Pork Risotto with Oyster Mushrooms

  • Nothing beats a great risotto. This oyster mushroom and pork risotto is a perfect quick and delicious evening meal. You'll need Arborio rice, onion and fresh garlic, chicken stock, parmesan cheese, a little white wine and butter, plus oyster mushrooms and pork strips.
    Heat a little oil in a pan, and add the pork strips cooking till just browned, then add the oyster mushrooms and cook till soft. Remove and set aside. Add more oil, fry the onions and garlic then add the rice and stir. Add the stock all at once, bring to the boil, cover and turn off the heat until all the stock is absorbed and the rice is cooked. Return the pork strips and mushrooms then stir through the butter, wine and cheese.
