and in episodes like Mamma Cherri's where the owners and kitchen staff are receptive his approach is far less agressive and more respectful throughout. its refreshing.

If the owner keeps interfering with chef's job, occupying the chef's territory and keeps questioning his authority in the kitchen, this can make chef getting the "i don't care" attitude. And vice versa.
Anyone can own or run a restaurant, but not everyone can be successful, because they don't understand the fundamental basics of this bussiness. They don't know how to manage people, how to store food, which food can be frozen and which should always be fresh, etc.
