainly healthy food) and after a while you'll crave for veggies. I never thought that my I could crave for carrot with hummus, but I now do.
😒🙄
*Actual photo of my hand 😂😂😂 had me dying!!!
YOUR THE MAN. I AM A PLANT-BASED MEDICAL NUTRITIONIST (FUNCTIONAL AND INTEGRATIVE REGISTERED DIETITIAN) AND I WANTED TO SAY YOUR VIDEO IS ON POINT! EXCELLENT MY FRIEND.
I was bored as shit....then i got this notification now im good
Notification squad!
Awesome! Cruciferous veggies also are a good protector for women as they fight estrogen dominance conditions, and help protect against ovarian and breast cancer :)
Bol choy with shittake mushrooms is amazing
Dude, I honestly had no idea bok choy was such a powerhouse veggie!!! Definitely picking some up on the next grocery haul. Great job on this vid man!! 👊🏼🌱
Thanks Erik! It is such amazing stuff. I didn't realize it either.
It's great mixed into an oil-free stir fry. It is a slightly bitter green, so it pairs really well with soy sauce or teriyaki sauce. Chop the white part into cubes and add it to the pan, then shred the green part and add it towards the last two minutes of cooking. Happy cooking!
I love how you integrate nutrition information with practical ways to use the food. So Awesome!! Thank you!
I have bok choy growing in the garden and love, love, love adding it to my morning smoothie!
I’m obsessed with this series ❤️ excited to try this sauce
He has such great ideas! Gotta 🤗 his videos
Awesome Derek, thank you for doing this one, another amazing veggie I can now no longer be afraid of and add to my arsenal!
Derek, thanks for this series. Just for future reference, 3 teaspoons equals 1 Tablespoon.
Thank you! haha.
Haha, I came to the comments to see if anyone else picked this up too. I swear I am not anal... Okay, maybe just a little 😬
Glad someone else told him.
Loving these vids on the specifics of different plant foods!!! Well done....as usual! Thanks for the great content!!! Oh..... also love the shirt!
Derek you have inspired me to buy some bok choy. I know I've had it before. That recipe looks amazing.
THANK YOU! I use this in my smoothie now instead of spinach and I LOVE it!! Super mild
I need to try this cause I don't like cooked greens. Do you use just the leaves in the smoothie or the stalks too?
I've had some bok choy in my fridge for a while and finally used it tonight. I was inspired by your recipe, but made some changes based on what I had available. Tofu, bok choy, onions, carrots, red cabbage and broccoli with a teriyaki/peanut sauce. With 3 awesome brassicas, I'm calling it my crucifer-RICH stir fry. Thanks for the inspiration and fun facts!
Omg, just made the sauce and IT IS DELICOUS!! Thank you!
1:13 haha that same picture was in my gr.11 bio textbook! boy does that bring back some good memories :) and you even remind me of my bio teacher too. you guys are seriously the best and smartest people on the planet ♡

Thanks for the chart. Nice to have as someone who's suffered from oxalate stones.
We need more people like you in America to encourage people to eat more vegetables. I just purchased some bok choy from the supermarket I needed some more information about it's nutrition. Thanks to this video buk choy has made it to the top of my shopping list. Very informative.
Will definitely be trying this. Thank you!!👍🏻
Thank you for showing us how to make a from scratch ginger dressing. It is hard to find without gluten in it but now I can make it myself from scratch! You are awesome!
Awesome information and recipe. Thank you for sharing. 😎🇨🇦💪
Bok Choy is my absolute favourite vegetable- not even kidding. My favourite is the shanghai version- and you're right, it's really under used. I actually had to go all the way to the asian market in Calgary to get some because no one in my town had any.
The sauce is amazing! thanks love it!
Yummy!!! Making this for sure!
I would never know what to cook with this one without your video. Thank you
Another great video Derek!!! 💚
awesome video - thank you!!!
Learning so much from this series. You are a gem!
Great video! I just recently started adding bok choy to my cuisine and I love how versatile it can be for soups, stir fry’s, noodles...so yummy 😋
Absolutely love this food series!! ❤️❤️
Great info as always. Thanks!
Excellent. Saves us a bunch of time narrowing it down!
Made it, loved it!
Your videos always make me so happy. Thanks Derek
Thank you! Love your videos!
I really appreciate these informational videos….I grow box Chou in my garden and i eat so much of it in the growing season…ty for the info! 🥬😀
We planted bok choy for the first time in our winter garden. It is ready to eat and I am excited to try some new recipes using Bok Choy. Thanks for all the great information! 🙂
Great video man, very informative! I’m going to start using more bok choy in my recipes.
Thank u so much Derek... The sauce is amazzzzing... Very informative video.. Like always
I made this dish with the sauce for me and my husband for dinner today. Oh my gosh, I can’t tell you how much we loved it! The only tweaks I did are as follows: adding mushrooms and garlic to the stir fry and leaving the garlic out of the sauce. We prefer garlic cooked, so I did it that way. Anyway, the meal was so amazing. It will now be one of our go-to favorites. Thanks for all your cool recipes and tips for those of us working on eating whole foods and lots of plants. You and Crystal are great!
Love this series! Thanks for all you do!
I love this video great explanation of bok choy and its health benefits

