  • Give your eggplant recipe a little twist of creativity. Hope you like this simple yet delicious eggplant omelet/patties recipe.
    Note: if you use a salty ham do not add any salt in the eggplant omelet mixture.
    Easy Eggplant Omelet Recipe | Eggplant Patties | Special Tortang Talong
    Ingredients:
    1 large eggplant
    1 small carrot
    1 small or 1/2 medium onion
    5 pcs Canadian bacon or any ham you prefer (Cut in number 1 slices )
    4 pcs of spring onion leaves
    1/4 tsp salt
    1/2 tsp black pepper
    2 eggs
    1 tbsp cornstarch
    Cooking procedures:
    1) Cut off the top of the eggplant
    2) Cut the eggplant into 1/2 inch slices
    3) Separate the eggplant meat from the skin
    4) Make sure the skin of the eggplant stays unbroken
    5) Set aside the skin of the eggplant for later use
    6) Dice the eggplant meat, onion and the Canadian bacon
    7) Chop the spring onion leaves
    8) Shred the carrot
    9) Combine all the vegetables and ham in a clean bowl
    10) Add the salt, black pepper, eggs and cornstarch
    11) Mix well
    12) Pour 3 tbsp of cooking oil in a preheated frying pan
    13) Spread the cooking oil around the frying pan
    14) Once the oil is hot, place the eggplant skin in the frying pan
    15) Fill the skin with the eggplant omelet mixture
    16) Fry both sides
    17) Ready to serve