Awesome videos Derek , the way you able to explain and let people no the nutrition of each product you need a your own show on cable. Derek, Healthy cooking show. Thank you for all you do.
Great meal, I’m excited to try it!
Your research skills are AWESOME!
My doggy, keep up the good work. This is a superb video series. You have made a fan for life, I will never forget what you have done for me today.
Loving the series!
Amazing video once again
I started buying bok choy last year. Thanks for educating me as to the health benefits of this amazing vegetable.
Beautiful recipe & very informative
So much useful info in one video, thanks!
* For some reason the oxalates link wouldn't load. Maybe it's broken?
Awesome lessons dear sir, thank you 💪💪💪
This was awesome!
So easy to grow, too!
I bought a packet of mixed seeds called "asian greens" & it was by far the best and easiest crop I've grown, alongside English spinach.
Kale is also easy to grow but it attracts a LOT of bugs; bok choy/pak choy and other asian greens DON'T bring bugs in to anywhere near the same degree!
They also go great in a smoothie raw ❤ thanks Derek!
Saw it on your IG story and immediately told my mom “let’s learn about how choy” she got excited bc she loves book choy lol
Thanks again I am learning so much new info from your channel Derek. Additionally the oil free sauces you make are fantastic. I now love to eat greens because of the tasty sauce,
I love that thing! I didn't know what was called or what was good for. I just buy it because it's green and love it. Is awesome to know you are putting great stuff to your belly. Thanks Derek👍
Great video! I eat a lot of it but had no idea it was such a super veg! Thanks so much!!!
Such a round about way I came to your channel from your video on VivoLife but so glad. This series has been so informative and fun to watch, thank you so much for keeping them going! And love the shirt ❤️
Fantastic video, recently bought it
I am finding your channel soo educational and relatable. Keep on keeping it real please. I'm learning alot and try to remember to 'like' them all.
Such a great video, thank you for the amazing work! :))
I watched an entire Fage yogurt advert. for this video! That shows my dedication to you, my good sir! Haha. Keep up the great work, you’re simply awesome! Thank you for all you do; you’re making a tremendous difference by sharing all this Vegan truth with us! 😊🌱
Thank you for another educational video! I am Chinese and a very common Cantonese dish is to have it sauteed in a little oil and garlic and then topped with a few pinches of salt. Also works well in soups like to you said with some tofu - it's the bomb!
Awesome video. Need to add to my shopping list. I’m a vitamix fan but just ordered a smaller blender. Thanks for everything.
Found your channel, and love this first video I watched. Helps that you're easy on the eyes too. Nice content!
I love everything about this video and bok choy! Thank you for all the great info 🙂🙂🙂
Thanks for the nutritional profile! I have loads ready in the greenhouse.
I love how Mic the Vegan you get but with way more amicable charm (No offense Mic). This is a great video and a great series! It is so informative and helps me keep all these amazing, healthy foods consistently in my diet. I re-watch them to absorb info that I may have missed and plan recipes inspired by yours. Thank you!
Thank you I learn new food to try!
thanks for sharing you are awesome.
I love to put pok choi in a simple salad instead of lettuce, gives the salad more crisp and more distinctive taste. All the vitamin C saved! 🙂 Thanks for the video, great content as always.
One of my favourites, especially the stalk. So crunchy in stir fry. Love your vlogs!
Thank you!
Yes it is, so delicious!!! 👅Love hearing that crunch!!😚
I must have been channeling you because I randomly bought bok choy at the grocery store Friday! I am totally making this tonight with some wild yam noodles.
Thanks for another great video 👍🏻
Not gonna lie, havn't been watching you much recently but I always tune in for this series.
Ate it tonight, straight from my garden. 🌱✌😀 🌞
On a Saturday what!!!??? So stoked to watch this.

Another awesome video. 🙏🏼🙌🏼👊🏼 We grow tons of it in the fall and winter here in Florida Every season we save seeds from our best plants and grow them again the following year. It is incredibly versatile as you pointed out in the video. 🙏🏼🙏🏼💪🏼🌱🌿
Another good job!
Wow... I watched this 3 years ago! But... went to the store for bok choy so had to search for a Simnett Nutrition bok choy recipe and here it is! Thanks Derek.
Thanks Derek! Bok Choy here is quite cheap. More ideas to include in my meals!
